4 cups kale
10 cremini mushrooms
15 cherry tomatoes
1/4 cup sesame seeds, raw
1/4 cup water
2 tablespoons apple cider vinegar
2 teaspoons lemon juice
1 teaspoon nama shoyu
1/4 teaspoon black pepper
salt

Steps:

  • Chop or tear Kale leaves, slice mushrooms, and halve tomatoes. Set aside.
  • To prepare dressing first grind sesame seeds into a powder using a coffee grinder or blender. Add remaining ingredients and blend smooth.
  • Arrange prepped vegetables on serveware and top liberally with Sesame Dressing. Or toss all ingredients in a mixing bowl before serving.
  • * The Sesame Dressing is delicious with kale by itself. Also great on top of raw broccoli florets. Yummo!

Steps:

  • Whisk 3 tablespoons vegetable oil, 2 tablespoons rice vinegar, 4 teaspoons sesame oil, 3 teaspoons low-sodium soy sauce, 2 teaspoons honey and 1/2 teaspoon kosher salt in a large bowl. Chop 1 bunch kale, add to the bowl and toss to coat; let stand 10 minutes. Add 3/4 cup chopped roasted walnuts and 2 tablespoons black sesame seeds. Season with pepper.

3/4 cup white sugar
1/2 cup vinegar
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/4 cup extra virgin olive oil
1 bunch kale, stems removed and leaves chopped
8 ounces shelled frozen edamame, thawed (soybeans)
1/4 red onion, sliced thin
1 cup shredded carrot
2/3 cup fresh blueberries
1/2 cup dried sweetened cranberries (such as Ocean Sprayà , Craisinsà ,)
1/2 cup cashew pieces
1/2 cup shelled roasted sunflower seeds

Steps:

  • Whisk sugar, vinegar, salt, pepper, and olive oil together in a bowl until sugar is dissolved; set aside.
  • Toss kale, edamame, red onion, carrot, blueberries, dried cranberries, cashew pieces, and sunflower seeds together in a bowl. Pour about half the dressing over the mixture and toss to coat. Cover bowl with plastic wrap and refrigerate 4 to 6 hours. Serve remaining dressing on side.
