2 cups drained canned tuna
2/3 cup chopped artichoke hearts
1/4 cup sliced roasted red peppers
2 teaspoon minced lemon zest
1 teaspoon dried oregano
1 tablespoon chopped parsley leaves
Salt and pepper
3 egg yolks,
plus 1 whole egg*
2 tablespoons Dijon mustard
2 tablespoons roasted garlic
1 lemon, juiced
2 cups olive oil
1 cup canola oil
1 tablespoon minced fresh sage leaves
1 1/2 teaspoons minced thyme leaves
1 1/2 teaspoons minced rosemary leaves
Salt and pepper
8 slices kalamata olive bread
1 small red onion, sliced
4 slices provolone

Steps:

  • In a bowl, combine all ingredients for the salad. Keep refrigerated until ready to serve.
  • For the Aioli: In food processor combine first 5 ingredients. Turn on processor and slowly add the oils for emulsification. Add the herbs, and salt and pepper. This sauce is enough aioli for 10 sandwiches.
  • Spread aioli on 1 slice of bread. Top with tuna salad, sliced red onion, cheese, and the other slice of bread. Grill on panini press for 3 to 5 minutes.

¼ cup mayonnaise
1 teaspoon garlic powder
1 teaspoon onion powder
2 cups shredded mozzarella cheese
½ cup chopped black olives
1 loaf French bread, halved lengthwise

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Stir together butter and mayonnaise until smooth and creamy. Mix in garlic powder and onion powder. Then stir in cheese and olives. Spread mixture evenly over French bread, and place on a baking sheet.
  • Bake in a preheated oven for 10 to 12 minutes. Increase heat to broil, and cook until cheese melts and bread is golden brown, about 2 to 3 minutes.

1-2 ounces fresh goat cheese (2 tablespoons = 1 ounce)
2 slices olive bread or any rustic country bread
3 1/4-inch grilled eggplant slices*
1/2 large roasted red pepper**
1 teaspoon lightly salted butter

Steps:

  • 1. Spread goat cheese on one side of bread.
  • 2. Place eggplant and pepper on the other piece of bread.
  • 3. Close sandwich.
  • 4. Spread evenly 1/2 teaspoon of butter onto each slice of bread.
  • 5. Grill over moderate heat for approximately 3-4 minutes.
  • *To grill eggplant:
  • Slice thinly, brush with olive oil, sprinkle with salt and pepper to taste, and grill or broil for 4-5 minutes.
  • **To roast peppers (also available in jars):
  • Hold peppers over a flame until blackened, place peppers in a paper bag, peel and discard skins when cooled.

1/2 teaspoon baking soda

1/2 teaspoon mustard powder
60g Parmesan, grated
60g Cheddar, grated
75g stuffed green olive, sliced
1/4 cup finely chopped chives
2 teaspoon fresh thyme leaves, plus extra sprigs for top
2 eggs
2 1/2 tablespoons olive oil
310ml buttermilk
egg wash: 1 egg yolk beaten with 2 teaspoons water

Steps:

  • Preheat the oven to 180C. Grease and line a 31 x 11 x 7.5cm loaf tin with baking paper. Set aside. Combine the flour, baking powder, baking soda, salt, pepper, chilli flakes and mustard powder in a large bowl. Mix them well. Add the cheeses, olives, chives and thyme leaves and stir. In a separate bowl, whisk the eggs together. Add the olive oil and buttermilk and whisk to combine. Make a well in the flour mixture and pour in the egg mixture. Stir until it becomes a thick sticky batter. Scrape it into the prepared tin and brush the top with egg wash. Strew the top with extra thyme sprigs and bake for 40 - 45 minutes, until a skewer inserted into the centre comes out clean. Leave the loaf to cool in the pan for 5 minutes before transferring to a wire rack to cool to room temperature.

4 cups self-rising flour
2 1/2 teaspoons baking powder
1 cup Greek yogurt (sub with sour cream if you can't get the greek yoghurt)
3/4 cup butter, melted
5 eggs
1 lb feta, crumbled or cut into tiny pieces
1 cup kalamata olive, pitted, halved
2 tablespoons olive oil
sesame seeds

Steps:

  • Preheat oven to 375°F.
  • Grease a baking sheet with olive oil.
  • Beat eggs, yoghurt and baking powder together.
  • Add butter and eggs to mixture and beat well.
  • Add feta cheese, olives and flour and knead mixture until dough easily comes off hands Add olive oil.
  • Separate dough into 3 equal portions.
  • Shape into 3 balls and place on oiled baking sheet.
  • Press down with palm, to flatten slightly.
  • Sprinkle generously with sesame seeds and press again lightly to make them 'stick'.
  • Bake for 50-55 minutes, or until cheese breads sound hollow when tapped on bottom.

1 large onion, chopped
115 ml olive oil, divided
4 tablespoons parsley, chopped
100 g pancetta, finely cubed
150 ml white wine
4 eggs, beaten
250 g flour
1 teaspoon baking powder
200 g cooked ham, chopped
100 g black olives, pitted, sliced into rings
100 g green olives, pitted, sliced into rings
150 g swiss cheese, coarsely grated

Steps:

  • Sauté onion in 15 ml (1 tbs) olive oil for 3 - 4 minutes.
  • Add pancetta and continue to sauté for 5 minutes. Transfer to a paper towel to drain. Set aside.
  • Mix and combine white wine, olive oil (100 ml) and eggs.
  • Add the flour mixed with baking powder, mix and combine.
  • Add onion and pancetta, ham, black and green olives, grated cheese and parsley. Mix and combine.
  • Pour the mixture into the bread pan lined with parchment paper. Bake in the oven for 50 minutes at 180°C (toothpick test).
  • When done, let the loaf cool for 10 minutes. Take it out of the pan and transfer to a serving tray. Cut into slices thick to your liking. Serve with cherry tomatoes, radishes, green onions or green salad.

  • Heat buttermilk for 30 seconds in the microwave on HIGH.

  • Preheat the oven to 350°. Coat a 9-inch loaf pan with cooking spray; line the bottom with parchment paper. In a skillet, cook the bacon over moderate heat until crispy, 8 to 10 minutes. Drain on paper towels.

Steps:

  • Preheat the oven to 400 degrees F. Grease an 8.5-x-4.5-inch loaf pan.
  • Whisk the flour, baking powder, and salt together in a medium bowl.
  • In a second bowl, lightly beat the eggs, then whisk in the milk, olive oil, and ham (or tapenade). How to make Olive, Bacon and Cheese Bread

5 fl oz (15cl) of white wine
3 1/3 fl oz (10cl) olive oil
4 eggs
1/2 teaspoon salt
2 1/2 cup (250g) all purpose flour
1 teaspoon of baking powder (about 5g)
5 ounces (150g) grated emmenthal or cheddar
1 large onion
3 1/2 ounces (100g) bacon
7 ounces (200g) ham on the bone
3 1/2 ounces (100g) black olives
3 1/2 ounces (100g) green olives
2 tablespoons chopped parsley

Steps:

  • In a large bowl, whisk together the wine, oil, eggs and salt. 2. Separately, mix the flour and baking powder, sift and stir into the liquid preparation. 3. Chop the onion finely and melt in a skillet with a bit of olive oil (or butter). 4. Add the bacon to onions and cook for a few minutes then keep aside. Take care of draining the mixture to avoid a soggy dough. 5. Slice the olives and parsley and cut the ham. 6. Add all ingredients and grated cheese to the basic preparation and mix. 7. Pour into a buttered pan. 8. Bake in the oven for 1 hour at 360°F (180°C).
