1/2 lb large uncooked shrimp, shelled,deveined
1 tablespoon olive oil
6 cloves garlic, chopped
1 bunch green onion, chopped
5 ounces packages ready-to use fresh spinach leaves, stemmed if desired
1 bunch basil leaves, coarsely chopped
2 tablespoons grated romano cheese
1/2 teaspoon hot pepper sauce (such as Tabasco)
1/2 teaspoon white wine vinegar
3 tablespoons Pernod (or other anise-flavored liqueur)

Steps:

  • Preheat oven to 450°F degrees.
  • Lightly oil 9-inch glass pie plate.
  • Arrange shrimp in prepared plate.
  • Season shrimp lightly with salt and pepper.
  • Heat oil in heavy medium skillet over medium-high heat.
  • Add garlic and green onions and saute until softened, about 2 minutes.
  • Add spinach to skillet.
  • Cover and cook until spinach is tender and wilted, stirring occasionally, about 4 minutes.
  • Mix in basil, cheese, hot pepper sauce and vinegar.
  • Season with salt and pepper.
  • Remove from heat; mix in Pernod.
  • Spoon spinach mixture evenly over shrimp.
  • Bake until shrimp are just cooked through, approximately 8 minutes.

BROILED BUTTERFLIED SHRIMP

Somewhere, I got the idea that Shrimp Scampi is supposed to be broiled, yet most recipes I found sauteed. So I made this last night and my husband loved it.

1 lb jumbo shrimp, thawed (if frozen)
2 garlic cloves, sliced thin
4 tablespoons butter
salt
cayenne pepper
1/8 cup Italian style breadcrumbs
1/8 cup panko breadcrumbs
1/8 cup parmesan cheese, grated
1/8 cup fresh parsley, chopped

Steps:

  • Preheat broiler. Peel, devein, and butterfly shrimps. Arrange butterflied shrimp in a shallow baking dish in a single layer. Season to taste with salt and cayenne pepper.
  • In a small skillet, melt the butter and saute garlic for 5 minutes or so. Do not allow to brown. Remove garlic. Pour about half evenly over shrimp.
  • Sprinkle arranged shrimp with both types of bread crumbs. Sprinkle with Parmesan cheese. Pour remainder of butter evenly over shrimp.
  • Broil about 3 to 5 minutes until shrimp or bread crumbs begin to brown and shrimp are opaque. Turn shrimps over and broil another 3 to 5 minutes until done.
  • Garnish with fresh chopped parsley.

  • Marinate for 30 minutes in refrigerator.
  • Preheat gas grill to medium heat.

BUTTERFLIED BAKED SHRIMP

2 cups fresh bread crumbs
16 extra large shrimp, peeled and deveined, tails left on
Freshly ground black pepper
Salt
2 tablespoons chopped fresh oregano leaves
1 tablespoon chopped fresh thyme leaves
2 tablespoons chopped fresh parsley leaves
2 tablespoons chopped fresh basil leaves
1 tablespoon chopped garlic
4 ounces butter, melted
4 cups arugula, cleaned
2 tablespoons extra-virgin olive oil
1/2 lemon, juiced
Lemon wedges, for garnish

Steps:

  • Preheat the oven to 400 degrees F.
  • Spread the bread crumbs evenly on a baking sheet and toast in the oven until golden brown, about 10 minutes. Watch them carefully as they burn very quickly. Remove from the oven and cool. Raise the oven to 500 degrees F.
  • Butterfly the shrimp by slicing from the tail to the front on the top of the shrimp, where the vein was. Slice as deep as possible without cutting all the way through. Turn the shrimp over and make 3 small shallow slits horizontally across the shrimp, being careful not to cut all the way through. These slits will prevent the shrimp from curling during cooking. Season with salt and pepper and set aside.
  • Mix together the oregano, thyme, parsley, basil and garlic. Add the garlic herb mixture to the bread crumbs and mix well. Season with salt and pepper.
  • Brush a large ovenproof skillet with some of the melted butter, coating the bottom well. Dip the shrimp in the butter, opened side down, and then dredge in the bread crumbs, pressing so they stick. Place the shrimp, bread crumb side up, in the skillet in 1 layer.
  • When all of the shrimp are in the pan, drizzle the top with a little more of the melted butter. Bake for about 5 minutes, or until the shrimp are just cooked through and the bread crumbs are golden brown.
  • Toss the arugula with the olive oil and lemon juice and season with salt and pepper. Divide the arugula among 4 plates. Place 4 shrimp around each pile of arugula. Drizzle with more butter, if desired, and serve with lemon wedges.

Every November, our family and friends gather at our home for our annual "Oyster Party". My sons and some of their friends shuck between 300 and 400 oysters throughout the day and I prep, bake and serve them to our guests. Forks are spread out over the platter and everyone just starts grabbing the baked oysters off the tray. The most important part of this recipe is the Hollandaise Sauce that is put on the top of the Rockefeller-this just makes it taste better than any others out there.-Deb Holt, Baltimore, Maryland

30 fresh oysters in the shell, washed
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1/2 pound bacon strips, cooked and crumbled
1/3 cup finely shredded cheddar cheese
1 envelope hollandaise sauce mix
4 pounds rock salt

Steps:

  • Shuck oysters, reserving bottom shell; set aside. Spread rock salt into two ungreased 15x10x1-in. baking pans. Lightly press the oyster shells down into the salt. Place one oyster in each shell; top each with spinach, bacon and cheese., Bake, uncovered, at 400° for 14-16 minutes or until oysters are plump. Meanwhile, prepare hollandaise sauce according to package directions. Drizzle over oysters and serve immediately.
