Mango chunks and a citrus marinade give this recipe for beef and mango kebabs a bright and tropical, Caribbean flare that is perfect for summer grilling. Yield: 12 kebabs

¼ C Worcestershire sauce
1 lime, (juiced (roughly 2 Tbsp juice))
1 tsp ginger
1 tsp chili powder
½ tsp salt
1 lb sirloin steak, (cut into ¾" cubes)
2 large mangos, (pitted, peeled, and diced into ¾" cubes)
12 bamboo or other grilling skewers

Steps:

  • In a small bowl or liquid measuring cup, whisk together Worcestershire sauce, lime juice, ginger, chili powder, and salt.
  • Place the sirloin cubes into a shallow dish and cover with the marinade. Cover and let the beef marinate for 30 minutes.
  • Preheat the grill to medium-high heat. (You should be able to hold your hand 4 inches over the cooking grate for 4-5 seconds.)
  • If using bamboo skewers, soak the skewers in water for 3-5 minutes to prevent them from charring.
  • Skewer the marinated meat and mango cubes, leaving about 2 inches at each side of the skewer for easy turning.
  • Place the skewers on the grill and cook, covered 4 minutes.
  • Use a spatula to loosen the mango chunks from the grill grate. Then, flip the skewers. (Moving them around as needed to hotter or cooler parts of the grill.) Cover the grill and cook for an additional 4 minutes.
  • Serve kebabs as is or use them as a tropical topping for a fresh summer salad.

1/2 head red cabbage, thinly sliced
4 limes, juiced
2 tablespoons sriracha
1 teaspoon kosher salt, plus more for seasoning
1/4 teaspoon ground black pepper, plus more for seasoning
2 fresh mangos
1 bunch scallions, green and white parts, thinly sliced
4 sprigs mint, leaves torn
2 pounds ground beef
3 tablespoons teriyaki sauce
1 tablespoon sriracha
1 tablespoon grated fresh ginger
3 cloves garlic, finely grated
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
6 brioche hamburger buns, toasted
Vegetable oil, as needed
Mayonnaise, as needed
6 leaves green leaf lettuce
1 avocado, peeled and thinly sliced

Steps:

  • For the slaw: Toss the cabbage with the lime juice, sriracha, salt and pepper in a large bowl. Cover and chill until ready to serve.
  • Cut the mangos into spears. Reserve 12 spears for your burgers. Chop the remaining spears for your slaw. Add them to the slaw just before serving along with the scallions and mint and toss to finish.
  • For the burgers: Combine the ground beef, teriyaki sauce, sriracha, ginger, garlic, salt and pepper in a medium bowl. Mix with your hands until combined. Form into 6 patties roughly 3/4-inch thick and 4 inches in diameter.
  • Brush a grill, grill pan or skillet with vegetable oil and heat on medium-high. When nice and hot, add the patties and cook for about 4 minutes per side for medium-rare. Take them off the heat.
  • To build the burgers: Spread mayonnaise on the bottom bun. Season with salt and pepper. Place a lettuce leaf on top of the seasoned mayo and top it with a patty, 2 slices of avocado, 2 spears of the reserved mango and the bun lid. Repeat with the 5 other burgers. Serve the slaw on the side.

Now this is tasty! You can use the same marinade for chicken but make more marinade and reserve before you put the chicken in it, discard the marinade that you used on the chicken and use only the reserved marinade for basting, I like to serve these kabobs with BBQ'd veggie kabobs and potatoes done on the grill too (there will be other recipes for the veggies and BBQ Potatoes on Zaar)

2 lbs beef, cut into 1 inch chunks (blade "or" rib steak "or" outside round etc)
1/2 cup lemon juice, fresh
1/4 cup lite olive oil
3 tablespoons honey
1 tablespoon hot pepper, minced (Jalepeno "or" other hot pepper)
1 tablespoon fresh ginger, minced
1 tablespoon soy sauce
1 1/2 teaspoons allspice
1/2 teaspoon cinnamon
1/4 teaspoon clove

Steps:

  • Whisk the marinade ingredients to gether.
  • Pour into a zip lock bag and add the meat.
  • Marinade in the fridge from 8 to 24 hours, turning the bag every so often.
  • Reserve the marinade.
  • Thread the cubes on skewers.
  • Grease your grill.
  • Medium-High heat,baste occasionally.
  • Cook for 7-10 minutes.
  • The meat should be browned outside and still pink inside.

