1 butternut squash - peeled, seeded, and cubed
1 tablespoon olive oil, or to taste
1 tablespoon chopped garlic
3 dashes ground sage
1 pinch seasoned salt (such as The Chef's Miracle Blend®), or to taste
¼ cup butter
2 teaspoons chopped garlic
¼ cup all-purpose flour
3 cups milk
1 pinch salt and ground black pepper to taste
1 teaspoon chili powder
3 dashes ground sage
½ teaspoon dried rosemary
1 (16 ounce) container ricotta cheese
2 cups shredded mozzarella cheese, divided
1 (10 ounce) package frozen chopped spinach, drained and squeezed dry
1 egg
¼ cup grated Parmesan cheese
9 no-boil lasagna noodles

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Toss butternut squash with olive oil, 1 tablespoon garlic, ground sage, and seasoned salt in a 9x11-inch baking dish until coated.
  • Roast in the preheated oven, stirring every 20 minutes, until butternut squash is tender, about 1 hour.
  • Reduce oven temperature to 375 degrees F (190 degrees C).
  • Melt butter in a large saucepan over medium heat. Add garlic; cook and stir until fragrant, about 1 minute. Whisk in flour until a smooth paste forms. Slowly pour in milk; season with salt and pepper. Cook and stir sauce until thick and bubbling, 8 to 10 minutes.
  • Remove sauce from heat; stir in roasted butternut squash, chili powder, ground sage, and rosemary. Puree sauce with an immersion blender until smooth.
  • Mix ricotta cheese, 1 1/2 cup mozzarella cheese, spinach, egg, and Parmesan cheese together in a bowl.
  • Spread 1/2 cup sauce in the bottom of the baking dish. Lay 3 lasagna noodles on top. Spread 1/3 of the ricotta cheese mixture over the noodles. Repeat layers twice more, ending with remaining sauce. Sprinkle remaining 1/2 cup mozzarella cheese on top. Cover baking dish with aluminum foil.
  • Bake in the preheated oven until mozzarella cheese is melted, about 40 minutes. Uncover and continue baking until bubbly, about 10 minutes more.

1 large butternut squash
6 tablespoons olive oil, divided
3 red onions, medium, julienned
1 pound part-skim ricotta cheese
2 tablespoons rosemary, chopped
2 eggs
1 1/2 cups grated Parmesan cheese, divided
3 tablespoons unsalted butter
Scant 1/2 cup all-purpose flour
3 1/2 cups whole milk
Pinch nutmeg
1 bag chopped frozen spinach (1-pound), defrosted and drained
6 sheets fresh pasta, or no-boil lasagna noodles
Salt
Pepper

Steps:

  • Roast the butternut squash. Preheat oven to 375 degrees. Cut squash in half lengthwise; remove seeds. Place in roasting pan and drizzle with 3 tablespoons of olive oil. Place in oven and cook until soft all the way through, about 1 hour. Set aside until cool. When cooled, remove skin and place in food processor. Purée until smooth, season with salt and pepper to taste, and set aside.
  • To caramelize the onions: Place 3 tablespoons of olive oil in sauté pan. Heat until hot but not smoking; add onions. Toss to coat with oil. Turn heat down to medium and cook until onions are soft and browned, about 25 minutes. Season with salt and pepper to taste. Set aside.
  • Prepare a ricotta cheese mixture. Mix ricotta cheese, chopped rosemary, eggs, half the grated Parmesan and salt and pepper to taste. Set aside.
  • Make a spinach Mornay sauce. Melt butter in a saucepan, add flour and stir. Cook 2 minutes. Add milk and stir until it comes to a boil. Add the rest of the grated Parmesan, the nutmeg and the defrosted spinach. Season with salt and pepper. Set aside.
  • Assemble the dish. Spray a 9" x 13" pan with cooking spray. Spread 1 cup of the spinach sauce on the bottom of the pan. Cover with a layer of fresh pasta sheets. Spread half of the roasted butternut squash on top of the pasta sheets. Top with another layer of pasta sheets. Spread ricotta cheese mixture on top of pasta sheets, and spread caramelized onion on top of ricotta mixture. Cover with an additional layer of pasta sheets. Top with the other half of the butternut purée and then another layer of pasta. Finish by using the rest of the spinach Mornay sauce for the top layer. Cover with aluminum foil and bake at 350 degrees for 1 hour. Uncover and cook for 15 minutes more.

