1 cup uncooked long grain rice
2-1/4 cups water
2 cups frozen peas, thawed
1 carrot, shredded
1-1/2 teaspoons salt-free herb seasoning
1 teaspoon low-sodium chicken bouillon granules
1 teaspoon lemon juice

Steps:

  • In a large saucepan, combine the first six ingredients; bring to a boil. Reduce heat; cover and simmer for 15 minutes or until rice is tender. Remove from the heat; add lemon juice. Fluff with a fork.

1 cup uncooked long grain rice
1/4 cup butter, cubed
1/2 cup finely chopped celery
1/2 cup finely chopped onion
1 cup sliced fresh mushrooms
1 can (14-1/2 ounces) chicken broth
1/3 cup water
1 to 2 tablespoons soy sauce
1 tablespoon dried parsley flakes

Steps:

  • In a large skillet, saute the rice in butter for 2 minutes or until golden brown. Add celery and onion; cook and stir for 2 minutes. Add mushrooms; cook and stir until the celery is tender. , Transfer to a greased 1-1/2-qt. baking dish. Stir in the broth, water, soy sauce and parsley. Cover and bake at 350° for 45-50 minutes or until liquid is absorbed and rice is tender.

3 tablespoons salad oil
1 cup chopped onion
1 cup chopped green bell pepper
1 cup chopped celery
1 (16 ounce) can peeled tomatoes
1 (8 ounce) can tomato sauce
1/2 cup canned mushroom
1 teaspoon dry oregano
1/4 teaspoon cayenne pepper
salt and pepper
5 cups hot cooked rice

Steps:

  • Heat oil in a large heavy skillet or Dutch oven.
  • Add onion, green pepper and celery and mix well.
  • Cook over medium heat stirring frequently until tender.
  • Add tomatoes, tomato sauce and mushrooms and mix well.
  • Simmer for 15 minutes.
  • Add oregano, cayenne, salt and pepper.
  • Simmer for 10 minutes longer, stirring only once.
  • Remove from heat.
  • Add in cooked rice and mix thoroughly.
