PHYLLO CRAB CUPS

These cute appetizers taste scrumptious in their phyllo tart shells-horseradish and paprika add a nice kick.

1 package (8 ounces) cream cheese, softened
2 to 3 tablespoons horseradish sauce
3/4 cup chopped imitation crabmeat
1 tablespoon chopped green onion
2 packages (1.9 ounces each) frozen miniature phyllo tart shells
Paprika

Steps:

  • In a small bowl, beat cream cheese and horseradish until smooth. Stir in crab and onion. Spoon 2-3 teaspoonfuls into each tart shell; sprinkle with paprika. , Place on a baking sheet. Bake at 350° for 16-18 minutes or until tops begin to brown.

These are great for Girls Hang Out Night. The recipe calls for prepared pizza crust. When I made it with the pizza dough, if you don't cook it, the dough is "doughy" and if you cook the dough the stuffing gets dried out. I tried it the second time with crescents instead and it was much much better.

2 tablespoons cornmeal
1 (13 7/8 ounce) can pillsbury refrigerated prepared pizza crust
1 (6 ounce) package chopped pasteurized refrigerated lump crabmeat
1 tablespoon finely chopped red onion
1 tablespoon chopped fresh dill weed or 1 dried dill weed
1/2 teaspoon lemon peel
2 teaspoons lemon juice
1/2 cup garlic & herb spreadable cheese (from 4 oz container)
3/4 cup shredded cheddar cheese

Steps:

  • Heat oven to 375°F; spray 24 mini muffin cups with cooking spray.
  • Sprinkle cornmeal on work surface. Roll or press dough into 18x12 inch rectangle. Cut into 24 (3x3 inch) squares. Place 1 square in each muffin cup.
  • In medium bowl, mix crabmeat, onion, dill, lemon peel, lemon juice, spreadable cheese and 1/2 cup of the shredded cheese until well mixed. Spoon 1 tablespoon crabmeat mixture into each dough-lined cup.
  • Bake 15 to 18 minutes or until edges just begin to brown. Sprinkle tops with remaining 1/4 cup shredded cheese. Bake about 2 minutes longer or until cheese is just melted. Immediately remove from muffin cups.
  • Serve warm or cold.

32 wonton wrappers
Cooking spray
1 package (8 ounces) cream cheese, softened
1/2 cup heavy whipping cream
1 large egg, room temperature
1 tablespoon Dijon mustard
1 teaspoon Worcestershire sauce
5 drops hot pepper sauce
1 cup lump crabmeat, drained
1/4 cup thinly sliced green onions
1/4 cup finely chopped sweet red pepper
1 cup grated Parmesan cheese
Minced chives, optional

Steps:

  • Preheat oven to 350°. Press wonton wrappers into miniature muffin cups coated with cooking spray. Spritz wrappers with cooking spray. Bake until lightly browned, 8-9 minutes. , Meanwhile, in a small bowl, beat cream cheese, cream, egg, mustard, Worcestershire sauce and pepper sauce until smooth. Stir in crab, green onions and red pepper; spoon into wonton cups. Sprinkle with Parmesan cheese. , Bake until filling is heated through, 10-12 minutes. Serve warm. If desired, garnish with minced chives. Refrigerate leftovers.

1 pound crabmeat, any kind, picked free of shell
8 ounces cream cheese, in large dice
1 teaspoon hot sauce, or to taste
2 teaspoons Worcestershire sauce
1 teaspoon prepared horseradish, or to taste
2 tablespoons Creole mustard or other coarse mustard
1 bunch green onions, thinly sliced
Kosher salt and freshly ground pepper, to taste

Steps:

  • Place 1/2 the crabmeat in the bowl of a food processor. Add 1/3 of the cream cheese, hot sauce, Worcestershire, horseradish, mustard, 2/3 of the green onions, salt, and pepper. Puree, running the processor for about 15 seconds. Scrape the sides and bottom of the bowl with a rubber spatula, add 1/2 the remaining cream cheese, and puree until well blended, about 15 seconds. Stop and scrape the bowl again, add the remaining cream cheese, and process until well incorporated. Adjust seasoning. Fold in the remaining onions and crabmeat and serve as a dip. Or, to make canapes, reserve the remaining crabmeat, place the puree in a pastry bag, and pipe it onto crackers or toast points. Season the reserved crabmeat, and garnish the canapes with the crabmeat and the remaining green onions.

This is a variation of something that I had while dinning out, when I asked the chef for the recipe - he said not - so I decided to give it a shot - came out pretty good!!!

16 ounces crabmeat (claw)
8 ounces cream cheese (room temp)
1 cup cheese (shredded, I like a sharp cheese but use what you like)
1/4 teaspoon bottled hot pepper sauce (you want some heat but not to take over the flavor)
1/2 cup shrimp (chopped raw peeled and devined)
1 tablespoon garlic (minced)
1 teaspoon Old Bay Seasoning
1 teaspoon onion powder
2 tablespoons chopped fresh parsley (1 tsp dry)
salt and pepper

Steps:

  • Mix all ingredients in no special order - except to make sure you whip the cream cheese slightly.
  • Pour into a well greased oven safe bowl and bake for 30 mins or until the cheese bubbles up.
  • Serve with crustinies* or warm bread.
  • *Crustinies are simple slices of your favorite Italian bread (1/4" or less cut on an angle) rubbed with a raw clove of garlic (cut the clove in half and simply rub over each slice of bread) a drizzle of olive oil and a dash of parmesan on each slice. Bake at 325°F till golden brown.

These crab tartlets have long since been a family favorite and are requested often at holiday get togethers.

2 (12 ounce) packages refrigerated biscuit dough
1 (8 ounce) package cream cheese, softened
1 (6 ounce) can crab meat, drained
2 tablespoons mayonnaise
2 tablespoons grated Parmesan cheese
½ cup shredded Cheddar cheese
2 tablespoons thinly sliced green onion
1 teaspoon Worcestershire sauce
1 pinch paprika

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease 12 tartlet pans.
  • Divide rolls in half and press into the prepared tartlet pans. Set aside.
  • In a large bowl, combine cream cheese, crab, mayonnaise, Parmesan cheese, Cheddar cheese, green onions and Worcestershire sauce. Spoon 1 teaspoon of mixture into tarts and garnish with paprika.
  • Bake at 375 degrees F (190 degrees C) for 15 to 20 minutes, or until light brown. These freeze wonderfully. Just reheat before serving.
