Crust:
3/4 cups ginger snap cookie crumbs
3/4 cup ground toasted pecans
2 tablespoons brown sugar
3 tablespoons unsalted butter, melted
Filling:
3 8-ounce packages cream cheese
1 1/4 cups sugar
1 teaspoon finely grated lemon peel
4 large eggs
1 15-ounce can pure pumpkin
1/2 cup sour cream
2 tablespoons all purpose flour
2 teaspoon vanilla extract
2 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon groun nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon allspice
Large pinch of salt
Sauce:
1 cup (packed) brown sugar
1/2 cup whipping cream
6 tablespoons (3/4 stick) unsalted butter
1/4 cup light corn syrup
1/2 teaspoon salt
3 tablespoons bourbon
1 1/2 cups pecans, toasted, cooled

Steps:

  • For crust: Preheat oven to 350 degrees. Butter 9-inch springform pan with 2 3/4-inch-high sides. Grind first 4 ingredients in processor until mixture sticks together. Press evenly onto bottom of pan. Bake crust until golden, about 15 minutes. Cool completely. Wrap outside of pan in triple layer of heavy-duty foil. For filling: Using mixer, beat cream cheese, sugar, and lemon peel in large bowl until smooth. Beat in eggs 1 at a time, then pumpkin, sour cream, flour, vanilla, spices, and salt. Pour into pan. Set springform pan in roasting pan. Pour enough hot water into roasting pan to come halfway up sides of cheesecake. Place in oven. Bake until outer 3 inches puff slightly and center is softly set, about 1 hour 15 minutes. Cool in water bath 30 minutes. Remove from water. Cut around sides of cake to loosen. Refrigerate in pan until cold, about 4 hours. Cover and chill overnight. For sauce: Bring sugar, cream, butter, corn syrup, and salt to boil in deep medium saucepan, whisking until sugar dissolves. Reduce heat to medium; boil 1 minute without stirring. Remove from heat. Stir in bourbon, then pecans. Cool, stirring occasionally. Remove foil. Cut around pan sides; remove sides. Cut cheesecake into wedges; spoon sauce over.

1/2 cup chopped pecans, divided
38 gingersnaps, finely crushed (about 1-1/2 cups)
1/4 cup butter or margarine, melted
4 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1 cup sugar
1 can (15 oz.) pumpkin
1 Tbsp. pumpkin pie spice
1 tsp. vanilla
4 eggs
25 KRAFT Caramels
1/4 cup milk
1 cup whipping cream, whipped

Steps:

  • Heat oven to 325°F.
  • Chop 1/4 cup nuts finely; place in medium bowl. Add gingersnap crumbs and butter; mix well. Press onto bottom of 13x9-inch pan.
  • Beat cream cheese and sugar in large bowl with mixer until blended. Add pumpkin, spice and vanilla; mix well. Add eggs, 1 at a time, mixing on low speed after each just until blended. Pour over crust.
  • Bake 45 min. or until center is almost set. Cool completely. Refrigerate 4 hours.

3 tablespoons (45 g) packed light brown sugar
3 tablespoons (1 1/2 ounces/45 g) unsalted or salted butter, melted
1/4 teaspoon ground cinnamon
Filling
1 1/2 pounds (675 g) cream cheese, at room temperature
1 1/4 cups (250 g) granulated sugar
Grated zest of 1/2 lemon, preferably organic
4 large eggs, at room temperature
2 tablespoons (15 g) all-purpose flour
1/2 cup (120 g) plain whole-milk yogurt
1 can (15 ounces/425 g) pumpkin purée
1 teaspoon ground cinnamon
3/4 teaspoon ground ginger
1/4 teaspoon freshly ground nutmeg

1/4 cup (60 ml) whiskey
1 1/2 cups (150 g) pecan pieces, toasted
1 teaspoon freshly squeezed lemon juice

Steps:

  • Preheat the oven to 350°F (175°C). Lightly butter the bottom and sides of a 9-inch (23-cm) springform pan.
  • To make the crust, in a food processor fitted with the metal blade, pulse the 1 1/2 cups (150 g) pecans, light brown sugar, 3 tablespoons (1 1/2 ounces/45 g) melted butter, and 1/4 teaspoon cinnamon until the nuts are in fine pieces and the mixture begins to hold together. Transfer the mixture to the prepared springform pan and press it evenly into the bottom and a little way up the sides. Bake until deep golden brown, about 15 minutes. Let cool completely.
  • Wrap a large sheet of aluminum foil around the outside of the springform pan, making sure it's absolutely watertight. Set the pan in a large roasting pan.
  • To make the filling, in a stand mixer fitted with the paddle attachment (or in a bowl by hand), beat together the cream cheese, granulated sugar, and lemon zest on medium-low speed just until smooth. Add the eggs, one at a time, stopping the mixer and scraping down the sides of the bowl as needed, until completely incorporated. Mix in the yogurt, pumpkin, cinnamon, ginger, nutmeg, cloves, large pinch of salt, and vanilla until combined.
  • Scrape the filling into the crust in the pan. Pour hot water into the roasting pan to reach halfway up the outside of the springform pan. Bake until the edges are just set and the center still quivers, about 1 hour and 15 minutes.
  • Remove the roasting pan from the oven and let the cheesecake stand in the water bath for 30 minutes. Dip the blade of a sharp knife in hot water and run it around the sides of the cheesecake to loosen it from the sides of the pan, then remove the cheesecake from the water bath. Let cool completely, then cover and refrigerate until chilled.
  • To make the topping, in a medium saucepan, bring the 6 tablespoons (3 ounces/85 g) salted butter, the cream, dark brown sugar, corn syrup or agave nectar, and 1/2 teaspoon salt to a gentle but full boil stirring gently until the sugar dissolves. Cook for 2 minutes without stirring. Remove from the heat and stir in the whiskey and 1 1/2 cups (150 g) pecan pieces. Let cool to room temperature and stir in the lemon juice.
  • Serve the cheesecake chilled or at room temperature. Cut into wedges and spoon topping over each serving.
  • Storage
  • The cheesecake can be stored in the refrigerator for up to 3 days. The topping should be made the day of serving; if chilled, it will lose its shine and will need to be rewarmed.
