- Bring maple syrup to a simmer over medium heat. Add cinnamon sticks and reduce heat slightly.
- Simmer 5-10 minutes over low-medium heat.
- Remove from heat and let steep for at least 10 minutes.
- Remove cinnamon sticks before serving.
- Pour syrup into a glass container or bottle with a lid. Refrigerate.

- In a small pan, heat the maple syrup, crushed red pepper and cinnamon for 5 minutes to let the spices bloom. Take off the heat and let cool.
