MELON & VANILLA JAM



Melon & Vanilla Jam image

A smooth and delicate melon jam that's great on toast, pancakes or with savoury cheeseboards and cured meats.

Number Of Ingredients 4

1kg / 2.2lb Orange-fleshed Melon or Cantaloupe
900g / 1.8lb Granulated Sugar
1 Vanilla Pod
125ml Liquid Pectin or equivalent of powdered pectin

Steps:

  • Deseed, remove the skin and cut the melon into 1 - 2 cm size cubes. Place in a bowl and mix in the sugar so all the melon is coated. Leave the melon to stand for around 4 - 5 hours, stirring every so often.
  • After at least 4 hours the juice of the melon will have been drawn out. Pour the juice into a pan and reserve the melon chunks in a bowl.
  • Begin to heat the melon juice in the pan along with the vanilla pod that has been cut in half lengthways and the seeds scraped out. Bring to a simmer and reduce by around half. Add the melon chunks to the juice and bring to a rolling boil.
  • Prepare a hot water bath and carefully place the cleaned jars in it. Bring to a simmer and then remove the jars when ready to fill.
  • Boil the melon jam until it reaches 105°C / 221°F. Stir in the liquid pectin or follow the instructions for doing so and perform a wrinkle test to check the jams set. Boil for another 5 minutes if the setpoint hasn't been reached and test again.
  • Once the jam has reached setting point ladle into the still-hot jars. Add the lids and bands and screw on until just tight. Process the jars in the boiling water bath submerged by at least 1 inch for 10 minutes, starting the timer when the bath reaches a boil.
  • After 10 minutes remove from the heat, allow the jars to stand in the boiling water bath for 5 minutes and then lift out with jar tongs. Allow to cool to completely.

3 cups firm ripe cantaloupe, seeded, peeled, crushed, lightly drained (about 2 large)
1/2 cup strained fresh lemon juice
5 3/4 cups sugar
1/2 teaspoon unsalted butter
2 (3 ounce) packages liquid pectin

Steps:

  • In an 8-quart pan, combine the cantaloupe, lemon juice, sugar, and butter.
  • Over med-low heat, stirring constantly, heat the mixture until the sugar is completely dissolved.
  • Increase heat to med-high and bring the mixture to a full rolling boil, stirring constantly.
  • Stir in the entire contents of both pectin pouches; return mixture to a full rolling boil, stirring constantly.
  • Boil, stirring constantly, for 1 minute.
  • Remove pan from the heat; skim off any foam.
  • To prevent jam from separating in the jars, allow the jam to cool for 5 minutes before filling the jars.
  • Gently stir the jam every minute or so to distribute the fruit.
  • Ladle the hot jam into hot jars, leaving 1/4-inch headspace.
  • Wipe jar rims and threads with a clean, damp cloth; cover with hot lids and apply screw rings.
  • Process half-pint jars in a 200°F water bath for 10 minutes; pint jars for 15 minutes.

4 cups coarsely chopped cantaloupe
1 cup sugar
1/3 cup fresh lemon juice
1/2 cup honey
1 teaspoon kosher salt
1 teaspoon powdered pectin

Steps:

  • Bring cantaloupe and 1 cup water to a boil in a medium saucepan, mashing lightly with a potato masher; add sugar and lemon juice and bring to a boil, stirring constantly. Cook, stirring, until mixture is thick, 15-20 minutes. Stir in honey, salt, and pectin and boil vigorously, stirring, 2 minutes. Let cool. Transfer jam to a glass jar, cover, and chill.

1/2 cup sugar
1/4 cup water
2 tablespoons fresh lemon juice
1 large ripe cantaloupe, seeds and rind discarded and flesh cut into 1-inch pieces (4 cups)
1/3 cup golden raisins
Accompaniment: plain yogurt

Steps:

  • Bring sugar, water, and lemon juice to a boil, stirring occasionally until sugar is dissolved, then boil, uncovered, until slightly thickened, about 5 minutes. Stir in cantaloupe and raisins and simmer, uncovered, stirring frequently, until cantaloupe is translucent and syrup is thickened, 15 to 20 minutes.
  • Transfer conserve to a metal bowl, then set bowl in a larger bowl of ice and cold water to cool, stirring occasionally.

1 lb cantaloupe balls (peeled, seeded, and cut into 1-inch cubes, should be 2 1/2-3 cups) or 1 lb honeydew, cubes (peeled, seeded, and cut into 1-inch cubes, should be 2 1/2-3 cups)
ice water
1/2 cup Everclear alcohol or 1/2 cup vodka
4 cups sugar
1 cup water
1 piece dried ginger (small piece)

Steps:

  • Drop melon into boiling water.
  • Let water return to a boil, then drain.
  • Rinse with ice water, and let drain for 20 minutes.
  • Spread the melon on a platter, sprinkle with alcohol and let stand for 15 minutes.
  • Make a syrup by mixing 2 cups of the sugar with the cup of water.
  • Add the ginger to the syrup and cook mixture over low heat, gradually adding the rest of the sugar.
  • Add the melon to the syrup and continue cooking until melon becomes transparent.
  • Remove the ginger.
  • When mixture has cooled, place in jars and seal.

Posted in response to a request, this is my adaptation of a BH & G recipe! You can use the variety of melons as I do or all cantalope. Its VERY sweet & fabulous over ice cream or spread on toast!

3 cups peeled chopped peaches
1 cup chopped cantaloupe
1 cup chopped honeydew melon
1 cup chopped watermelon
1 cup chopped pineapple
4 1/4 cups sugar
3 tablespoons lemon juice
1/3 cup blanched slivered almond
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1/4 teaspoon orange zest

Steps:

  • Mix fruit in an 8- 10 quart kettle or Dutch oven.
  • Stirring constantly, bring mixture to a full rolling boil; add sugar& lemon juice, return mixture to a full rolling boil and boil constantly, uncovered, for 12 minutes.
  • Add remaining ingredients& boil hard, uncovered, until the syrup sheets off a metal spoon- 4 to 5 minutes; remove from heat& quickly skim off foam.
  • Pour at once into hot sterilized jars, leaving 1/4 inch headspace& adjust lids.
  • Process in boiling water bath for 15 minutes.