1 onion, cut into wedges
1 cup fresh mango chunks (1 inch)
1 cup red pepper chunks (1 inch)

  • Thread first 4 ingredients alternately onto 8 skewers; place in shallow dish.

1/3 cup A.1. Thick & Hearty Sauce
2 Tbsp. chopped fresh cilantro
2 Tbsp. honey
1 tsp. zest and 3 Tbsp. juice from 2 or 3 limes
1/2 tsp. grated fresh ginger
1-1/2 lb. beef flank steak, cut into 1/2-inch-wide strips

Steps:

  • Mix all ingredients except meat until blended.
  • Thread meat onto 6 skewers; place in shallow glass dish. Pour 1/2 cup steak sauce mixture over kabobs. Refrigerate 30 min. to marinate, turning occasionally.
  • Heat grill to medium heat. Remove kabobs from marinade; discard marinade. Grill kabobs 12 to 15 min. or until meat is done, turning occasionally and brushing with remaining steak sauce mixture for the last 5 min.

1 pound uncooked large shrimp, peeled and deveined
1 teaspoon minced fresh gingerroot
2 garlic cloves, minced
1/2 teaspoon pepper
1 pound sea scallops
1 teaspoon paprika
1/2 teaspoon cayenne pepper
1 cup cubed fresh pineapple
1 medium mango, peeled and cubed
1 medium pear, peeled and cubed
4 tablespoons lime juice, divided
1 teaspoon ground allspice
12 serrano peppers
1/2 teaspoon salt

Steps:

  • In a small bowl, combine the shrimp, ginger, garlic and pepper; set aside. In another small bowl, combine the scallops, paprika and cayenne; set aside. Place the pineapple, mango, pear, 2 tablespoons lime juice and allspice in a small bowl; toss to combine. , On 12 metal or soaked wooden skewers, alternately thread the shrimp, scallops, fruits and serrano peppers. Drizzle kabobs with remaining lime juice; sprinkle with salt., Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. This recipe is a result of the Zaar World Tour 2007 for the Caribbean Grilling/Jerk Challenge. Our team - The Devilishly Devious Diners - created this recipe with help and ingredients from all the members. We've included beef, chicken and shrimp but feel free to add or delete any of the different meats. We used our very own ellie_'s Recipe #108351 for the jerk seasoning. It was very good accompanied by a long grain and wild rice mixture as well as mama's kitchen Recipe #139883 The rum soaked fruit is our devious contribution to this great recipe!

1/4 cup olive oil
2 tablespoons apple cider vinegar
1 tablespoon honey
1 1/2 tablespoons caribbean jerk seasoning (I use Ellie's Jamaican Spice Mixture Jamaican Spice Mixture)
1 teaspoon lime juice
1/2 lb round steak, cubed
1/2 lb chicken breast, cubed
1/2 lb shrimp, peeled and deveined
1 red pepper, chunked
2 vidalia onions, chunked
8 ounces button mushrooms
1/2 fresh pineapple, chunked
1 mango, chunked
1/4 cup bicardi rum
1 lime, wedged
long grain and wild rice blend, cooked

Steps:

  • Mix together olive oil, apple cider vinegar, honey, Jamaican seasoning, and lime juice in a large glass bowl. Add meat and stir to coat. Let marinate for an hour or two.
  • In another bowl, mix pineapple and mango with the rum. Let sit for an hour or two, stirring occasionally.
  • Heat grill to medium low.
  • Thread meats onto skewers, alternating with fruit and vegetables.
  • Grill on medium low for about 20 minutes or until meats are cooked through.
  • Serve with long grain/wild rice mixture and wedges of lime to squeeze over kabobs.