1 onion, diced
4 cloves garlic, chopped
1 (20 ounce) package ground turkey
1 (28 ounce) can crushed tomatoes
3 (6 ounce) cans tomato paste
1 ½ cups water
1 ½ teaspoons dried basil
1 teaspoon fennel seeds
1 teaspoon Italian seasoning
¼ teaspoon ground black pepper
¼ cup chopped fresh parsley
3 ½ cups peeled and cubed butternut squash
1 (10 ounce) package fresh spinach
1 (15 ounce) container fat-free ricotta cheese
1 egg
2 tablespoons chopped fresh parsley
¼ teaspoon ground black pepper
1 (6 ounce) package shredded part-skim mozzarella cheese, divided
9 no-boil lasagna noodles
2 zucchini, sliced lengthwise

Steps:

  • Heat the vegetable oil in a large skillet over medium heat; cook the onion and garlic in the hot oil until fragrant, 5 to 7 minutes. Break the turkey into small pieces into the skillet; cook and stir until completely browned, 7 to 10 minutes. Stir the crushed tomatoes, tomato paste, water, basil, fennel seeds, Italian seasoning, 1/4 teaspoon black pepper, and 1/4 cup parsley into the turkey mixture. Reduce heat to medium-low and simmer, stirring occasionally, until the sauce reaches a desired consistency, 60 to 90 minutes.
  • While the sauce simmers, place the butternut squash in a large, microwave-safe bowl; cover with plastic wrap and cook in microwave on High until tender, about 5 minutes. Set aside.
  • Cook and stir the spinach in a large skillet over medium heat until wilted, about 5 minutes. Set aside.
  • Stir the ricotta cheese, egg, 2 tablespoons parsley, 1/4 teaspoon black pepper, and about 2/3 of the mozzarella cheese together in a bowl. Set aside.
  • Preheat an oven to 375 degrees F (190 degrees C).
  • Pour 1 1/2 cups of the sauce into the bottom of a 9x13-inch baking dish. Arrange 3 of the lasagna noodles in a layer over the sauce. Spread 1 cup of the ricotta cheese mixture over the noodles. Sprinkle about half of the butternut squash over the ricotta cheese mixture. Layer about half the wilted spinach over the butternut squash. Lay about half the zucchini slices over the spinach in a layer. Repeat the layering. Top with the 3 remaining lasagna noodles. Spread any remaining ricotta cheese mixture over the top of the lasagna. Finish by topping with any remaining sauce mixture. Cover with aluminum foil.
  • Bake in the preheated oven for 30 minutes. Remove the aluminum foil and sprinkle the remaining mozzarella over the top of the lasagna. Return to oven and bake uncovered until the top is golden brown, about 30 minutes more. Remove and allow the lasagna to rest 15 minutes before cutting to serve.

2 tablespoons chopped fresh sage
12 garlic cloves, unpeeled (about 1 head)
1 teaspoon kosher salt, divided

Cooking spray
1 large onion, vertically sliced
2 tablespoons water
2 (9-ounce) packages fresh spinach
5 cups 1% low-fat milk, divided
1 bay leaf
1 thyme sprig
5 tablespoons all-purpose flour
1 1/2 cups (6 ounces) shredded fontina cheese, divided
3/8 teaspoon ground red pepper
1/4 teaspoon grated whole nutmeg
9 no-boil lasagna noodles

Steps:

  • Preheat oven to 425°F. Combine squash, 1 tablespoon oil, sage, garlic, 1/2 teaspoon salt, and black pepper in a large bowl; toss to coat. Arrange squash mixture on a baking sheet coated with cooking spray. Bake at 425°F for 30 minutes or until squash is tender. Cool slightly; peel garlic. Place squash and garlic in a bowl; partially mash with a fork. Heat remaining 1 tablespoon oil in a large Dutch oven over medium-high heat. Add onion, and sauté for 4 minutes. Return pan to medium heat. Combine remaining 1/2 cup milk and flour in a small bowl. Add to pan, stirring with a whisk until blended. Bring to a boil; reduce heat, and simmer for 5 minutes or until thickened, stirring constantly. Remove from heat; stir in remaining 1/2 teaspoon salt, 1 1/4 cups cheese, red pepper, and nutmeg. Spread 1/2 cup milk mixture in bottom of a 13 x 9-inch glass or ceramic baking dish coated with cooking spray. Arrange 3 noodles over milk mixture; top with half of squash mixture, half of spinach mixture, and 3/4 cup milk mixture. Repeat layers, ending with noodles. Spread remaining milk mixture over noodles. Bake at 425°F for 30 minutes, and remove from oven. Sprinkle with remaining 1/4 cup cheese. Preheat broiler. Broil 2 minutes or until cheese is melted and lightly browned. Let stand 10 minutes before serving.

