1 ½ cups fresh ginger, peeled and chopped
2 cups water
¾ cup sugar
3 tablespoons fresh lime juice
1 qt cold seltzer water, or club soda
¾ oz Crown Royal Salted Caramel
1 oz Crown Royal Regal Apple
½ oz lemon juice
ice
4 oz ginger ale
1 caramel-dipped red apple slouse

Steps:

  • Make the ginger ale: Combine the ginger and water in a small saucepan. Bring to a boil over high heat, then reduce the heat to low and simmer, partially covered, for 35-40 minutes, or until the ginger is soft.
  • Strain out the ginger, then return the liquid to the saucepan. Add the sugar and cook, stirring, over low heat, until the sugar is dissolved. Stir in the lime juice and remove the pot from the heat. Let cool to room temperature and then transfer to a jar with a lid and refrigerate for 1 hour, or until ready to use.
  • In a large bottle with a cap, combine the ginger syrup and seltzer water. You should have about 4½ cups. Use immediately or refrigerate for up to 24 hours.
  • To make the cocktail, add the Crown Royal Salted Caramel, Crown Royal Regal Apple, and lemon juice to a glass. Add ice to almost fill the glass and stir a few times to combine. Top with 4 ounces of ginger ale and garnish with the caramel-dipped apple slice.

We use whipped aquafaba to create a frothy bed for the turbinado sugar that's caramelized into a crunchy sugar top for that classic crème brûlée feel.

6 tablespoons aquafaba, (canned chickpea liquid), divided
2 tablespoons granulated sugar
1 cup ice, plus 1 ice cube, divided
1 oz irish cream, such as Baileys
3 oz vanilla vodka
1 oz hazelnut liqueur, such as Frangelico
1 oz white chocolate liqueur
½ teaspoon vanilla extract
2 teaspoons turbinado sugar, divded
small culinary blow torch
cocktail shaker

Steps:

  • In a medium bowl, whip 3 tablespoons aquafaba with an electric hand mixer on medium-high speed until frothy. Add the granulated sugar, 1 tablespoon at a time, until the mixture is glossy and holds stiff peaks. Set aside.
  • Add 1 ice cube and the remaining 3 tablespoons aquafaba to a large cocktail shaker. Shake vigorously until you no longer hear the ice cube and the aquafaba is foamy.
  • Add the Irish cream, vanilla vodka, hazelnut liqueur, white chocolate liqueur, vanilla. Shake vigorously for 30 seconds.
  • Strain the cocktail into 2 martini glasses, filling each about ¾ of the way.
  • Gently spoon the whipped aquafaba topping over each cocktail and smooth the top.
  • Sprinkle each cocktail with 1 teaspoon turbinado sugar. Use a culinary torch to brûlée the sugar until melted and caramelized. Serve immediately.
