1 pound red potatoes, cubed
1/4 cup butter, cubed
1 cup sour cream
1 (1.0 ounce) Ranch salad dressing mix
1 cup cheddar cheese, , shredded
1 tablespoon green onions or parsley, chopped

Steps:

  • In a lightly greased cast iron skillet or baking dish, arrange potatoes in a single layer. Dot with butter and cover with foil.
  • Bake, covered, in a 375 F oven for 40 to 50 minutes or until tender but not falling apart.
  • In a small bowl, combine sour cream and Ranch salad dressing mix. Spoon mixture over potatoes and gently toss to combine.
  • Sprinkle top with cheddar cheese and green onions. Bake, uncovered, for 2 to 3 minutes or until cheese is melted and bubbly. Serve hot.

  • Preheat oven to 350°. In a small saucepan, melt butter; stir in flour, salt and pepper until smooth. Gradually whisk in milk and Hidden Valley® Original Ranch® Seasoning & Salad Dressing Mix Shaker. Bring to a boil, stirring constantly; cook and stir until thickened, about 2 minutes. Remove from heat; stir in cheese until melted., Coat an 8-inch square baking dish with cooking spray. Place half of the potatoes in dish; layer with 1/2 cup onion and half of the cheese sauce. 1 (32 ounce) package frozen hash brown potatoes, thawed
1 (16 ounce) container sour cream
8 slices cooked bacon, crumbled
1 (1 ounce) package ranch dressing mix
2 cups shredded Cheddar cheese, divided, or more to taste
