1 cup rolled oats
1/2 cup almonds
1/2 cup chia seeds
1/2 cup cocoa nibs or 1/2 cup cocoa powder
1/2 cup pepitas
1/2 cup ground coconut flour or unsweetened shredded coconut, plus more as needed
1 teaspoon kosher salt or sea salt, such as Celtic
1 cup Medjool dates, pitted
1 cup creamy natural peanut butter
3 tablespoons honey or maple syrup

Steps:

  • Pulse the oats, almonds, chia seeds, cocoa nibs and pepitas in your food processor and process until finely ground. Add the coconut flour and salt and pulse again to combine. Add the dates, peanut butter and honey and process until it is combined into a thick paste. If the mixture is still wet, add coconut flour as needed.
  • Scrape the mixture onto a baking sheet and use your hands to roll it into round balls, about 2 tablespoons each. If desired, roll each truffle in coconut flour. Chill for 1 hour before transferring to an airtight container. The truffles can be refrigerated or frozen for up to 2 months.

These truffles are so easy to make - no candy making experience required! The white chocolate can be easily dyed with food coloring to fit any occasion.

1 (15.5 ounce) package chocolate sandwich cookies (such as Oreo®)
1 (8 ounce) package cream cheese, softened
2 (6 ounce) packages white chocolate baking squares

Steps:

  • Line a large baking sheet with waxed paper.
  • Place all of the sandwich cookies in a food processor; pulse into fine crumbs.
  • Combine cookie crumbs and cream cheese in a large bowl; beat with an electric mixer until a soft dough forms. Scrape down the sides of the bowl and the beaters with a spatula to ensure even mixing.
  • Roll dough mixture into 1-inch balls; set on the waxed paper. Refrigerate until firm, about 30 minutes.
  • Melt white chocolate in a microwave-safe glass or ceramic bowl in 1-minute intervals, stirring after each interval, 3 to 4 minutes.
  • Dip balls in melted white chocolate using 2 forks. Return to the waxed paper. Refrigerate until white chocolate is set, about 30 minutes.

1 cup Spanish peanut, peeled and crushed to a near powder
1 cup rolled toasted oats
1 cup Rice Krispies
1/2 cup miniature chocolate chip
1/3 cup light Karo syrup
36 ounces milk chocolate

Steps:

  • Combine all dry ingredients then add Karo syrup and mix thoroughly.
  • Line a small pan with wax paper and pack the mixture firmly into pan.
  • Melt milk chocolate and spread over top of mixture and refridgerate until firm. At least one hour.
