1/4 cup chopped onion
1/8 cup chopped celery
1/8 cup chopped green bell pepper
3 tablespoons margarine, plus 1 tablespoon
1 pound catfish fillets, cut into chunks
1/2 teaspoon liquid crab boil
8 ounces cream cheese
2 tablespoons ketchup
1 tablespoon chopped fresh parsley leaves
1/4 teaspoon black pepper
1/2 cup Italian bread crumbs
1 loaf French bread
1 1/2 cups grated mixed Cheddar and mozzarella

Steps:

  • Preheat the oven to 350 degrees F.
  • Saute the onion, celery, and pepper with 3 tablespoons of the margarine. When wilted, add the catfish chunks and the remaining 1 tablespoon margarine together with liquid crab boil and mix well. As catfish cooks, break up fish with a cooking spoon. Set catfish mixture aside.
  • In a microwave oven, melt cream cheese on HIGH for 1 minute. Add ketchup, parsley, and pepper and mix well. Fold cream cheese mixture into catfish mixture and add Italian bread crumbs.
  • Microwave mixture on HIGH for 8 minutes, stirring once halfway through cooking. Cut French bread lengthwise. Place on cookie sheet, sliced side up. Spread catfish mixture on each length of bread. Sprinkle with mozzarella and cheddar mixture.
  • Bake for 10 minutes, or until cheese is melted and bubbly. Cut into individual slices. Serve and enjoy!

1/2 cup butter
1/3 cup olive oil
2 cups chopped onion
1/2 cup diced tasso
3/4 cup chopped bell pepper
1 cup sliced mushrooms
1 teaspoon minced garlic
3 bay leaves
2 pounds catfish fillets, cut into 3-inch pieces
1/2 teaspoon Worcestershire sauce
1/3 cup lemon juice
1/2 teaspoon hot sauce (recommended: Tabasco brand)
1 teaspoon black pepper
1/2 teaspoon chopped fresh oregano leaves
1/2 teaspoon chopped fresh marjoram leaves
1/2 teaspoon chopped fresh thyme leaves
1/2 teaspoon white pepper
1/2 teaspoon red pepper
1/2 teaspoon garlic powder
2 teaspoons chopped fresh rosemary leaves
1/3 cup dried parsley flakes
3/4 cup chopped green onions
2 cups cream
1 pound angel hair pasta, cooked and drained

Steps:

  • Heat butter and olive oil in saucepan on stovetop. Brown onions and tasso for 3 minutes. Add the bell pepper, mushrooms, garlic and bay leaves. Simmer for 3 minutes. Add the catfish, Worcestershire sauce, lemon juice, hot sauce, black pepper, oregano, marjoram, thyme, white pepper, red pepper, garlic powder, rosemary, and parsley flakes and simmer for 15 minutes, stirring only a few times as stirring will cause fish to break up too much. Add green onions and cream and simmer for 10 minutes stirring only when necessary. Serve immediately over pasta.

½ cup buttermilk
½ cup water
salt and pepper, to taste
1 pound catfish fillets, cut in strips
1 ½ cups fine cornmeal
½ cup all-purpose flour
1 teaspoon seafood seasoning, such as Old Bay™
1 quart vegetable oil for deep frying

Steps:

  • In a small bowl, mix buttermilk, water, salt, and pepper. Pour mixture into a flat pan large enough to hold the fillets. Spread fish in one layer over bottom of pan, turning to coat each side, and set aside to marinate.
  • In a 2 gallon resealable plastic bag, combine the cornmeal, flour, and seafood seasoning. Add fish to mixture, a few fillets at a time, and tumble gently to coat evenly.
  • Heat oil in deep fryer to 365 degrees F (185 degrees C).
  • Deep fry fillets until golden brown, about 3 minutes. Avoid overcrowding so fillets have room to brown properly. Fish should be slightly crisp outside, and moist and flaky inside. Drain on paper towels.

2 catfish fillets
1 cup Italian salad dressing
1 egg
3/4 cup breadcrumbs
3/4 parmesan cheese
1 teaspoon garlic powder
1 teaspoon pepper
cooking spray

Steps:

  • Line baking dish with foil and spray with cooking spray.
  • Combine egg and Italian dressing in shallow dish.
  • Combine breadcrumbs, cheese, pepper, and garlic powder in second shallow dish.
  • Dip fish in egg mixture, followed by bread crumb mixture.
  • Drizzle remaining egg mixture over fish.

2 eggs, beaten
1/4 cup milk
1 teaspoon salt
1 cup yellow cornmeal
1 1/2 teaspoons celery salt
1/2 teaspoon paprika
1/4 teaspoon black pepper
1/4 teaspoon dry mustard
3 lbs catfish fillets
oil (for frying)
lemon wedge
tartar sauce

Steps:

  • Put flour in shallow dish.
  • Combine eggs, milk, and salt in another bowl.
  • Combine cornmeal, celery salt, paprika, pepper and mustard in shallow dish.
  • Lightly coat fish in flour.
  • Dip in milk/egg wash.
  • Coat with corn meal.
  • Put fish on paper towels on a baking sheet.
  • Refrigerate 3 hours.
  • Heat oil to 375 in a deep heavy pan.
  • Heat oven to 300.
  • Carefully add fish in batches to hot oil.
  • Lower heat to medium high.
  • Turn fish, cook until coating is golden brown and fish is opaque.
  • Remove fish, drain on paper towels.
  • Keep warm in oven.
  • Serve with lemon wedges and tartar sauce.

3/4 cup dry bread crumbs
3 tablespoons grated Parmesan cheese
2 tablespoons chopped fresh parsley
1/2 teaspoon salt
