I am a salmon lover. This is a great recipe for a slightly exotic flavor of Indian inspiration with a maple twist. The flavor is exceptional, delicious, and unique. Orange zest may be added for an extra flavor twist.

1 ½ teaspoons salt
1 teaspoon paprika
1 teaspoon ground cardamom
1 teaspoon ground coriander
½ teaspoon ground black pepper
¼ cup grapeseed oil
2 tablespoons maple syrup
1 (2 pound) salmon fillet, cut into 3-inch pieces

Steps:

  • Stir salt, paprika, cardamom, coriander, and black pepper together in a bowl. Add oil and maple syrup and stir until evenly combined.
  • Preheat a non-stick frying pan over medium-high heat, about 350 degrees F (175 degrees C).
  • Dredge salmon pieces through the maple syrup mixture until evenly coated on all sides.
  • Cook salmon in the preheated pan until fish flakes easily with a fork, 5 to 7 minutes per side.

3 tablespoons olive oil
2 tablespoons maple syrup
1 teaspoon ground cardamom
1 (1 1/2-pound) skin-on salmon fillet
2 teaspoons kosher salt
Dill sprigs (for serving; optional)

Steps:

  • Preheat oven to 275°F. Whisk oil, maple syrup, and cardamom in a small bowl. Place salmon in a large baking dish and brush with cardamom syrup on all sides. Marinate at room temperature 30 minutes.
  • Season each side of salmon with 1 tsp. salt. Bake until salmon is firm but still pink in the center, 22-25 minutes (if you prefer salmon more well done, cook an additional 5 minutes).
  • Flake salmon into large pieces and arrange on a platter. Top with dill, if using.

1 pound wild salmon filet, de-boned
1/4 cup maple syrup
2 teaspoons ground cardamom
1 teaspoon smoked paprika
pinch cayenne pepper
salt and pepper

Steps:

  • Preheat oven to 450 degrees. In a small bowl combine maple syrup, cardamom, paprika, cayenne and a bit of freshly ground pepper. Whisk until mixture is smooth. Adjust to taste. Arrange salmon filet on a cutting board. Remove the bones (if your fishmonger hasn't already) and cut into pieces, size as preferred. Brush syrup mixture evenly over the salmon filets. Place a large cast iron skillet into the oven and allow it to heat up for about five minutes while the salmon rests. Place the salmon in the preheated skillet (scale-side down) and cook for about 10 minutes. Brush more glaze onto the salmon and cook for an additional 3-5 minutes until the salmon is cooked to your liking.
