Number Of Ingredients 10

10 cups torn Bibb or Boston lettuce
1-1/2 cups orange sections (about 2 medium oranges)
1 cup ruby red grapefruit sections (about 1 medium grapefruit)
2 medium ripe avocados, peeled and cubed
3 tablespoons ruby red grapefruit juice
3 tablespoons extra virgin olive oil
2 teaspoons honey
1/2 teaspoon salt
3/4 cup crumbled queso fresco or feta cheese
1/4 cup pistachios, chopped

Steps:

  • Place lettuce, oranges, grapefruit and avocados in a large bowl. In a small bowl, whisk grapefruit juice, oil, honey and salt until blended. Drizzle over salad and toss gently to coat. Sprinkle with cheese and pistachios. Serve immediately.

Number Of Ingredients 14

1 lemon, juiced
1 navel orange, juiced
2 tablespoons honey
1 tablespoon Dijon mustard
1/4 cup extra virgin olive oil
1/4 teaspoon salt
1 teaspoon black pepper
2 navel oranges, sectioned
1 grapefruit, sectioned
1 avocado, diced
1/2 lb mixed baby field greens
1/2 cup dried cranberries
1 cup walnuts, toasted and chopped
1 cup blue cheese, crumbled

Steps:

  • Juice the lemon and orange. Gradually whisk in the honey and Dijon mustard. Mix in olive oil, and season with salt and pepper. Set dressing aside to chill. Section the oranges and grapefruit and cut into small wedges. Dice the avocado. In a large salad bowl, toss the baby greens with the cranberries and above ingredients. Drizzle the dressing, and sprinkle with walnuts and blue cheese. Serve chilled.
