Several years ago, a co-worker came across candies like these in a store and asked if I could make them. After some trial and error, I came up with a winning recipe. -Karen Daniels, Jefferson City, Missouri

2 teaspoons butter
2 pounds milk chocolate candy coating, coarsely chopped, divided
1 cup salted cashew halves
28 caramels
2 tablespoons heavy whipping cream

Steps:

  • Line baking sheets with waxed paper and grease paper with butter; set aside., In a microwave, melt 1 pound of candy coating; stir until smooth. Drop by scant tablespoonfuls onto prepared pans. Let stand until partially set, about 3 minutes. Top each with six or seven cashews. Let stand until completely set., In a small heavy saucepan, combine caramels and cream. Cook and stir over low heat until melted; stir until smooth. Spoon over cashews. Reheat caramel over low heat if it thickens. Melt remaining candy coating; spoon over caramel. Let stand until set.

Found this recipe while digging through my mom's - I think I made these in 7th grade Home-Ec class (that's when they still taught it in middle school). Anyway, these are delicious and easy for kids to make, with a little help. Serving size was not included on the recipe, so I'm guessing.

12 ounces white almond bark (about 6 cubes)
1 1/2 cups roasted salted cashews
1 (5 ounce) can chow mein noodles

Steps:

  • Melt six (6) cubes bark (12 ounces) in a medium sized pan on low heat.
  • Combine nuts and chow mein noodles.
  • Stir into bark and stir mixture until well coated.
  • Drop by teaspoonful into candy cups or onto waxed paper.
  • Cool completely. Can be stored for several weeks in airtight container.

3/4 cup evaporated milk
3/4 cup brown sugar
6 tablespoons corn syrup
3 tablespoons butter
3 cups coconut, shredded

Steps:

  • In heavy 2 quart saucepan cook and stir over low heat the milk, sugar and corn syrup until the sugar dissolves.
  • Bring to a boil over medium heat, stirring often, until candy reaches soft ball stage. Remove from heat, stir in the butter, stir then add coconut and mix well.
  • Shape into cones about 1 1/2 inches high.
  • Place on waxed paper to cool.

"Salted nut rolls were my mother's favorite candy bar, so I always think of her when I make these sweet snacks," shares Darlene Brenden of Salem, Oregon. "Youngsters can help knead and shape the marshmallow mixture and later roll the treats in nuts after they have been dipped in caramel."

3 cups confectioners' sugar
1 jar (7 ounces) marshmallow creme
1 teaspoon vanilla extract
1/4 teaspoon almond extract
1 package (14 ounces) caramels
3 tablespoons water
3 cups chopped salt cashews

Steps:

  • In a bowl, combine the first four ingredients; knead until smooth(mixture will be dry). Shape into eight rolls 5 in long x 1/2 in. in diameter (do not butter hands before shaping the mixture). Wrap in waxed paper and freeze until firm, about 2 hours. Place caramels in a shallow microwave-safe dish; microwave, uncovered, on high until melted. Add water; stir until smooth. Carefully dip the frozen rolls into the caramel mixture, then roll in cashews. Wrap in waxed paper and refrigerate 1 hour. Cut into 1/3-in. slices.
