1 tablespoon vegetable oil
1 teaspoon chopped fresh ginger root
1 clove garlic, minced
2 teaspoons minced fresh serrano or other small hot green chile, including seeds
2 chicken breasts, cut into chunks
2 teaspoons red curry paste
1 tablespoon curry powder
1 tablespoon vinegar
1 tablespoon fish sauce
2 teaspoons white sugar
2 cups chicken broth
2 (13.5 ounce) cans coconut milk
1 (20 ounce) can pineapple tidbits, drained
4 cups cooked rice

Steps:

  • Heat the cooking oil in a large pot over medium-high heat. Cook and stir the ginger, garlic, serrano pepper, and chicken in the hot oil about 5 minutes. Add the curry paste, curry powder, vinegar, fish sauce, sugar, chicken broth, coconut milk, pineapple, and rice; stir. Allow the soup to simmer until it thickens, about 15 minutes more.

My Khmer sons both love this soup at our favorite Cambodian restaurant, Chez Sovan, in San Jose, CA. This is my attempt to match the flavors at home. My oldest son's comment on trying the soup was, Mmm so close, make some more! Serve with warm baguette.

4 cups chicken broth
2 lemons, zested and juiced
1 head garlic, minced
1 lime, zested and juiced
10 whole black peppercorns
1 teaspoon soy sauce
1 (1/2 inch) piece fresh ginger, peeled and thinly sliced
4 dashes fish sauce
1 dried red chile pepper
4 stalks lemongrass, trimmed
water
8 ounces cubed cooked chicken
6 green onions, thinly sliced
1 carrot, cut into matchsticks, or to taste
1 cup thinly sliced cabbage, or to taste
1 cup mung bean sprouts, or to taste
2 ounces dried Chinese mushrooms, or to taste
3 tablespoons chopped cilantro
3 tablespoons chopped Thai basil
2 tablespoons chopped mint
4 teaspoons garlic chile paste, or to taste, divided

Steps:

  • Combine chicken broth, lemon juice, lemon zest, garlic, lime juice, lime zest, peppercorns, soy sauce, ginger, fish sauce, and chile pepper in a large pot.
  • Remove tough outer stalks from lemongrass. Halve inner stalks and cut into 3-inch peaches. Place in a resealable plastic bag and pound with a hammer until bruised.
  • Fill bag with water and pour into the pot. Bring soup to a boil; reduce heat and simmer until flavors combine, about 20 minutes. Strain with a small mesh strainer, discarding solids. Pour strained liquid back into the pot.
  • Stir chicken, green onions, carrot, cabbage, mung bean sprouts, Chinese mushrooms, cilantro, Thai basil, and mint into the soup. Simmer over medium heat until carrot is tender, about 10 minutes.
  • Spoon 1 teaspoon garlic chile paste into the bottom of each serving bowl and ladle soup on top.

one 3-pound rotisserie chicken
1 tablespoon vegetable oil
2 tablespoons minced fresh ginger
2 garlic cloves, minced
4 cups chicken stock or 4 cups low-sodium broth
1 cup water
3 tablespoons asian fish sauce
1 teaspoon honey
1 cup cooked jasmine rice
8 shelled and deveined medium shrimp, halved lengthwise (about 1/4 pound)
2 tablespoons fresh lime juice
1/4 cup chopped cilantro
2 tablespoons chopped basil
1 Thai chile, thinly sliced
lime wedge, for serving

Steps:

  • Cut the chicken into legs, thighs, breasts and wings. Cut each breast crosswise through the bones into 3 pieces. Remove the thigh bones and cut each thigh in half.
  • In a large saucepan, heat the oil. Add the ginger and garlic and cook over moderate heat until softened, about 3 minutes. Add the stock, water, fish sauce, honey and rice and bring to a boil. Add the chicken pieces and simmer for 5 minutes. Stir in the shrimp and cook just until opaque, about 1 minute. Stir in the lime juice, cilantro, basil and chile and serve right away, passing lime wedges at the table.

8 cups low sodium chicken broth
1 tablespoon grated lime zest
2 tablespoons fresh lime juice
ginger, peeled, halved lengthwise, and smashed (3-inch piece)
6 garlic cloves, peeled and gently smashed
5 jalapeno chilies, stemmed, halved, and seeded
salt
pepper
7 ounces rice noodles (3/8-inch wide)
1 (2 1/2 lb) rotisserie chicken, skin and bones discarded, meat shredded into bite-size pieces (3 cups)
1/4 cup chopped fresh cilantro
1/4 cup chopped fresh basil
5 scallions, sliced thin on bias

Steps:

  • Combine broth, zest, ginger, garlic, jalapenos, and 1 teaspoon salt in a Dutch oven over med-high heat and bring to boil.
  • Decrease heat to medium, cover, and simmer until broth is flavorful and fragrant, about 15 minutes.
  • Discard ginger, garlic, and chiles.
  • Meanwhile, bring 3 quarts water to boil in a large saucepan over med-high heat.
  • Add noodles and 1 tablespoon salt and cook until tender, about 8 minutes.
