6 ounces cream cheese
2 cups all-purpose flour
1 cup butter
1 (14 ounce) package individually wrapped caramels
½ cup evaporated milk
½ cup white sugar
1 cup shortening
⅓ cup evaporated milk
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine the cream cheese, butter or margarine and flour. Mix to form a dough. Pinch off 48 equal pieces and press into mini tassie pans.
  • Bake at 350 degrees F (175 degrees C) for 15 minutes or until lightly brown. Cool slightly. Be careful taking out of pans, they break easily.
  • In the microwave on medium high heat. Melt the caramels and 1/2 cup evaporated milk. Stir until creamy. Pour into melted caramel into shells and top with frosting.
  • To Make Frosting: Beat the sugar, 1/3 cup evaporated milk, shortening and vanilla until light and creamy.

1/2 cup butter or margarine, softened
1 egg
36 round chewy caramels in milk chocolate, from 5 (1.91-oz) rolls, unwrapped
108 mini marshmallows (1 cup)
1/2 cup semisweet chocolate chips

Steps:

  • Heat oven to 375°F. Spray 36 mini muffin cups with cooking spray.
  • Make cookie dough as directed on package, using butter and egg. Shape dough into 36 (1-inch) balls. Place 1 ball into each muffin cup.
  • Bake 8 to 9 minutes or until edges begin to brown. Remove from oven; firmly press 1 candy into center of each cookie until flush with cookie top. Top each with 3 marshmallows. Bake 2 to 4 minutes longer or until marshmallows are puffed. Cool 30 minutes. Loosen edges of cookie with small metal spatula and remove to cooling racks. Cool completely.
  • Place chocolate chips in small resealable freezer plastic bag. Microwave on High about 1 minute or until softened. Gently squeeze bag until chocolate is smooth; cut off tiny corner of bag. Squeeze bag to drizzle chocolate over marshmallows. Let stand until hardened, about 10 minutes.

2 tablespoons all-purpose flour
1/3 cup butter, softened
1 large egg
FILLING:
6 ounces cream cheese, softened

1/3 cup confectioners' sugar
36 caramels
2 teaspoons coarse sea salt
36 pecan halves, toasted

Steps:

  • Preheat oven to 375°. In a large bowl, combine cookie mix and flour. Beat in butter and egg until blended. Shape dough into 1-1/4-in. balls; press onto bottom and up sides of greased mini-muffin cups., In a small bowl, combine cream cheese, chocolate chips and confectioners' sugar. Place a rounded teaspoon of filling in each cup. Press one caramel into the filling in each cup. Bake until edges are golden brown and caramel is melted, 9-11 minutes. 2 (3 ounce) packages cream cheese
1 cup margarine
2 cups flour
14 ounces caramels
1/2 cup evaporated milk
1 tablespoon Kahlua
1/2 cup margarine
1/2 cup Crisco, plain
1/2 cup sugar
2/3 cup evaporated milk
1 tablespoon Kahlua
nuts or candy sprinkles

Steps:

  • If you object to liqueur, the Kahlua can be omitted.
  • By hand, mix the dough ingredients together.
  • Make into small balls.
  • Press into mini muffin cups and prick with a fork 4-5 times.
  • Bake 350F for 12-15 minutes.
  • Let cool and then remove from tins.
  • Using a double boiler, melt the caramels.
  • Add the evaporated milk and Kahlua, stirring well.
  • Fill the tarts 1/2 full with the melted filling.
  • Beat 1/2 cup margarine, 1/2 cup Crisco and 1/2 cup sugar until very smooth and fluffy.
  • Add 1 small can evaporated milk and 1 T Kahula, or more to taste.
  • Beat at least 10-15 minutes or until the consistancy of a light fluffy whipped topping.
  • Using a pastry bag, or a strong plastic bag with the corner cut off, pipe the frosting on top of the cooled caramel filled cups.
  • Sprinkle the tops with nuts or sprinkles.
  • If I'm in a cookie baking frenzy, I make the dough cups one day and then fill and ice them another.
  • I keep them in the freezer until it's time to put them on my trays.

Steps:

  • Heat oven to 350°F Line 16 muffin tins with baking cups.
  • Melt butter in med saucepan over low heat. Remove from heat, stir in brown sugar. Add vanilla and egg, mixing well.
  • Add flour, baking powder and salt. Blend well. Stir in the chopped nuts then pour batter into the lined muffin tins. Bake for 15-20 min until golden brown.
  • Topping: In small saucepan over low heat, melt caramels with the water, stirring constantly.
  • Immediately when muffins are out of oven, place chocolate chips evenly into middle of each cupcake. Spoon scant tablespoon of caramel over the chips in each cup. (if caramel starts to thicken, stir in additional water to maintain consistency). Top each with a pecan half. Store in a tightly covered container.

Steps:

  • Heat oven to 350ºF.
  • Combine graham crumbs, sugar, nuts and butter; spread onto bottom of 8-inch square pan. Bake 10 min.
  • Meanwhile, melt 2 oz. semi-sweet chocolate as directed on package; set aside. Microwave caramels and water in small microwaveable bowl on HIGH 2 min. or until caramels begin to melt; stir until completely melted.
  • Beat pudding mix and milk with whisk 2 min. Stir in melted chocolate.

