4 cups water or 4 cups stock
2 1/2 cups long-grain rice
1 teaspoon turmeric
1 cinnamon stick
1/2 teaspoon ground cinnamon
1 -2 tablespoon sugar, white or brown
salt and pepper, to taste
1/2 cup raisins (sultanas are best)
butter (optional)

Steps:

  • Add the water or stock to a large saucepan and bring to a boil over medium heat. Add the remaining ingredients and return to a boil. Reduce heat to low, cover tightly and simmer for 15 minutes.
  • Remove from heat and set aside, covered, for another 5-10 minutes. Discard cinnamon stick, fluff with a fork and serve hot.
  • Optional, Stir 1-2 tablespoons of butter into the cooked rice at the end.

  • Heat the oil in a medium-size saucepan. Add the rice, and stir to coat completely. Add the remaining ingredients, bring to a boil, cover, and let simmer over low heat until all the water is absorbed.

1 cup rice (I used Basmati Rice)
2 tablespoons sugar
1 teaspoon ground cardamom
2 cups water
1 tablespoon vinegar
2 tablespoons butter
2 teaspoons ground cinnamon
2 teaspoons ground turmeric
1/2 cup sultanas or 1/2 cup currants
slivered toasted almond

Steps:

  • Melt butter in pot.
  • Add rice and spices.
  • Fry gently for a few minutes to extract flavour from spices.
  • Add water, sultanas and vinegar and bring to boil, stir well.
  • Simmer till done (about 20 minutes).
  • Sprinkle with toasted slivered almonds.