0 For the Butternut Parmesan Sauce:
1 pound butternut squash, peeled and diced
1 teaspoon olive oil
1/4 cup shallots, minced
2 cloves garlic, minced
2 tablespoons fresh grated parmesan cheese
0 For the Lasagna:
9 lasagna noodles, cooked
10 ounces frozen chopped spinach, heated and squeezed well
15 ounces fat free ricotta cheese
1/2 cup fresh grated Parmesan cheese
1 large egg
9 tablespoons part skim shredded Italian blend cheese
1 tablespoon parsley, minced

Steps:

  • Bring a large pot of salted water to a boil. Add butternut squash and cook until soft. Remove squash with a slotted spoon, reserving about 1 cup of the water and set aside, then pled until smooth with an immersion blender, adding 1/4 cup of the reserved liquid to thin out.
  • Meanwhile, in a large deep non-stick skillet, add the oil, saute the shallots and garlic over medium-low heat until soft and golden, about 4-5 minutes. Add pureed butternut squash, season with salt and pepper and add a little more of the reserved water to thin out to your liking. Stir in parmesan cheese and set aside.
  • Preheat oven to 350. Ladle about 1/2 cup butternut sauce on the bottom of a 9 x 12 baking dish.
  • Combine spinach, ricotta, parmesan, egg, salt and pepper in a medium bowl.
  • Place a piece of wax paper on the counter and lay out lasagna noodles. Make sure noodles are dry. Take 1/3 cup of ricotta mixture and spread every over noodle. Roll carefully and place seam side down onto the baking dish. Report with remaining noodles.
  • Ladle about 1 cup of sauce over the noodles in the baking dish and top each one with 1 T Italian cheese blend. Put foil over baking dish and bake for 40 minutes, or until cheese melts and everything is hot and bubbly. Top with parsley and serve.

1 TBS Agave Nectar
2 cups chopped onion
1 Lb. Fresh spinach - steamed and chopped

2 Lb total of 3-4 types of mushrooms sliced or coarsely chopped (button/crimini/alba clamshell/velvet piopinni/forest nameko/oyster are recommended)
2 TBS chopped garlic
5 sprigs fresh thyme - leaves only chopped
1 inch fresh rosemary - leaves only chopped
1 TBS Truffle Oil
2 TBS butter
1 TBS red wine
2 TBS vegetable broth
salt and pepper
48 oz. ricotta cheese
3 cups grated fresh mozzarella cheese
3 cups grates parmesan cheese
36 no boil lasagne noodles (approx 2 boxes, 9 oz each)

  • Day 1 - Prepare the Layers Butternut Squash Layer Coat the squash with baslamic vinegar, agave nectar with a spinkle of choppped onion. salt and pepper. Convection roast at 350 for 35-45 minutes until the squash is tender enough to smash with a fork. Cool and store in refrigerator. Mushroom Layer Combine chopped mushrooms, thyme, garlic, rosemary and saute in butter and oil until tender. When most of the moister has evaporated, add the red wine and vegetable broth and saute for another 2 minutes until the broth on the mushrooms is thick. Cool and refrigerate. Spinach Layer Steam whole spinach in a steamer ( or microwave steamer) until wilted. Chop the spinach and add grate fresh nutmeg, salt and pepper. Cool and refrigerate. Day 2 - Assembly Combine ricotta, mozzarella, parmesan cheeses and eggs in a large bowl. Brush the Lasagna pan with olive oil. Spread 2 cups of the cheese mixture in the bottom on the pan evenly. Place 9 noodles (3 rows of 3 overlapping) in the pan to cover. On top of the noodles add 3 cups of the cheese mixture. Put the spinach evenly on the cheese layer. add 9 noodles, 3 cups cheese and the mushrooms. Add 9 noodles, 3 cups cheese and the squash. Add 9 noodles and the remaining cheese sauce on top. Cover and chill overnight in the refrigerator. Day 3 - Baking & Serving Preheat oven to 350. Let Lasagna come to room temp. for about 1-2 hours and bake covered for 35-40 minutes. Uncover and bake for 25-30 minutes longer until cheese begins to brown. Let stand for about 10-15 minutes before serving. Serve with cream of butternut sauce, braised broccoli rabe, brussels sprouts and turnips.

1 cup POLLY-O Original Ricotta Cheese

9 lasagna noodles, cooked

1 pkg. (5 oz.) baby spinach leaves

1 large butternut sqaush, peeled and cubed (or if available, you can use 1 bag of cubed butternut squash and sweet potato mixture)
1 cup water
1/4 tsp black pepper
10 oz frozen chopped spinach, thawed and squeezed dry or equivalent fresh spinach
500 ml nonfat plain yogurt
2 eggs
1/4 tsp ground nutmeg
12 lasagna noodles, cooked (or no cook required)

Steps:

  • 1) Preheat oven to 200 degrees C / 400 degrees F. 2) Add leek, sage and garlic to a nonstick skillet coated in cooking spray. Saute 5 minutes, then add squash and water. Cover and cook 20 minutes or until squash is tender. Stir in pepper and spinach. 3) Combine yogurt and 2 eggs, beaten.
