Maque Choux is a Cajun dish made with corn, cream, bell peppers and tomatoes. It makes a good accompaniment to ham and chicken and is even good for breakfast served with bacon. In this recipe it is used to "smother" sautéed chicken.

1/3 cup canola oil
1 chicken cut into serving pieces
1/2 tsp salt
2 onions, chopped fine
2 ears fresh corn, kernels removed
1 bell pepper, chopped fine
2 tomatoes, peeled, seeded and chopped
2 sprigs of thyme
1/2 cup heavy cream
1 tbsp chopped fresh basil

Steps:

  • Preheat oven to 375°F.
  • Heat 3 tablespoons of the corn oil in a skillet. Season the chicken with salt and add to the skillet. Sauté until browned. Remove and reserve.
  • In a Dutch oven or other oven proof casserole, heat the remaining oil. Add the onions and 2 tablespoons of water. Cook until soft but not brown.
  • Add the corn, peppers, tomatoes, thyme to the onions and season with some salt and pepper. Bring to a boil, then reduce heat and cook for 5 minutes to combine flavors.
  • Add the cream and bring back up to a boil. Allow to reduce slightly.
  • Transfer the chicken to the casserole. Place, uncovered, in the oven and cook about 35 minutes.
  • Stir in the basil. Cook an additional 5 minutes.Serve the chicken on a serving dish and cover with the vegetables. Serve accompanied by some cornbread if desired.

4 boneless, skinless chicken breasts (about 6 ounces each)
1 tablespoon olive or other vegetable oil, plus 1-2 tablespoons vegetable oil, for sautéing
2 tablespoons Creole or whole-grain mustard
1 teaspoon salt
1/2 teaspoon each black and cayenne pepper

2 tablespoons chopped scallion

2 ears sweet white or yellow corn, shucked and silk removed, or 1 1/2 cups frozen corn kernels, thawed
1 tablespoon olive or vegetable oil
2 tablespoons butter
1/2 medium yellow onion, diced
1 jalapeño, seeded and minced
1 garlic clove, minced
1/2 cup peeled, seeded, and diced fresh tomato, or canned tomato (with juices)
1 (14-ounce) can red beans, kidney beans, or chili beans (for a bit more heat), drained and liquid reserved

Steps:

  • If you plan on grilling the chicken, light the coals about 1/2 hour before you're ready to cook.
  • Rinse the chicken breasts and pat dry. Combine the olive oil, mustard, salt, and spices and smear it on the chicken.

Add the onion and cook for 2-3 minutes. Then add the corn, jalapeño, and garlic and stir to mix. Cook for about 3 more minutes, then add the tomato, beans, and 1/4 cup water or reserved bean liquid and season to taste with salt and a little hot sauce. Stir and cook until heated through, then swirl in the remaining tablespoon of butter. Keep the vegetables warm while cooking the chicken.
