1 stick (8 tablespoons) unsalted butter, melted, plus for greasing the pan
2 cups quick oats
3/4 cup granulated sugar
3/4 cup whole milk
1 vanilla bean, scraped (see Cook's Note)
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 teaspoon salt
1 teaspoon baking powder
1 egg
Heavy cream
Brown sugar
Berries

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-by-12-inch baking pan with butter.
  • Combine the oats and sugar in a medium bowl, then pour in the milk.
  • Add the vanilla seeds, cinnamon, nutmeg, salt and baking powder.
  • Next comes the melted butter and the egg.
  • Then just stir it all together into a big delicious oaty mess of wonder.
  • Plop the mixture into the prepared pan and spread it out.
  • Bake for 30 minutes, until set.
  • Cut into squares while still warm. Serve with cream, brown sugar and berries.

1 cup butter, softened
1 ½ cups white sugar
2 eggs, beaten
1 tablespoon almond extract
2 ½ cups all-purpose flour
2 teaspoons baking powder
16 almond halves

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease two 8 inch round cake pans, or 9 inch pie plates.
  • In a large bowl, use an electric mixer to beat butter and sugar until light and fluffy. Add eggs, reserving just enough to brush over the tops, about 1 tablespoon. Stir in the almond extract. Combine the flour and baking powder; stir into the batter by hand using a sturdy spoon. The dough will be stiff.
  • Press evenly into the two prepared pans. Press almond halves into the top where each slice would be. Brush the tops with a thin layer of the reserved egg.
  • Bake in the preheated oven for about 30 minutes, or until the top is golden brown. Cut into wedges to serve.

2 cups milk
2 cups regular rolled oats (not instant)
1/2 teaspoon salt
3/4 cup chopped dried fruit
2 medium apples or 2 medium pears, chopped fine
2 teaspoons ground cinnamon
3 tablespoons brown sugar or 3 tablespoons maple syrup
1 cup heavy cream or 1 cup light cream
butter

Steps:

  • Combine the water, milk, oats and salt in an oven-proof casserole.
  • Let sit 5 minutes.
  • Stir in the dried and fresh fruit, cinnamon and sugar or syrup.
  • Cover and bake at 350°F for 45 minutes; remove cover for the last 5 to 10 minutes.
  • Serve hot with warmed cream and butter to stir in to taste.
  • Makes 6 servings.

This is Boterkoek (Dutch Buttercake) just like my Oma (grandma) used to make. She passed away over a year ago now and I really started to crave it. I hope you like it as much as I did growing up! :)

2/3 cup margarine or 2/3 cup half-and-half
1 cup sugar
1 1/2 teaspoons almond extract
1 egg, beaten (reserve 1 tsp)
1 1/2 cups flour
1/2 teaspoon baking powder
sliced almonds, for garnish (optional)

Steps:

  • In medium bowl, mix together butter, sugar and almond extract.
  • Add beaten egg except for 1 teaspoon.
  • Sift flour and baking powder, and add to bowl, mixing with wet ingredients.
  • Put dough in greased 9 inch pie plate.
  • Mix the reserved 1 tsp of beaten egg with 1 tsp of water, and brush over dough.
  • Sprinkle with sliced almonds, if desired. (My Oma always used the almonds, it looks pretty and adds a nice touch!).
  • Bake at 350°F for 25-30 minutes or until done (firm to the touch).
  • This is a dense cake, but should be soft on the inside and hard on the outside, but not too hard!

This version is particularly adaptable: Use peanut butter or almond butter, steel-cut or cracked oats, or any number of warming spices that might be in your cupboard. Then, garnish as you wish.

1/4 cup peanut butter or almond butter
1 cup steel-cut or cracked oats
Pinch of salt
Cinnamon, nutmeg or cardamom, for sprinkling (optional)
Sliced bananas, raisins or dried fruit, chopped apple, maple syrup, honey, brown sugar or heavy cream, for garnishing (optional)

Steps:

  • Heat oven to 350 degrees and bring a kettle of water to a boil.
  • In a medium shallow casserole or baking dish, combine 3 cups boiling water and the nut butter and stir until smooth-ish. (Don't worry about a few lumps.) Stir in oats. Season the mix with a big pinch of salt, and some cinnamon or nutmeg if you like.
  • Cover with foil and bake for 1 hour, stirring halfway through. Taste and if the oats aren't cooked enough, let it bake for 5 to 10 minutes longer.
  • Garnish with whatever you like, and serve.
