CREAMY CAVATAPPI PASTA



Creamy Cavatappi Pasta image

Cavatappi pasta is corkscrew shaped and great with creamy sauces. Serve it with a creamy white sauce, spinach, and sundried tomatoes for an easy dinner! (For a vegan option, use 4 cups Vegan Alfredo Sauce instead of the cauliflower sauce.)

6 garlic cloves*
1 small head cauliflower (1 1/2 to 2 pounds), enough for 6 cups florets
4 tablespoons butter or olive oil
2 cups vegetable broth
1/8 teaspoon garlic powder
1/2 teaspoon dried oregano
1 teaspoon kosher salt
3/4 cup shredded Parmesan cheese, divided
1 pound Delallo cavatappi pasta
4 cups baby spinach
3 tablespoons Delallo sundried tomatoes, minced
Red pepper flakes (optional)
1 tablespoon finely minced parsley

Steps:

  • Mince the garlic. Chop the cauliflower.
  • Heat the butter in a large pot over medium heat. Add the cauliflower and saute for 4 minutes until lightly browned. Add the garlic and cook for 1 to 2 minutes until fragrant. Add the vegetable broth, garlic powder, oregano, and 1/2 teaspoon kosher salt. Bring to a simmer, then cover and cook 6 to 7 minutes on medium high heat until the cauliflower is tender when pierced with a fork.
  • Bring a large pot of salted water to a boil. Boil the pasta until it is al dente (start tasting a few minutes before the package recommends: you want it to be tender but still a little firm on the inside). When the pasta is just about al dente, add spinach to pasta water in last 45 seconds (it only needs this long to cook). Then drain the pasta and spinach and return to the pot.
  • When the cauliflower is cooked (in Step 3), carefully transfer the hot cauliflower and broth mixture to a blender. Blend on high until a smooth sauce forms. Add 1/2 cup Parmesan cheese and an additional 1/2 teaspoon kosher salt, and blend again.
  • Once the pasta is done, pour in the cauliflower sauce. Add the chopped sundried tomatoes, the additional 1/4 cup Parmesan cheese, and red pepper flakes (if using). Taste and if desired add salt or fresh ground pepper. Top with parsley and serve. Store leftovers refrigerated (see reheating instructions above.

1 lb. boneless skinless chicken breasts, cut into strips
1 cup sliced cremini mushrooms
1/2 cup (1/2 of 8-oz. tub) PHILADELPHIA Cream Cheese Spread
2 Tbsp. milk
2 Tbsp. CLASSICO Traditional Basil Pesto Sauce and Spread
2 cups hot cooked cavatappi
1/2 cup grape tomatoes, halved
2 Tbsp. KRAFT Shredded Parmesan Cheese

Steps:

  • Cook chicken and mushrooms in large nonstick skillet on medium heat 6 to 7 min. or until chicken is done, stirring frequently.
  • Mix cream cheese spread, milk and pesto sauce until blended. Add to skillet; cook and stir 2 min. or until heated through.
  • Stir in pasta and tomatoes; top with Parmesan.

This is based off a red pepper cream sauce recipe, sans red pepper flakes. After I make that again (I haven't made it in awhile) I'll post it in its entirety. Actually, believe it or not, being the gourmand I am, I was craving the basil cream sauce from none other than Pizza Port at Disneyland. I will say, their basil cream sauce with cavatappi is fantastic! Truly so. Anyway, this recipe still needs some tweaking, but, as is, it's pretty good and will satisfy me tonight.

2 tablespoons butter (or butter substitute)
1 1/2 tablespoons flour (I used just over 2 tonight for an extra-creamy sauce)
1 cup milk
1 teaspoon salt (plus more to taste)
1/2 cup good parmigiano-reggiano cheese (good cheese can really make a difference, look for "Parma" on the rind if you buy it in a block)
1/4 teaspoon fresh ground black pepper (to taste)
2 -4 tablespoons freshly chopped basil
1 dash garlic powder
1/2 cup shredded roasted chicken (I buy the rotisserie chickens from the market. This step is optional.)
1 1/2 cups dried cavatappi pasta

Steps:

  • If putting this over pasta, start your water boiling first, and add pasta when water comes to a boil.
  • Melt the butter.
  • Add flour and cook to make light roux.
  • Stir in milk, salt, pepper, parmigiano-reggiano, garlic powder, chicken, and basil over low-med heat.
  • Cook until creamy and thick, or to the consistency you like. I find that I have to turn the heat down to low as the sauce begins to come together.

1 pound cavatappi
4 tablespoons of butter (dairy free as desired)
4 cloves of finely minced garlic
3 tablespoons of flour
1 cup of broth (I use veggie broth but whatever you have will work)
1 cup milk of choice (plain milk or dairy free works)
2 teaspoons of Italian seasoning
1 cup of grated parmesan cheese (violife makes a great parmesan cheese that melts nicely but I also have a vegan parmesan recipe HERE*)
Salt + pepper to taste
Optional for serving: 2 heaping cups of steamed broccoli florets

Steps:

  • Cook the pasta according to package directions.
  • In a large skillet or saucepan, heat the butter over medium heat. Once melted, add in garlic and cook for 2 minutes, stirring often.
  • Whisk in the flour and cook for 1 minute. Mix in the broth, milk, italian seasoning, cheese, salt and pepper. Mix until fully combined and bring to a simmer.
  • Cook for 2 minutes, stirring often, until the cheese is fully melted and combined into the sauce.
  • Add the drained pasta to the skillet with the sauce and stir to coat fully. Serve immediately and ENJOY!
