A pesto with a little kick using a favorite snack I found at Trader Joe's -- Chili-Lime Cashews -- nummy! This pesto is great on pasta or with shrimp or fish. Brush on meat, chicken, or fish before grilling.

2 cups fresh cilantro leaves
1 cup fresh parsley leaves
3 tablespoons lime juice
1 cup chili-lime cashews
½ cup olive oil
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon cayenne pepper
½ cup grated Asiago cheese

Steps:

  • Put the cilantro, parsley, lime juice, cashews, olive oil, salt, pepper, cayenne pepper, and grated cheese into the bowl of a food processor. Pulse until mixture is smooth, 8 to 10 pulses. If mixture is too thick, add more olive oil; if too thin, add more cashews.
  • Pour into 4 one-cup freezer containers. Use one container within a few days; freeze the others for later.

1 tablespoon olive oil
1 stalk celery, chopped
2 medium onions, chopped
1 green bell pepper, chopped
2 cups canned tomatoes, with juice
1 (15 ounce) can kidney beans, in water (you may use 2 cans, depending on consistency you wish to achieve)
1 teaspoon black pepper
1 teaspoon minced basil
1 teaspoon minced oregano
1/2-1 tablespoon chili powder
1/4 teaspoon cumin
1 bay leaf
1 -2 tablespoon cider vinegar
1/2-1 cup cashews
1/4 cup parsley, chopped

Steps:

  • Chop the celery, onions, and bell pepper. Sauté them in olive oil until tender, about 10 minutes.
  • Add tomatoes(with juice) and beans(with juices) and all spices. Cover and simmer for 5-10 minutes, until pleased with thickness. Add vinegar and cashews.
  • Taste and adjust seasonings, remove bay leaf, and serve. Enjoy!

3 ancho chilies, dried
1/4 cup cashews
1 1/2 cups chicken stock
2 tablespoons olive oil
1 onion, diced
4 garlic cloves, minced
1 1/2 tablespoons cumin powder
1 teaspoon chili powder
1 teaspoon salt
3 chicken breasts, cubed
1/4 cup cilantro, chopped
28 ounces canned tomatoes
1/2 cup cashews
1/2 ounce bittersweet chocolate
1 cup kidney bean, drained

Steps:

  • Chile Puree:.
  • Heat a small skillet over high heat until very hot. Place chiles in pan, one at a time and press down with tongs for about 1 minute on each side. Next, seed and devein the chiles.
  • Place chiles in a blender with cashews and chicken stock.
  • Puree until smooth.
  • Chili: In a stock pot, briefly saute onion, garlic, cumin, chile powder, and salt in the olive oil.
  • Add chicken and stir to coat. Stir in chile puree, cilantro, and tomatoes.
  • Cover and simmer for 45 minutes.
  • Add cashews, chocolate and beans.
  • Stir until chocolate melts.
  • Serve NOTES : F or spicy chili, add 2 or 3 chipotles to the puree and double the chile powder.

This recipe comes from Cabbagetown Cafe Cookbook by Julie Jordan. It is a fantastic veggie version of chili that completely holds its own. I love it in wintertime with nice crumbled cornbread on top.

2 bay leaves
1 tablespoon canola oil
2 onions, chopped
4 garlic cloves, smashed and finely chopped
2 green peppers, chopped
2 celery ribs (minced or chopped)
1 tablespoon unsalted butter
1 teaspoon dried oregano or 2 tablespoons fresh oregano
1 teaspoon dried basil or 2 tablespoons fresh basil
1 teaspoon dried dill or 2 teaspoons fresh dill
2 tablespoons ground cumin
1 tablespoon ground coriander
1 teaspoon black pepper
1/4 teaspoon cayenne (I used 1 tsp chipotle powder)
2 teaspoons salt
1 quart canned whole tomatoes, processed (no diced or pureed tomatoes!) or 1 quart tomatoes, cut to size preference (no diced or pureed tomatoes!)
2 (12 ounce) cans black beans or 2 (12 ounce) cans kidney beans, undrained
3/4 cup cashews
2 teaspoons red wine vinegar

Steps:

  • In a soup pot, heat the oil. Add onions, garlic and bay leaf and saute for about 3 minutes. Add the green peppers and celery and cook until the vegetables are tender but still crisp, approximately 3-5 minutes.
  • Melt in the butter, then add spices, herbs, pepper, and salt. Saute for 1-2 minutes, stirring frequently so nothing burns.
  • Add quart of tomatoes plus juice and beans to the mixture and simmer for about 15 minutes for flavor to blend.
  • Toast cashews in a 350 oven or toaster oven for about 20 minutes, or until lightly browned. Add toasted cashews and vinegar. Simmer for another 15 minutes and serve.
  • It's even better the second day.