3 granny smith apples, peeled, cored and chopped
3/4 cup brown sugar
3 -4 tablespoons butter
1/4 cup apple juice
1/4 cup heavy cream
1/4 teaspoon apple pie spice
1 tablespoon cornstarch
1/4 cup soft caramel (about 8 pieces)
double crust, pie mix prepared
1 egg, lightly beaten

Steps:

  • Combine apples, sugar, butter,juice, cream, spices, cornstarch and caramels in a skillet.
  • Bring to boiling over high heat, stirring frequently, 8-10 minutes.
  • Lower heat to medium; cook for another 2-3 minutes.
  • Remove from heat.
  • Preheat oven to 425 degrees.
  • Roll pie crust out to 1/4" thickness.
  • Cut out circles just large enough to fit 12 3" diameter muffin cups with a bit of overlap all around the edge.
  • Cut slightly smaller circles for lids.
  • Press dough on bottoms and up sides of muffin cups overlapping rim slightly.
  • Fill each cup with a scant 1/4 cup of filling.
  • Brush edges of smaller circles with egg.
  • Place smaller circles on top of filled cups; pinch pastry edges together to seal.
  • Pierce top of pie cups or cut out with miniature cutters before brushing on egg wash.
  • Bake at 425 degrees for 15 minutes or until filling is bubbly.

1 cup coconut
1 cup self-rising flour
1.5 (395 g) cans condensed milk
1 tablespoon butter

  • Base:.
  • Add melted butter to brown sugar, coconut and S.R. Flour and place a teaspoonfull into mini muffin trays and bake in 170degree oven for around 8 minutes.

  • Place condensed milk, butter & golden syrup in a saucepan over medium heat and combine till butter is melted and mix begins to bubble, remove from heat and place a dessertspoonful on top of base in muffin pans and return to oven for around 10 minutes or until a nice caramelly brown colour, remove from oven and allow to cool.

  • Melt chocolate in a bowl and dip cooled Caramel Cup tops into melted chocolate and allow to set.

Had these at a friend's house last night; ridiculously good. So good I ignored the fudge & other cookies being served, and was afraid it would be dangerous for me to own the recipe. Too tempting for my self control. So tempting that this morning had me searching the Internet for the recipe. Found several variations, but the...

1 pkg. betty crocker chocolate chip cookie mix (or probably any good chocolate chip cookie dough)
24 rolo candy pieces *for mint variation see note in last step below
72 mini marshmallows
1 c chocolate chips

Steps:

  • 1. Follow directions on package of cookie mix to make cookie dough. Roll dough into balls (approximately 24). Place balls in greased mini cupcake pans. (One recipe suggests making indent in the middle, where you will place the Rolo later.)
  • 2. Bake 8 to 10 minutes or until almost golden brown. Insert 1 Rolo Candy into each cookie. Top with 3 marshmallows. Return to oven for 3 minutes until marshmallows are puffed. Cool.
  • 3. Melt chocolate chips and drizzle over the marshmallows. *For variation, use double chocolate chip mix, and use junior mints instead of Rolos. 1/4 cup brewed Chai tea, chilled
1 teaspoon freshly ground black pepper
1/2 teaspoon ground ginger
1/2 teaspoon ground cloves
1/2 teaspoon ground cinnamon
1/2 teaspoon freshly grated nutmeg
1/2 teaspoon ground cardamom
Caramel squares
Sliced almonds for garnish

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
  • Soften the ice cream in a large bowl. Add the tea and spices and mix until thoroughly combined. Pack and re-freeze at least 2 hours.
  • Unwrap the caramel squares and place them on the baking sheet spaced about 2 inches apart. Bake until melted and softened. Place another piece of parchment on top and press the caramel into a circle. Cool another 2 minutes. Peel the caramel circles off the parchment and press into mini muffin pans to form a small cup shape. Cool completely.
  • Scoop ice cream into cups and garnish with almonds.

3/4 cup whole almonds with skins
1 cup all-purpose flour
1/2 teaspoon salt
6 ounces fine-quality bittersweet chocolate (not unsweetened)
1/2 stick (1/4 cup) unsalted butter
1/2 cup sugar
2 large eggs
For caramel filling
3/4 cup sugar
1/4 cup light corn syrup
2 tablespoons heavy cream
1/2 teaspoon vanilla
1/4 teaspoon salt

Steps:

