DIJON-TARRAGON CHICKEN, MASHED POTATOES WITH BRIE OR CAMEMBERT AND RAINBOW CHARD WITH BACON AND LEEKS

- For the mashed potatoes: Peel potatoes and cube into uniform pieces, 8 per potato. Smash two cloves of garlic. Place potatoes and smashed garlic in saucepot, cover with water, cover pot and bring to boil. Season with salt and cook to tender, removing lid once potatoes boil. Return the potatoes and garlic to hot pot after draining, then add milk or stock and cheese and mash. Season with pepper of choice, then keep covered.
- For the Dijon-tarragon chicken: While potatoes are coming to a boil, remove tenders from chicken and pound the breasts (if they are large) 1/2 inch thick, then cut each into 3 pieces. Season chicken breasts and tenders with salt and pepper.
- Heat a large cast-iron skillet over medium-high heat with EVOO and melt butter into oil. When it foams, add chicken and brown on both sides, 6 to 7 minutes.
- Peel and chop shallot and chop or grate garlic.
- Remove chicken to a plate, add shallots and garlic and stir a minute or so. Add wine and reduce to 1/4 cup, then add stock and bring to boil. Add creme fraiche or heavy cream and simmer at low rolling boil 2 to 3 minutes, then add Dijon and juice of 1/2 lemon. Chop and add tarragon, slide chicken back into pan and leave on warm or cover pan.
- For the chard with bacon and leeks: While chicken is working, heat a large nonstick skillet over medium-high heat with 1 tablespoon of olive oil, 1 turn of the pan. Stem chard and chop stems; shred the greens. Chop and add bacon to the pan and brown to crisp, 4 minutes. Quarter leek and trim root, then chop; add chard stems and leek to bacon, stir 2 minutes, then wilt in chard greens. Season with salt and pepper and nutmeg to taste, then add juice of 1/2 lemon.
- Serve chicken alongside mashed potatoes and greens with bacon.
BAKED GARLIC, BASIL AND CAMEMBERT STUFFED CHICKEN BREASTS
I have based this on my Easy Garlic and Basil Stuffed Chicken Breasts as a variation. I used panko but you could use plain dried breadcrumbs. This recipe can easily be doubled.

- Preheat oven to 180'C/350-375'F.
- Mix together the chopped basil, garlic and butter.
- Cut a deep cut along each chicken breast to make a pocket.
- Fill pockets with mixture and then place camenbert slices of top, pressing in well.
- Dust with a little flour and dip into the beaten egg.
- Add salt and pepper to the panko and stir.
- Roll breasts in the panko mix covering them well.
- At this stage you can either place in fridge for 30 minutes to set the crumbs or start cooking by placing the breasts in a greased or sprayed baking dish.
- Place in oven and bake for 15mins.
- Pour over the wine and continue baking for another 15 minutes or until lightly browned and cooked through.
BRANDIED TARRAGON CREAM CHICKEN (CHICKEN A LA VALLEE D'AUGE), CAMEMBERT RICE WITH WARM ENDIVE AND APPLES

- In a medium sauce pot over medium heat melt 1 tablespoon butter. Add rice and toss to coat, toast 2 to 3 minutes until fragrant. Add stock and bring to a boil. Reduce heat to a simmer and cook 18 minutes, fluff with fork and stir in Camembert to melt.
- While the rice cooks, heat 2 tablespoons extra-virgin olive oil in a large skillet over medium high heat. Season the chicken with salt and pepper and dredge chicken lightly in flour and shake off any excess. Brown chicken 3 to 4 minutes on each side. Remove chicken and reduce heat a little and melt in remaining 2 tablespoons butter. Saute the shallots 3 minutes until soft but not browned. Remove pan from the heat, add the brandy and ignite with a long kitchen match until the flame subsides. Return pan to the heat, add mushrooms and cook 2 to 3 minutes. Season with salt and pepper. Add wine and reduce 1 to 2 minutes. Stir in cream and tarragon and slide chicken back into the pan.. Reduce heat to low and simmer 8 to10 minutes.
- Heat 2 tablespoons extra-virgin olive oil in a skillet over medium heat. Trim the ends of endive and thinly slice the tight bottoms. Half the upper leaves across and separate the leaves. Quarter the apples lengthwise and cut away the core. Thinly slice the apples. Add the endive and apples and saute 3 to 4 minutes to tenderize. Dress the salad with vinegar and sugar, salt and pepper and chives.
- Serve the chicken along side rice and endive and apples.
CRANBERRY CAMEMBERT CHICKEN

- Cut a deep pocket in the side of each chicken breast.
- Fill pockets with cheese slices, secure with toothpicks.
- Toss filled chicken in flour, dip into combined egg and water, press firmly into combined breadcrumbs and sesame seeds.
- Cover and refrigerate chicken for 30mins before cooking.
- Heat oil in large pan, add chicken; cook over medium heat until crumbs are golden and chicken is cooked, turning once during cooking.
- Drain on absorbent paper.
- Serve with cranberry sauce and salad, if desired.

- Preheat oven to 200oC. Lightly grease a baking tray.
- Spread each piece of chicken with mustard. Top with camembert and basil.
- Wrap 1 prosciutto slice around each piece.
- Lay 2 sheets of filo flat and spray with oil or brush with butter. Fold in half.
- Top with 1 piece of chicken. Wrap as a parcel.

