2 ounces dry fettuccine pasta
1 ½ teaspoons all-purpose flour
¾ teaspoon salt-free Cajun seasoning
5 ounces large shrimp, peeled and deveined
2 teaspoons unsalted butter
½ teaspoon olive oil
1 teaspoon finely grated garlic
¼ cup unsalted chicken stock
⅛ teaspoon white pepper
1 pinch red pepper flakes
3 tablespoons freshly grated Parmesan cheese
¼ cup light whipping cream (18%)
salt to taste
1 teaspoon chopped fresh parsley

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Cook fettuccine at a boil until tender yet firm to the bite, 7 to 8 minutes. Reserve 1/4 cup of the cooking water and drain the remaining water.
  • Combine flour and Cajun seasoning in a small bowl. Pat shrimp dry and add to the bowl, tossing to coat.
  • Heat butter and olive oil in a skillet over medium-high heat. Place shrimp into the skillet once the butter bubbles and cook for 2 minutes per side. Transfer shrimp to a clean bowl. Add garlic to the same skillet and cook until fragrant, about 30 seconds. Pour chicken broth into the skillet and scrape up any brown bits.
  • Whisk in remaining flour-Cajun seasoning slowly until well incorporated. Season with white pepper and red pepper flakes. Reduce heat to medium-low and slowly whisk in cream; cook for 2 minutes. Add Parmesan cheese slowly, whisking constantly. Cook until sauce has thickened, 2 minutes more. Return shrimp to the skillet and add pasta; toss to combine.
  • Mix in a little of the cooking water if the sauce is too thick, 1 tablespoon at a time. Taste and season with salt, if necessary. Serve sprinkled with parsley.

1 lb cooked andouille sausage
4 tablespoons olive oil
3 cloves garlic, minced
3 bell peppers, diced
1 medium onion, diced
6 cups milk, whole preferred
1 lb fettuccine pasta, uncooked
¾ cup parmesan cheese, plus more for serving
3 tablespoons fresh parsley, chopped, plus more for serving
1 teaspoon cayenne pepper
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon onion powder
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon salt
1 teaspoon pepper

Steps:

  • In a small bowl, combine all spices for the cajun seasoning and mix together. Set aside. Store any extra in an airtight container for future use.
  • In a heavy bottom pot (such as a Dutch oven), heat 2 tablespoons of olive oil over medium heat.
  • Add the sliced chicken and 2½ tablespoons of the prepared cajun seasoning.
  • Add the andouille sausage and cook until the chicken is no longer pink, about 4-5 minutes.
  • Remove the meat from the pot and add the remaining olive oil.
  • Add the garlic, diced peppers and onions and cook until the onions are transparent and softened, about 5 minutes.
  • Add the milk and stir so that the seasoning is incorporated into the liquid.
  • Turn the heat to high and bring to a boil.
  • Add the uncooked fettuccine, stirring constantly until the noodles are al dente, about 10 minutes.
  • On low heat, add the meat back in and stir so that it's evenly incorporated.
  • Add the cheese and parsley, and stir. Remove from the heat.

1 pkg fettuccine pasta (16oz)
1 c diced onions
1/2 c diced green bell pepper
1/2 c diced celery
1 Tbsp minced garlic
2 Tbsp chopped fresh parsley
1/2 tsp cajun seaoning (i like paul prudhomme's seafood magic).
2 lb peeled shrimp
1 c half and half
1 lb velveeta mexican style cheese, cubed
2 Tbsp parmesan cheese
1/2 stick butter

Steps:

  • 1. Cook the fettuccine as directed on the pkg. Drain and rinse well and set aside.
  • 2. Saute the bell pepper, onions and celery in the butter until the onions start to look clear. Add the garlic and cook for another minute or two (not too long or it will burn).
  • 3. Add the half and half, the cajun seasoning, and the velveeta cheese. Simmer until cheese is melted. If you want the sauce thinner, add a little more half and half . Remove from heat and add the shrimp, the parsley and the fettuccine.
  • 4. Transfer to a buttered or sprayed casserole dish and sprinkle parmesan cheese ovr top. Bake uncovered at 350 F for 20-30 minutes, or until bubbly.

This is one of my favorite meals. This recipe can also be made with shrimp only, chicken only, smoked sausage or any combination of meats your prefer.

1 (12 oz) pkg fettucine pasta
2 c boneless skinless chicken breast, grilled and sliced. (i use frozen tyson grilled chicken or you can make your own)
1/2 lb andouille sausage (or to lighten up, use turkey smoked sausage or omit)
1 lb medium to large shrimp, peeled and deveined
2 1/2 c half & half (i use fat free)
1/3 c all purpose flour
1 c tomato sauce
1/2 red bell pepper, seeded & diced
4 clove garlic, minced
1 small onion, diced
4 oz fresh mushrooms, sliced
2 Tbsp butter
1 c fresh shredded parmesan cheese
cajun seasoning to taste (i use about 2 tbsp.)
salt & pepper to taste
1/4 c fresh basil leaves (optional)
1/4 c chopped, fresh parsley
1/4 c freshly grated parmesan
1/4 c fresh, diced tomatoes.