3 tablespoons olive oil
1 white onion, chopped
2 teaspoons minced garlic
1 teaspoon sofrito
1 (20 ounce) package ground turkey
1 (28 ounce) can whole peeled tomatoes
1 cup water, plus more if desired
¾ (6 ounce) can tomato paste, divided
1 cup chopped cashews
2 teaspoons chili powder, or more to taste
1 teaspoon ground cumin
1 teaspoon unsweetened cocoa powder
1 teaspoon sea salt, or to taste
1 teaspoon ground black pepper, or to taste

Steps:

  • Heat olive oil in a heavy-bottomed saucepan with a lid over medium-high heat. Saute onion in hot oil until fragrant, about 3 minutes. Stir garlic and sofrito into the onion; saute until the garlic is fragrant, about 3 minutes more. Push the mixture to the side of the saucepan.
  • Break turkey into pieces and add to the saucepan in the space free of the onion mixture; cook, stirring frequently, until browned and crumbly, 5 to 7 minutes.
  • Stir tomatoes, water, and about 3/4 of the tomato paste into the turkey mixture until even in color; add cashews, chili powder, cumin, and cocoa powder. Stir mixture to incorporate seasoning, place the lid on the saucepan, reduce heat to medium-low, and cook at a simmer, stirring frequently and adding water to thin as desired, until the tomatoes are breaking down, about 1 hour. For chili purée
2 dried ancho chilies
1/4 cup cashews, raw or roasted
1 cup chicken broth
2 whole chicken legs plus 1/2 chicken breast (about 1 1/2 pounds total)
2 tablespoons olive oil
1 large onion, chopped coarse
3 garlic cloves, chopped fine
1 tablespoon ground cumin
1 teaspoon chili powder
1 teaspoon salt
3 tablespoons chopped fresh coriander sprigs (wash and dry before chopping)
a 14 1/2-ounce can diced tomatoes with juice
1/2 cup cashews, raw or roasted
1/2 ounce fine-quality bittersweet chocolate (not unsweetened) or semisweet chocolate
1 cup canned kidney beans, rinsed and drained

Steps:

  • Make chili purée:
  • Heat a small heavy skillet over moderate heat until hot and toast chilies, 1 at a time, pressing down with tongs, a few seconds on each side to make more pliable. Wearing rubber gloves, seed and devein chilies. In a blender purée chilies with cashews and broth until smooth.
  • Cut legs into drumsticks and thigh portions. Remove excess fat from chicken and pat chicken dry.
  • In a large heavy saucepan heat oil over moderate heat until hot but not smoking and cool onion and garlic, stirring, until softened. Add cumin, chili powder, and salt and cook, stirring, 1 minute. Add chicken and stir to coat with onion mixture. Stir in chili purée, 2 tablespoons coriander, and tomatoes with juice and simmer, covered, stirring occasionally to avoid sticking, 45 minutes, or until chicken legs are cooked through.
  • Remove pan from heat and transfer chicken to a bowl. With 2 forks shred meat, discard bones and skin. Return chicken to pan and stir in cashews, remaining tablespoon coriander, chocolate, and beans. Cook chili over moderate heat, stirring, until heated through and chocolate is melted. Chili may be made 2 days ahead and cooled completely, uncovered, before being chilled, covered.

WHITE CASHEW CHICKEN CHILI

1 cup(s) diced onion

1 can(s) (14 oz) canelli or northern beans, drained
2/3 cup(s) cashews
1/2 cup(s) diced green onions

Steps:

  • In a medium stock pot, over med-high heat, cook peppers, onons, celery and jalapeno until soft.
  • Add diced cooked chicken, alfredo sauce and beans.
  • Reduce heat to medium and stir ingredients well for about 5 minutes.
  • Reduce to low heat and simmer for abut 10-15 minutes.
  • Serve in bowls with a sprinkling of diced green onions and a little swiss cheese.

2 1/2 cups Red bell pepper
1 1/2 cups Celery
3 cloves Garlic
1/3 cups Red wine vinegar
1 tablespoon Molasses

1 teaspoon Ground cumin
1/2 teaspoon Salt
1/2 teaspoon Chili powder
1/2 teaspoon Black Pepper
1 Bay leaf

31 oz Canned red kidney beans
28 oz Canned chopped tomatoes
15 oz Canned pinto beans
2/3 cup Cashews

Steps:

  • At home, place onion, pepper, celery, and garlic in zip lock.
  • Combine vinegar, molasses, basil, oregano, cumin, salt, chili powder,
  • black pepper and bay leaf in zip lock or nalgene.
  • At campsite, heat oil in dutch oven. Add first ziplock
  • bag, saute 8 minutes or until tender. Add vinegar mixture and all the cans;

500 grams Carrots
1 clove Garlic
1/3 cup Salted Cashews
200 grams Fresh Ricotta
2 tablespoons Sweet Chili Sauce, plus extra to drizzle

Steps:

  • In a medium frying pan, heat oil over moderate heat. Cook and stir carrot and garlic 25 minutes or until just tender. Cool 20 minutes.
  • Process cashews until chopped roughly. Add carrot, ricotta and sweet chilli sauce. Process until almost smooth. Season with salt and pepper.
