CANADIAN BACON WITH MAPLE GLAZE (BASIC RECIPE)
A good basic recipe found on www.foodbycountry.com. Posted for ZWT4. Recipe says it can be served as a main dish or as an appetizer (cut into smaller pieces).

Steps:
- Preheat oven to 300°F (150°C).
- Combine vinegar, maple syrup, and brown sugar in a bowl. Set aside.
- Slice Canadian bacon about ½-inch thick. Arrange the slices in a casserole or baking dish, and spoon the syrup mixture over the slices.
- Bake for 30 minutes. Serve hot or at room temperature. (To serve as a snack, cut slices into bite-sized pieces and serve with toothpicks.).
MAPLE-GLAZED BACON
This recipe is courtesy of Country Living magazine. This bacon goes wonderful with pancakes and syrup.

Steps:
- Cook the bacon in a large skillet over medium-high heat until browned, but NOT crispy; drain on paper towels; set aside.
- In a small bowl whisk together the maple syrup, Dijon mustard and brown sugar; set aside.
- Return the bacon back to the skillet and brush with glaze, then turn the bacon over.
- Cook the glazed side down for 2 minutes over low heat.
- Glaze then turn and cook for another 2 minutes over low heat.
- Repeat until all the glaze is used up.
- Serve immediately.

BACON WITH CITRUS GLAZE
This is a Martha Stewart recipe. I haven't made it yet, but it looks like it would be so good as part of a breakfast with eggs and toast.

- Preheat oven to 400°F Lay bacon on a baking sheet. Juice oranges into a small saucepan, and add cane syrup. Cook over medium heat until glaze is thick enough to coat the back of a spoon, about 8 minutes.
- Brush some glaze over the bacon, and bake for 10 minutes. Brush with more glaze. Contine to bake until golden, about 15 minutes more (or 10 minutes more if using regular bacon).
- Brush bacon with remaining glaze, and transfer to a parchment or paper towel-lined plate to drain before serving.