Steps:

  • 1. Cook pasta according to package directions. Rinse, drain and set aside.
  • 2. Melt 1 T. butter in a large, deep skillet. Add sausage, mushrooms, onions and peppers. Saute until tender and sausage is browned. Add minced garlic and saute thirty seconds more. Remove from pan. Set aside.
  • 3. Sprinkle Cajun seasoning over shrimp. Melt remaining butter into pan and add shrimp to the pan. Saute over medium high heat until shrimp are pink and fully cooked. Set shrimp aside.
  • 4. Mix half & half with flour using a fork until smooth and no lumps. Add half & half mixture, parmesan cheese and tomato sauce to the pan. Stir until nicely thickened sauce. Add salt, pepper and cajun seasoning to taste.
  • 5. Add pasta, veggies, sausage & veggies, shrimp and chicken to the pan. Toss gently with sauce until thoroughly combined.
  • 6. Salt and pepper to taste.
  • 7. Spoon into a pasta bowl, top with fresh basil leaves, diced tomato and fresh chopped parsley. Sprinkle with a bit more fresh parmesan if desired.

1/2 lb andouille sausage, cut into 1/4 inch slices
1/2 lb crawfish
1 tablespoon olive oil

tony creole seasoning, to taste (as much as you like. You can use any creole seasoning, but I prefer Tony's!)

  • To Finish:.
  • Toss seasoning mix with chicken cubes until cubes are evenly coated. In medium saucepan, melt 1/2 C butter. Saute chicken over medium heat until done, about 10 minutes.
  • Heat sauce and prepare fettuccine according to package directions.
  • Drain cooked pasta. Stir chicken into sauce and continue heating until hot.
  • Toss with cooked fettuccine. Serve immediately. Sprinkle each serving with grated parmesan cheese.

1 cup chopped green onions

2 Tbsp Butter
3 cloves of Garlic, minced
1lb Jumbo Shrimp, shelled and deveined
1/2lb Sea Scallops
2 Tbsp McCormick's Cajun Seasoning
16oz Heavy Whipping Cream
1lb Fettuccine
1 C Parmesan Cheese
3 Green Onions Chopped
Salt/Pepper - To Taste

Steps:

  • Serving Size - 4 Bring 6 quarts water to boil and add 2 tablespoons salt. Heat 1 large sauté pan over medium heat. Add the butter to the skillet. Once the foaming subsides raise the heat to high and add the shrimp, scallops and 1 Tbsp of the Cajun seasoning. Cook the shrimp and scallops without moving them for about 2 minutes. Turn the shrimp and scallops over and cook for another 2 minutes. Transfer the shrimp and scallops to a bowl. Turn heat down to medium high and add heavy whipping cream and remaining Cajun seasoning to sauté pan. Simmer until reduced by half. While the cream is reducing, cook fettuccine according to package instructions until al dente. Once cream is reduced add shrimp and scallops back into sauté pan along with the green onions. Turn heat down to medium low. Let ingredients combine for about 1 minute over heat . Add fettuccine to sauté pan and toss to coat, then add parmesan cheese and toss and coat. Taste and adjust seasoning with salt and pepper Continue mixing till sauce has coated all of fettuccine, turn heat off and divide pasta among plates.

8 oz fettuccine
2 Tbsp olive oil
2 Tbsp butter
1 lb large shrimp
2 Tbsp cajun spice (you can find recipe here)
2 c chicken broth
2 c heavy cream
1 c parmesan cheese, grated
CAJUN SPICE
2 Tbsp salt
1 Tbsp dried oregano
1 Tbsp paprika
1 Tbsp red chili powder
1 Tbsp ground black pepper

Steps:

  • 1. Cook fettucine according to package instructions.
  • 2. Clean the shrimp and season with 2 tablespoons Cajun spice. Drizzle the flour over the shrimp and toss in a bowl to make sure each shrimp is covered in flour.
  • 3. In a deep skillet add butter and olive oil and heat over high heat. Add shrimp and cook on each side about 2 minutes until crisp. Remove shrimp from skillet and set aside.
  • 4. In the same skillet add chicken broth and heavy cream. Season with additional Cajun spice if preferred. Cook until sauce thickens a bit from the heavy cream, then add Parmesan cheese and whisk. Add fettuccine and shrimp to the sauce and toss.
  • 5. Serve warm.

2 tablespoons all-purpose flour
2 cups v 8 juice (regular or low-sodium)
1 teaspoon cajun seasoning
2 tablespoons vegetable oil
4 chicken breast halves, boneless, skinless (about 1 lb)
1 large green pepper, chopped (about 1 cup)
1 medium onion, chopped (about 1 cup)
4 cups hot cooked fettuccine, cooked withut salt (regular or spinach)

Steps:

  • Stir the flourm vegetable juice, and Cajun seasoning in a medium boewl. Set aside.
  • Heat half the oil in a 12-inch skillet over medium-high heat. Add the chicken and cook until it's well browned on both sides. Remove the chicken from the skillet.
  • Reduce the heat to medium and add the remaining oil. Add the pepper and onion and cook until they are tender-crisp.
  • Add the flour mixtue to the skillet. Cook and stir over medium-high heat until the mixture boils and thickens. Return the chicken to the skillet. Cover and cook for 5 minutes or until the chicken is cooked through. Serve with fettuccine.

1 medium green pepper, cut into strips

2 cup(s) cubed cooked chicken

17 ounce(s) jar alfredo sauce
1/2 cup(s) spaghetti sauce
