Impressive but easy! This fruit- and nut-filled cheese stack will wow your guests.

1 tablespoon butter
1/2 cup chopped peeled firm apple (Braeburn, Gala or Granny Smith)
1/4 cup sweetened dried cranberries
1/4 cup packed brown sugar
2 tablespoons chopped shelled pistachios or pecans
2 tablespoons brandy or apple juice
1 round (8 oz) Brie cheese
Baguette French bread slices, assorted crackers or fresh apple slices

Steps:

  • Heat oven to 350°F. In 8-inch skillet, melt butter over low heat. Add apple, cranberries, brown sugar, pistachios and brandy; cook 3 minutes or just until apples are tender, stirring frequently.
  • Cut Brie round in half horizontally; place bottom half in ungreased 9-inch pie pan. Spoon half of fruit mixture over cheese; place top half of cheese over fruit. Top with remaining fruit mixture. Secure with 3 toothpicks.
  • Bake 15 to 20 minutes or until cheese is soft. With broad spatula, slide Brie from pie pan onto serving platter. Spoon any syrup and fruit from pan over top. Serve warm with baguette bread slices.

2 tablespoons butter
1 small red apple, cored and sliced or chopped (such as Fuji or Braeburn)
1 tablespoon granulated sugar
1 (15 ounce) ripe round brie cheese, at room temperature
1/4 cup toasted and coarsely chopped walnuts

Steps:

  • Melt butter in 10" non-stick skillet over medium heat.
  • Add apples and sugar.
  • Saute', tossing occasionally, until apples are soft and golden brown, about 12 minutes.
  • Let apples cool slightly.
  • Carefully place chopped apples (or fan apple slices) over cheese; sprinkle with walnuts.
  • May be served right away, or chill if it is to be served later.
  • May be prepared several hours in advance.
  • Serve at room temperature; accompany with assorted crackers and bread slices.
