Steps:
- Preheat oven to 350°.
- Saute onion and garlic in hot oil in a small skillet over medium heat 5 minutes or until tender.
- Whisk together egg and the next 4 ingredients in a big bowl.
- Add ground beef, tomatoes, and oats; combine using hands.
- Shape mixture into a 9 x 5 inch loaf; place on a lightly greased rack in a foil-lined broiler pan.
- Bake for 1 hour and 5 minutes or until no longer pink in center.
- Place barbecue sauce in a small bowl; cover and microwave in HIGH 30 seconds or until warm.
- Spread barbecue sauce evenly on top of meatloaf; let stand 10 minutes before serving.
MOM'S FAMOUS MEATLOAF
Yeah, I know...there's tons of meatloaf recipes out there, but I bet this is one of the easiest ones with lots of taste out there! I got this from a Kraft recipe booklet I got in the mail that I've tweaked a bit and it's pretty simple yet yummy.

Steps:
- Heat oven to 375 degrees.
- In bowl, mix all ingredients except for 1/4 cup of the BBQ sauce. I use Sweet Baby Ray's.
- Line glass cake pan with tin foil.
- Put meat mixture into pan and shape into a loaf.
- Cover loaf with rest of BBQ sauce.
- Bake for 1.5 hours or until there's an internal temperature of 160 degrees.
- I usually make this and freeze it for members of my church who are sick and need help with cooking, so if it is frozen, it will need to be put in the oven (about the same temp.) for around 30-40 minute.
THE BEST MEATLOAF
We opted for an all-beef meatloaf rather than the traditional mix of beef, veal and pork because we wanted that satisfying big beef flavor. Milk adds richness and tenderizes the meat, preventing it from getting tough or dry. We also cook the onion instead of adding it raw as many recipes suggest, which imparts a welcome sweetness and eliminates that harsh raw onion flavor.

- Arrange a rack in the center of the oven and preheat to 450 degrees F. Line a rimmed baking sheet with foil.
- Whisk the eggs, milk, Worcestershire sauce and 2 teaspoons salt in a large bowl until completely combined. Heat the oil in a large skillet over medium-high heat. Add the onion, garlic, thyme, 1/2 teaspoon salt and 1 teaspoon pepper and cook, stirring occasionally, until the onions are tender and lightly golden brown, 8 to 10 minutes.
- Add 3 tablespoons of the ketchup and cook until most of the moisture has evaporated and the mixture is thick and brick red colored, 3 to 4 minutes. Remove the skillet from the heat and let the onions cool slightly. Then add them to the beaten eggs and mix to combine.
- Add the beef to the egg and onion mixture. Break up the meat with a fork or wooden spoon, and then mix to thoroughly combine; you don't want to see any lumps of raw beef. Add the panko and mix to combine. Stir the meat vigorously with a wooden spoon for about 7 seconds; it will become more homogenous and tackier.
- Transfer the meat to the prepared baking sheet and shape into a 9-by-5-inch loaf. Smooth the top and evenly spread the remaining ketchup over top. Bake for 5 minutes, and then reduce the oven temperature to 350 degrees. Continue to bake until an instant-read thermometer inserted into the center of the loaf registers 150 degrees F, 30 to 35 minutes. Allow the meatloaf to rest for 20 minutes before slicing.
CLASSIC MEATLOAF

- Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment.
- Combine the meatloaf mix, breadcrumbs, parsley, eggs, onion, garlic, 1/4 cup of the ketchup, 1 tablespoon of the Worcestershire, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large mixing bowl. Using your hands, mix together until well combined.
- Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf about 9 inches by 5 inches. Bake the meatloaf for 30 minutes.
- Stir the brown sugar together with the remaining 1/4 cup ketchup and 1 teaspoon Worcestershire in a small bowl for the glaze. Brush the top and sides of the meatloaf all over with the glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more. Let rest for 10 minutes before slicing and serving.
BEV'S FAMOUS MEATLOAF
Found this in Southern Living and it was the first meatloaf I ever made that did not fall apart. It makes a huge one so be prepared for many leflovers if you have an average size family.

- Preheat oven to 350 degrees.
- Combine first 7 ingredients and 1/4 cup brown sugar in a medium bowl until just blended.
- Place mixture in lightly greased 11x7 baking dish. Shape into a 10x5 loaf.
- Bake for 1 hour.
- Remove from oven and drain.
- Stir together ketchup and 1/4 cup brown sugar. Pour over meatloaf.
- Bake 15 minutes more or until thermometer reads 160 degrees.
- Remove and let stand for 20 minutes before slicing.
NANNY'S FAMOUS MEATLOAF
This is my grandmother's meatloaf recipe that I've added a little extras to. It has been a hit with all of my friends as well as my husband's family. Though I'm not a big fan of meatloaf myself, I'm told this is the best there is!

- Mix crumbled bread with milk and let sit till all moisture is absorbed.
- Beat egg and add to bread mixture.
- Mix in minced onion.
- Add ketchup and meat gradually to blend all together. Season with salt and pepper.
- Do not overmix and it will become too dense.
- Lightly mixing keeps it moist and juicey.
- Form into a meatloaf shape and place in 9x13 baking pan. Pour water around meatloaf and bake at 350 degrees for 45 minutes
- The water will cook away and you will have nicely browned and moist meatloaf.
