This is a recipe from a cooking class taught by Doris Simms over 20 years ago, and it is still a favourite of ours. Doris shared many wonderful recipes. This is untested with low fat ingredients, but I expect that by using them the bread would become too moist and not brown and crisp when baked, and thus would not be as delicious, or beautiful to behold.

2 ounces cream cheese, softened
1/4 cup mayonnaise
1/4 cup grated old cheddar cheese
1 egg yolk
1/2 teaspoon grated lemon zest (rind)
10 slices fresh white bread
poppy seed
20 thin stalks of cooked asparagus
2 tablespoons melted butter

Steps:

  • Trim crusts from the bread.
  • Sprinkle one side of bread with poppy seeds.
  • Flatten with a rolling pin.
  • Turn over bread slice and roll lightly again.
  • Beat cream cheese together with mayonnaise and egg yolk.
  • Beat until smooth then blend in grated cheese and lemon rind.
  • Spread cheese mixture over plain sides of bread slices.
  • Place 1 or 2 asparagus spears on each slice.
  • Roll up, jelly roll fashion, and cut rolls in half. For a coctail party cut into thirds.
  • Brush with melted butter.
  • Place rolls, seam side down on baking sheet and bake in 400 degree oven for 10 minutes.
  • If making ahead of time, cover the rolls with plastic wrap touching the surface, then cover the container.

How to make Asparagus and Cheese Crescent Rolls

Number Of Ingredients 8

1 pkg. Pillsbury® Crescent Rolls
1 lb. asparagus, woody stems removed
3 oz. cream cheese
1/2 cup(s) Cheddar or Jack Cheese, grated
1 tsp. lemon juice
1/4 tsp. kosher salt and white pepper
1 egg, lightly beaten
Optional: 1/4 cup cooked bacon, minced or bacon bits

Steps:

  • Preheat oven to 400°F.
  • Combine cream cheese, cheddar or jack cheese, lemon juice, bacon, if using, salt and pepper.
  • Steam asparagus until crisp tender. Dry thoroughly on paper towels.
  • Roll out crescent rolls and separate at the seams. Brush about 1 teaspoon of the cream cheese filling across the wide end of each triangle. Add 2 spears of asparagus and roll up in the classic "crescent" shape.
  • Place each roll on a cookie sheet and brush top of each roll with some of the egg wash.
  • Bake for 10 minutes or until golden brown.
