1 package (7 ounces) sweetened shredded coconut
1 1/2 cups pecan halves
Nonstick cooking spray
1 package (10 ounces) marshmallows
4 tablespoons unsalted butter
4 cups cornflakes

Steps:

  • Preheat oven to 350. Spread coconut on one side of a large rimmed baking sheet, and pecans on other side, keeping them separate. Toast until fragrant, 15 to 20 minutes, tossing occasionally.
  • Meanwhile, coat an 8-inch square baking pan with cooking spray; line with a strip of waxed paper (leaving an overhang on two sides). Spray paper.
  • In a large nonstick pot over medium-low, heat marshmallows and butter until melted, 5 to 10 minutes, stirring frequently.
  • Stir in cornflakes, coconut, and pecans. Transfer to prepared pan; press in firmly with a metal spatula (coated with spray to prevent sticking). Cool until firm, about 2 hours. Remove from pan; peel off paper. Using a serrated knife, cut into squares.

My mom made these while I was growing up, and now I make them for my family. Always a favorite at Christmas parties too! Easy to make. Recommend to keep squares in fridge right up until serving.

3 cups toasted oat cereal (such as Cheerios®)
3 cups corn flake cereal
1 cup peanuts
1 cup brown sugar
½ cup corn syrup
½ cup butter
½ cup peanut butter
1 teaspoon vanilla extract

Steps:

  • Combine oat cereal, corn flake cereal, and peanuts together in a large bowl.
  • Mix brown sugar, corn syrup, and butter together in a saucepan; bring to a boil. Remove from heat and stir in peanut butter and vanilla extract until smooth. Pour peanut butter mixture over cereal mixture; stir to coat. Press coated cereal mixture into a 9x13-inch casserole dish. Refrigerate until set, at least 1 hour. Cut into squares.

This recipe is from my girlfriends mom. She used to make these when we were kids. I have had this recipe for a long time and just recently ran across it. If you like coconut, you will like these.

1/2 cup butter or 1/2 cup margarine, softened
1 cup flour
1 tablespoon brown sugar
2 eggs, beaten
1 1/2 cups brown sugar, firmly packed
1/2 teaspoon vanilla
1 cup coconut
1/2 cup chopped nuts
1/2 teaspoon baking powder

Steps:

  • Combine the first three ingredients and pack the mixture into a buttered 8 inch square pan.
  • Bake at 350 degrees for 15 minutes.
  • Combine ALL remaining ingredients and pour over baked layer.
  • Return to oven and bake 30 minutes longer.
  • Cool completely and cut into squares.

1 cup flaked coconut
1/2 cup salted peanuts
1/2 cup half-and-half
1/2 cup light corn syrup
1/2 cup sugar

Steps:

  • 1. In large mixing bowl, coated with cooking spray, combine KELLOGG'S CORN FLAKES cereal, KELLOGG'S RICE KRISPIES cereal, coconut and peanuts.2. In 2-quart saucepan, combine half and half, corn syrup and sugar. Cook over medium heat, stirring occasionally to 240°F (soft ball in cold water). Remove from heat.3. Pour syrup over cereal mixture, coating evenly. Press mixture into 9 x 9 x2-inch pan coated with cooking spray. Cool completely. Cut into squares. Store in airtight container.

1 cup dried bread crumbs
1 cup butterscotch chips
1 cup semisweet chocolate chips
1 cup chopped walnuts
1 cup shredded coconut
1 ⅔ cups sweetened condensed milk

Steps:

  • Preheat oven to 350 degrees F.
  • Melt shortening over low heat. Pour into 9 inch baking pan. Layer bread crumbs evenly in bottom of pan.
  • Layer coconut, chocolate chips, butterscotch chips and nuts over bread crumbs. Drizzle condensed milk over top.
  • Bake 25 to 30 minutes. Let cool before cutting into bars.

Get the kids in the kitchen to help bake these tasty sweet treats with coconut cream, desiccated coconut and milk or dark chocolate

Yield Makes 12-16 bars

Number Of Ingredients 8

100g golden caster sugar
2 tbsp golden syrup
2 egg whites
160g can coconut cream
2 tsp vanilla extract
250g unsweetened desiccated coconut
50g dried cranberries or dried cherries (optional)
200g bar milk or dark chocolate , chopped into small pieces

Steps:

  • Line a 20cm square baking tin with baking parchment and heat oven to 180C/160C fan/ gas 4. Tip the sugar, golden syrup, egg white, coconut cream and vanilla into a mixing bowl and mix with an electric whisk until well combined. Add the coconut and dried fruit and mix with a spatula until the ingredients are all evenly coated in the egg white mixture. Tip into the baking tin, press down with the back of a spoon to compress and make an even layer, then bake for 25-30 mins until golden brown and firm to the touch. Leave to cool completely in the tin.
  • Melt the chocolate in a bowl over a pan of barely simmering water, or in short bursts in the microwave. Cut the coconut bake into 12 or 16 bars and remove the baking parchment. Turn the bars upside down and carefully spoon a little of the melted chocolate onto the base of each one, spreading with a knife to cover. Leave to set (pop in the fridge to speed it up if you like), then wrap the bars individually in baking parchment. Will keep in the fridge for up to 5 days.
