CEASAR PASTA SALAD (WEIGHT WATCHERS-FRIENDLY)

Obviously you can use regular pasta and full-fat Ceasar salad dressing, but personally I LOVE it just like this!

3 c whole wheat penne pasta
2 hard boiled eggs
2 chicken breasts, boneless and skinless, grilled & chopped
1/2 c red onions, chopped
1/2 c red or green bell pepper, chopped
1/4 c parmesan cheese, fat-free
2 Tbsp fresh parsley
1 bottle fat free ceasar salad dressing
2 plum tomatoes
1 head of romaine lettuce, shredded

Steps:

  • 1. Prepare pasta according to package directions; drain. Rinse with cold water. Place in a bowl. Set aside. Meanwhile, chop eggs, red onion, chicken and bell pepper. Grate Parmesan cheese with grater. Snip parsley. Add eggs, onion, tomato, pepper, Parmesan cheese and parsley to pasta. Pour salad dressing over pasta mixture; mix well. Stack 3-4 lettuce leaves on top of each other; cut into thin shreds. To serve, line a bowl with lettuce. Spoon pasta salad into center of bowl.

1/4 cup fresh lemon juice
2 tablespoons water
2 garlic cloves, sliced
1 teaspoon olive oil
1 tablespoon red wine vinegar
2 anchovies, finely chopped
1 teaspoon Dijon mustard
1/2 teaspoon Worcestershire sauce
1/4 teaspoon black pepper, freshly ground
4 cups romaine lettuce, chopped, rinsed well and patted dry

Steps:

  • Combine all ingredients, except lettuce, in a blender or food processor; puree until blended. (Note: Omit the anchovies if you do not like their flavor.).
  • Place lettuce leaves in a large bowl and toss with dressing until well coated. Yields about 2 cups per serving.
