CABBAGE AND PINEAPPLE GELATIN SALAD

This is a family tradition for holidays. It is delicious and goes well with any meats.

Number Of Ingredients 6

1- 3 oz. pkg orange gelatin, can use sugarfree
1- 3 oz. pkg lemon gelatin, can use sugarfree
1/2 small head of cabbage, grated fine --or--
1 small bag(s) coleslaw mix, grated fine in a food processor
1 can(s) crushed pineapple, drained but save juice
1 large carrot, grated fine

Steps:

  • 1. Mix the dry jello flavors together. Add 2 cups of boiling water and stir until completely dissolved, about 2 minutes.
  • 2. Pour pineapple juice into a measuring cup and add cold water to measure 1 1/2 cups (since you are adding veggies, the liquid is reduced). Add this to the jello and stir to mix. Put into the refrigerator to slightly thicken to the consistency of egg whites.
  • 3. Stir in the cabbage, carrots and pineapple and mix thoroughly. Chill until set. If made in a pan, cut into squares and serve.

1 46-ounce can unsweetened pineapple juice
1/4 cup soy sauce
2 2 1/4-pound center-cut skinless salmon fillets, each cut crosswise into twenty-four 1/2-inch-wide slices
Nonstick vegetable oil spray
1 tablespoon black sesame seeds

Steps:

  • Bring pineapple juice to boil in large saucepan over high heat. Reduce heat to medium-low and cook until reduced to 3 cups, about 20 minutes. Transfer juice to bowl; cool. Stir soy sauce into marinade.
  • Place fish in single layer in two 15x10x2-inch glass baking dishes. Pour pineapple marinade over fish, dividing equally. Cover and refrigerate 3 hours.
  • Preheat oven to 450°F. Spray 2 large rimmed baking sheets with nonstick spray. Remove fish from marinade; shake off excess. Reserve marinade. Place fish, flat side down, on sheets. Bake until just cooked through, about 4 minutes. Using spatula, carefully transfer to platter.
  • Meanwhile, simmer reserved marinade in medium saucepan over medium heat until reduced to 1 cup, about 15 minutes. Brush fish with marinade. (Can be made 1 day ahead. Cover and refrigerate. Let stand at room temperature 30 minutes before serving.) Sprinkle with sesame seeds; serve with cabbage salad.

1/2 c pecans
2 Tbsp sour cream
1/4 c mayonnaise
1/2 lemon, squeezed
1 Tbsp sugar

  • 1. Slice the cabbage thin and place in bowl
  • 2. Drain juice, then scatter chunks of pineapple over cabbage
  • 3. Toss in chopped pecans
  • 4. Make a dressing with sour cream, mayonnaise, lemon juice, and sugar to taste

1/2 cup fresh orange juice (from about 1 large orange)
1/4 cup fresh lime juice (about 2 medium limes)
1/4 cup sesame oil
6 tablespoons rice wine vinegar
1/4 cup molasses
2 tablespoons fresh ginger, minced
9 dashes Tabasco sauce
1 tablespoon five-spice powder
1/4 cup fresh cilantro, roughly chopped
salt & freshly ground black pepper
1/4 cup butter
1/4 cup brown sugar (light or dark)
1 medium pineapple, peeled and sliced into rounds about 1 inch thick - 8 rounds
1 medium head red cabbage, cored and cut into thin strips
1 1/2 cups carrots, shredded (about 2 medium carrots)
1 bunch scallion (white and green parts trimmed and thinly sliced)

Steps:

  • In a small bowl, combine all the dressing ingredients and mix well, Set aside.
  • In a small saucepan, melt the butter over very low heat. Add the brown sugar, stir well to combine, and remove from heat. Grill the pineapple rounds over medium-high heat until nicely browned, 2-3 minutes per side. During the last minute of cooking, brush the top sides liberally with the butter-sugar glaze. Remove from the grill and cut each round into eighths.
  • In a large bowl, combine the pineapple with the cabbage, carrots, and scallions. Stir the dressing well, add just enough to moisten the ingredients (you will have some dressing left over), toss well and serve.

1/2 cup sesame oil
1/2 cup thinly sliced gingerroot
6 large cloves garlic, peeled and thinly sliced
2 teaspoons sesame seed
3 cups chopped fresh pineapple
1/3 cup chopped Fresh green onions
1/2 cup golden raisins
2 tablespoons rice vinegar
Salt to taste

Steps:

  • In large bowl, put chopped cabbage; set aside.
  • In 1-quart saucepan, heat sesame oil over medium heat. Add gingerroot, and fry until golden brown. Transfer cooked ginger to small bowl. Add garlic to hot sesame oil. When garlic is starting to turn golden in color, add sesame seed, and cook until garlic and sesame seed are golden brown.
  • Immediately pour hot sesame oil, garlic and sesame seed over cabbage. Add fried ginger, and stir to combine. Stir in pineapple, scallion, raisins and rice vinegar. Season with salt. Serve salad at room temperature.