FRENCH CHICKEN IN A POT WITH DRUNKEN JUS AND MASHED CAMEMBERT POTATOES

- Remove the giblets, then wash and dry the chicken. Tuck the wings back and underneath the backbone until they stay in place. Season liberally with kosher salt or sea salt and lots of black pepper.
- Preheat the oven to 275 degrees F.
- Heat a large Dutch oven over medium to medium-high heat.
- Add 1 tablespoon extra-virgin olive oil to the hot pot and brown the chicken breast-side down first, turn using a wooden spoon or closed tongs placed in cavity.
- Once the bird has browned on both sides, remove the chicken to a plate and add the onion, celery, carrot, garlic, rosemary, bay leaf, salt, and pepper, and cover the pan. Sweat the vegetables to make a little pan juice, 5 to 6 minutes, stirring occasionally. Place the bird atop the vegetables and cover the pot. Transfer to the oven with the rack at the oven bottom, and roast about 1 1/2 hours, until a thermometer reads a minimum of 165 degrees F at the thickest part of the bird.
- About 15 to 20 minutes before the chicken comes out of the oven, place the potatoes and turnips in a pot, cover with water, bring to a boil, and cook to tender. Drain, and mash with milk, and ripe camembert cheese. Season the potatoes with salt, pepper, and nutmeg, to taste. Cover and turn off the heat to keep potatoes warm.
- Place the chicken on a carving board and cover with foil.
- In a large pot, bring a few inches of water to a boil for the green beans. Salt the water, and boil the beans 5 to 6 minutes for tender-crisp. Drain and dress with butter.
- Pour the pan juices and scrape the solids through a strainer into a bowl and return the pan to stovetop over medium heat. Press down on straining solids to collect all of the pan juices. Add the wine to the hot pan, and scrape up the drippings. Pour in the juices and reduce over a rapid simmer for about 10 minutes to concentrate the flavors. Add the lemon juice and turn off the heat. Transfer to a gravy boat or serving dish.
- Carve the chicken and serve with pan juices, potatoes, and beans.

- Coat a pan with cooking spray, heat and cook the chicken until browned on both sides.
- Remove from the pan, cool and thinly slice.
- Preheat oven to 200°C.

- Spray a skillet with cooking spray, and place over medium heat. Fry chicken breasts in the skillet until cooked through, about 20 minutes.
- While the chicken cooks, melt butter in a small skillet over medium heat, and stir in flour until smooth. Stir in green onion, and cook, stirring constantly, until the mixture starts to brown. Gradually mix in milk, and continue cooking and stirring until the sauce is thick and smooth. Remove from heat, and stir in the mustard and Camembert until melted and smooth.
- Remove chicken to serving plates, and top with slices of avocado. Pour sauce over the chicken, and serve.

CAMEMBERT CHICKEN
This is a different way of serving chicken. It goes over well at dinner parties, but is equally suited to a romantic evening. I think it originally came from a Valentines Day special. I have included the refrigeration time in the prep. Some roasted asparagus and new potatoes and you have a complete meal.

- Cut a pocket in the thick part of the chicken breasts.
- Stuff with the cheese.
- Season the flour with salt and pepper.
- Coat chicken in flour, being careful with the stuffing.
- Then in egg.
- Then in the combined crumbs and nuts.
- Ensure that it is well coated.
- Cover and refrigerate for at least half an hour.
- Preheat oven to 200C.
- Line a tray with baking paper and place chicken on it.
- Spray with olive oil spray or lightly drizzle with oil.
- Bake for 15mins.
- Turn over and cook a further 5 mins.
CAMEMBERT ROAST CHICKEN
Taken from a clipping some years ago, unfortunately I can't name the magazine. If you're in Australia, it suggests using Tasmanian Heritage brand cheese.

- Preheat oven to 180dc. Stuff chicken with cheese and herbs.
- Place chicken onto a wire rack in a roasting pan. Roast for 1 1/2 hours or until juice run clear when the thickest part of the chicken thigh is pierced with a skewer.
- Remove chicken to a serving platter and cover to keep warm.
- Transfer pan juices to a container and chill in the freezer for 3 minutes. Use a large metal spoon to skim fat from juicse.
- Place roasting pan onto stovetop and heat over medium heat. Add wine to pan and bring to the boil, scraping base of pan. Pour in reserved pan juices and cook until headed. Pour mixture over chicken.
- Serve slices of chicken with potatoes and steamed vegetables.

CAMEMBERT CHICKEN PARMIGIANA
I saw Recipe#132383 which I liked the sound of, but decided to try the idea of a parmigiana stuffed with Camembert. I thought it came out really well and the Camembert did give a good flavour burst in the middle that went well with the sauce.

- Pre-heat oven to 180°C / 350°F.
- Cut pocket into thickest part of chicken breast and stuff with slices of Camembert cheese. Put it well into the middle and press down the outer edges to keep it together.
- Lightly beat together egg, garlic, onion powder and tarragon in a bowl.
- Dip chicken breasts in egg mix and roll in breadcrumbs to coat.
- Place chicken in a foil lined baking dish and place in oven on a lower rack for 35 minutes.
- Remove and spread pasta sauce evenly over the top, and sprinkle with parmesan.
- Return to oven on a higher rack (but not too close to the top) for around 15 minutes until cheese has melted.