  • Make shells:
  • Preheat oven to 350°F.
  • In a shallow baking pan toast almonds in one layer in middle of oven until fragrant, about 12 minutes, and cool. In a food processor finely grind 1/2 cup almonds with flour and salt. Reserve remaining almonds for topping brownie cups. Finely chop chocolate. In a small saucepan melt butter and remove pan from heat. Add chocolate and stir until smooth. In a bowl stir together chocolate mixture, almond mixture, sugar, and eggs until combined well. Chill dough until just firm, about 30 minutes.
  • Roll level tablespoons dough into balls and lightly press balls into thirty-two 1/8-cup mini-muffin cups (1 3/4 inches across top and 3/4 inch deep). With thumb make a 1/3-inch-deep indentation in center of each ball. Chill shells 1 hour.
  • Make filling:
  • In a dry 3-quart heavy saucepan cook sugar over moderately low heat, stirring slowly with a fork (to help sugar melt evenly), until melted and pale golden. Cook caramel, without stirring, gently swirling pan, until deep golden. Remove pan from heat and carefully pour corn syrup and cream down side of pan (mixture will vigorously steam and caramel will harden). Simmer mixture, stirring, until caramel is dissolved and stir in vanilla and salt. Transfer caramel filling to a glass measure and cool 10 minutes.
  • Carefully pour warm filling into each shell until it is level with top of shell (do not overfill or filling will overflow during baking). Chill brownie cups, loosely covered, at least 2 hours and up to 1 day.
  • Preheat oven to 350°F.
  • Bake brownie cups in middle of oven 10 minutes, or until caramel just starts to bubble. Transfer pans to a rack and top brownie cups with reserved almonds. Cool brownie cups completely in pans. With a sharp thin knife loosen brownie cups and lift out of pans. Brownie cups keep in an airtight container at cool room temperature 5 days.

1 cup sugar
1 cup dark corn syrup
1 cup butter, cubed
1 can (14 ounces) sweetened condensed milk
2 cups chopped pecans
1 teaspoon vanilla extract
CHOCOLATE CUPS:
1 package (12 ounces) dark chocolate chips
4 teaspoons shortening
TOPPINGS:
1/4 cup dark chocolate chips, melted
Coarse sea salt and whole pink peppercorns

Steps:

  • In a large heavy saucepan, combine sugar, corn syrup and butter; bring to a boil over medium heat, stirring constantly. Cook 4 minutes longer without stirring., Remove from heat; gradually stir in milk. Cook and stir over medium-low heat until a candy thermometer reads 238° (soft-ball stage). Remove from heat; stir in pecans and vanilla. Transfer to a large bowl; cool completely, about 1-1/2 hours (mixture will thicken upon cooling)., For cups, in a microwave, melt chocolate chips and shortening; stir until smooth. Using a narrow pastry brush, evenly coat the inside of thirty 2-in. foil liners with chocolate. Refrigerate until firm, about 15 minutes. Repeat twice to coat three times, reheating melted chocolate as necessary., Remove chocolate cups from liners; fill each with about 2 tablespoons caramel. Drizzle tops with melted chocolate; sprinkle with salt and peppercorns.

9 fun sized snickers, to taste
½ cup caramel syrup, to taste

Steps:

  • Get a muffin tin and coat with vegetable oil spray.
  • Place a cookie's worth of dough into each section of a muffin tin. Press the dough down to make a cup shape.
  • Bake for 10-12 minutes.
  • As soon as the cookies are removed from the oven, place one snickers bar in each cookie cup.
  • Let cool and cover with caramel just before serving.

1 cup packed brown sugar
1/2 cup butter, melted
1 large egg
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup chopped pecans
TOPPING:
20 caramels
2 tablespoons whole milk
2 tablespoons butter
1/2 cup semisweet chocolate chips
1/4 cup finely chopped pecans

Steps:

  • In a small bowl, cream the brown sugar and butter until light and fluffy. Beat in egg and vanilla. Combine the flour, baking powder and salt; gradually add to butter mixture. Stir in pecans. , Fill greased or paper-lined muffin cups about two-thirds full. Bake at 350° for 20-25 minutes or until a toothpick inserted in the center comes out clean (centers will not rise)., In a small saucepan over low heat, melt the caramels, milk and butter; stir until smooth. , Sprinkle chocolate chips over centers of hot blondies; top with caramel mixture. Sprinkle with pecans. Cool for 10 minutes before removing from pan to a wire rack to cool completely. Store in an airtight container.

12 rhodes frozen dinner rolls, thawed but still cold
3 granny smith apples, peeled cored and finely chopped
3/4 cup chopped pecans
6 tablespoons brown sugar
1 1/2 teaspoons cinnamon
3/4 teaspoon nutmeg
1 tablespoon butter, melted
1/2 cup butter, softened
4 ounces cream cheese, softened
1 1/2 cups powdered sugar
1/2 cup caramel sauce
1/8 teaspoon salt

Steps:

  • Spray counter lightly with non-stick cooking spray.
  • Flatten each roll into a 5-inch circle.
  • Combine apples, pecans, brown sugar, spices and butter.
  • Place about 2 tablespoons of apple mixture in the center of each dough circle.
  • Carefully place a dough circle with apple mixture on it into each cup of a sprayed muffin pan.
  • Cover with sprayed plastic wrap and let rise 30-45 minutes.
  • Remove wrap and bake at 350°F 12-15 minutes or until golden brown.
  • Remove from pan to cool slightly and frost.
  • For frosting, combine cream cheese with butter.
  • Add powdered sugar and mix well.
  • Add salt to caramel sauce and stir.
  • Add salted caramel sauce to the cream cheese mixture and stir well.
  • Frost apple cups while warm.
