1 cup butter, cubed
1/4 cup baking cocoa
1 cup water
2 cups all-purpose flour
2 cups sugar
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup buttermilk
2 large eggs, room temperature, beaten
1 teaspoon vanilla extract
3 to 4 drops red food coloring, optional
FROSTING:
1/2 cup butter, cubed
1/4 cup baking cocoa
1/4 cup buttermilk
3-3/4 cups confectioners' sugar
1 teaspoon vanilla extract
Dash salt
3/4 cup chopped almonds, optional

Steps:

  • In a large saucepan, bring butter, cocoa and water just to a boil. Cool. , Meanwhile, preheat oven to 350°. In a large bowl, combine the flour, sugar, baking soda and salt. Add cocoa mixture and buttermilk; mix well. Beat in the eggs, vanilla and, if desired, food coloring. Pour into a greased and floured 15x10x1-in. baking pan. , Bake until set, 20 minutes. For frosting, melt butter with cocoa and buttermilk. Stir in the confectioners' sugar, vanilla and salt. Spread over warm cake. Garnish with nuts if desired.

Nonstick vegetable oil spray
1 1/4 cups all purpose flour
2 teaspoons ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon baking soda
1/8 teaspoon ground nutmeg
1/2 cup mild-flavored (light) molasses
1/2 cup sugar
1/2 cup (1 stick) unsalted butter, melted
1/2 cup buttermilk
1 large egg
1 tablespoon powdered sugar

Steps:

  • Preheat oven to 325°F. Spray 8x8x2-inch metal baking pan with nonstick vegetable oil spray. Sift all purpose flour, ground cinnamon, ground ginger, baking soda and ground nutmeg into medium bowl. Combine molasses, 1/2 cup sugar, melted butter, buttermilk and large egg in large bowl; whisk to blend. Whisk in dry ingredients. Pour batter into prepared baking pan.
  • Bake cake until tester inserted into center comes out clean, about 25 minutes. Cool cake completely in pan on rack. Sift powdered sugar over cake. Cut cake into 16 squares.

A very simple recipe for a simple chocolate snack cake. My kids (and I!) love these straight out of the fridge with a cold glass of milk! Edited to add-some reviewers have found these dry--I'm not sure if keeping them in the fridge keeps them moist, but that may be the trick as I've never had that problem (mine always stay in the fridge).

1 3/4 cups flour
3/4 cup cocoa
1 cup sugar
1 teaspoon baking soda
1/4 teaspoon salt
1 cup buttermilk
1/2 cup butter, melted
2 teaspoons vanilla

Steps:

  • Preheat oven to 350°. Grease an 8-inch baking pan.
  • Combine flour, cocoa, sugar, baking soda and salt. Stir in buttermilk, melted butter and vanilla until just combined.
  • Scrape into prepared pan and bake for approx 35 minutes.
  • Let cake cool in pan for about 10 minutes and then invert onto wire rack (turn right side up) for it to cool completely.
  • Cut into large squares and wrap tightly in plastic wrap (or tightly sealed container).
  • Store in refrigerator.

1/2 teaspoon salt
1/2 cup buttermilk

1/2 cup all-bran cereal
1 large egg (or use 1/4 cup egg substitute)
1 cup buttermilk (use low fat if desired)
1/2 cup sugar (can use more sugar, or use sweetener equivalent to 1/2 cup)
1/4 cup applesauce
3/4 cup whole wheat flour
1/2 cup all-purpose white flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup bran buds (Kellogg's All Bran cereal preferred) or 1 cup 100% all-bran cereal (Kellogg's All Bran cereal preferred)

Steps:

  • Set oven to 350°F.
  • Grease an 8 x 8-inch baking pan.
  • In a small heat-proof bowl mix together the 1/2 cup All Bran cereal with boiling water; let stand until softened.
  • In a large bowl mix/whisk egg (or egg substitute) buttermilk, sugar and applesauce; add in the softened bran/water mixture to the egg mixture.
  • In a bowl mix together both flours, baking soda and salt; add to the wet mixture; mix only just until combined.

1 lb powdered sugar
