FILLING:
1/3 cup finely chopped unpeeled apple
1/3 cup evaporated milk
1/3 cup sugar
1/3 cup chopped walnuts
DOUGH:
1/2 cup butter, softened
1/4 cup confectioners' sugar
1/4 cup packed brown sugar
1 large egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1/4 teaspoon salt
TOPPING:
1 package (14 ounces) caramels
2/3 cup evaporated milk
Green toothpicks
1 cup chopped walnuts

Steps:

  • In a small saucepan, combine filling ingredients. Cook and stir over medium heat until thickened; set aside to cool. , In a large bowl, cream butter and sugars until light and fluffy. Beat in egg. Beat in vanilla. Combine flour and salt. Gradually add to creamed mixture and mix well. , Shape dough into 1-in. balls. Flatten and place 1/4 teaspoon filling in center of each. Fold dough over filling and reshape into balls. Place 1 in. apart on greased baking sheets. , Bake at 350° for 12-15 minutes or until lightly browned. Remove to wire racks to cool. , In a small saucepan over low heat, heat caramels and evaporated milk until caramels are melted; stir until smooth. Insert a toothpick into each cookie and dip into caramel until completely coated; allow excess to drip off. Dip bottoms into nuts. Place on wire racks to set.

2 cup graham cracker crumbs (I used store bought in a can. I find these to work the best)
12 tablespoons butter, melted
1/2 cup powdered sugar
4 cups peeled, cored and chopped apples (we used golden delicious)
1/3 cup sugar
1/4 cup brown sugar
2 1/4 tablespoons flour
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
Caramel topping (store bought!)

Steps:

  • 1. Preheat oven to 350 degrees 2. Grease pan with non-stick butter spray 3. Melt butter 4. In a medium size bowl mix graham cracker crumbs, powdered sugar and butter with a spoon (slowly add the butter and evenly distribute Some people have found the crust recipe to work perfect, while some others found the 12 tablespoons of butter was way to much and the butter started to pool - you may want to start by using 1/2 C butter (1 stick vs. 1 1/2 sticks, or 12 T) Melt the butter and add slowly to the crumbs, a little bit at a time, making sure it's not too wet. You can always add more or save the leftover butter for later. You want a soft dough that sticks together slightly when you try to form a ball, not a wet dough. 5. Evenly distribute mixture to the 24 mini muffin cups. Press along the bottom and sides to make a "cup" 6. Bake for 5 minutes and let cool completely 7. Chop the apples into little pieces - I used a mini food processor. Don't puree, just finely chop 8. Mix apples, sugar, brown sugar, flour, cinnamon and nutmeg in a bowl 9. Bake in a baking dish for 15 minutes on 375 degrees, until apples are slightly softened 10. Scoop a teaspoon or so of the apple mix and place on top of the graham cracker crust cups (while still in the muffin pan) 11. Sprinkle any extra graham cracker on top of the apples (I had some left over!) 12. Bake for 5 minutes on 350 13. Let cool completely 14. Use a knife to loosen from pan and they should pop right out 15. Drizzle with caramel topping

2 large Granny Smith apples - peeled, cored and cut into 1/4-inch dice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Center a round of brie on the prepared baking sheet. Bake in preheated oven until beginning to soften, about 10 minutes.

We used mini-muffin cups and Pillsbury™ Pie Crust to make these mini caramel apple pie bites. Ready in 35 minutes, it's as easy as, well, apple pie.

1 crust from 1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count), softened as directed on box
1/3 cup canned apple pie filling, apples chopped into small pieces
1/3 cup caramel topping

Steps:

  • Heat oven to 450°F.
  • Unroll pie crust on work surface. Using rolling pin, roll out slightly. Using 2 1/2- to 3-inch round cookie cutter, cut 16 rounds from pie crust. Press rounds into 16 ungreased mini muffin cups, folding edges if needed. Generously prick each crust with fork.
  • Bake 4 to 6 minutes or until light brown. Cool 2 minutes in pan before removing to cooling rack to cool completely.
  • Fill each cooled cup with 1 teaspoon pie filling. Drizzle 1 teaspoon caramel sauce over top of each. Serve immediately.

3/4 cup finely crushed gingersnap crumbs
4 tablespoons sugar, divided
1 (8 ounce) package cream cheese, softened
2 tablespoons frozen apple juice concentrate, thawed
1 (11 1/2 ounce) jar Smucker's® Simple Delight™ Salted Caramel Topping
1/4 teaspoon apple pie spice
1 large egg
1 small unpeeled red delcious apple, cut into wedges
coarse sea salt

Steps:

  • HEAT oven to 325°F Line 24 mini muffin cups with mini foil or paper baking cups. Microwave butter in small microwave-safe bowl on HIGH 30 seconds or until melted. Stir in gingersnap crumbs and 2 tablespoons sugar until evenly moistened. Divide evenly into prepared baking cups using about 1 1/2 teaspoons for each. Press to form an even layer.
  • BEAT cream cheese in medium bowl with electric mixer on medium speed until fluffy. Beat in juice concentrate, 2 tablespoon topping, apple pie spice and remaining 2 tablespoon sugar until smooth. Beat in egg just until blended. Spoon over crusts until baking cups are almost full. Bake 12 to 15 minutes or until set. Cool in pans 15 minutes. Chill 1 hour or overnight.
  • REMOVE foil baking cups from cheesecake bites, if desired. Spoon desired amount of remaining topping onto centers of cheesecake bites. Cut apple wedges crosswise into small triangles for garnish. Insert tip of triangle into topping. Sprinkle lightly with sea salt, if desired.

1 (8 ounce) package cream cheese, softened
1/2 cup sugar
1 teaspoon vanilla
3 Tablespoons flour
1 (21 ounce) can Duncan Hines Caramel Apple Pie Filling
Optional:
4 Tablespoons sugar
2 teaspoons ground cinnamon

Steps:

  • Preheat oven to 375 degrees F. Roll out crescent dough and separate crescents. In a mixing bowl, beat together cream cheese, sugar, vanilla and flour until smooth. Spread one tablespoon of cream cheese filling on each crescent roll. Drop one tablespoon of apple pie filling at the widest part of each roll. Roll up each crescent roll starting and the widest end. Fold over any extra dough to hold in the filling. Combine sugar and cinnamon in a small bowl. Roll each crescent roll in cinnamon and sugar mixture and place on an ungreased cookie sheet. Bake for 15 minutes or until golden brown.

Here's what you need: apples, pitted dates, water, almond milk, vanilla extract, salt, topping of your choice, popsicle stick

5 apples
30 pitted dates
½ cup water, hot
¼ cup almond milk
½ teaspoon vanilla extract
½ teaspoon salt
topping of your choice, if desired
popsicle stick, as needed

Steps:

  • In a small bowl, pour the hot water over the dates. Allow the dates to soak for 10-15 mins. This makes them easier to blend.
  • Add the date and the water to a food processor and blend until smooth.
  • NOTE: If your date puree is looking thick and chunky, add a few splashes of water while the food processor is running until the mixture thins out.
  • Add the date mixture to a sauce pan over medium-low heat. Add the almond milk, vanilla extract, and salt, and mix to combine. Stir often for 8-10 minutes until thick.
  • Use a melon baller to scoop out apple balls.
  • While the caramel cools, stick the apple balls onto the popsicle sticks. Dip the apple sticks into the caramel, roll in toppings (if desired), and allow to set in the fridge for 30 minutes.
  • Enjoy!
