HOMEMADE PEANUT BUTTER CHEWS
The peanut butter chews that were sold in school cafeterias. I make these for my kids all the time, and sometimes drizzle chocolate and butterscotch on top of the cookies. Rich, but excellent!

- In a large saucepan over medium heat, combine corn syrup and white sugar. Bring to a boil, boil for one minute, and remove from heat. Stir in peanut butter until well blended. Mix in cereal until evenly coated. Drop by spoonfuls onto waxed paper.
- In a glass bowl in the microwave, or using a double boiler, melt chocolate chips and butterscotch chips, stirring frequently until smooth. Drizzle on the top of the cookies.

- Heat oven to 375°F. Grease 13x9-inch pan with butter.
- In medium bowl, mix flour, granulated sugar and butter. Press mixture in bottom of pan. Bake 12 to 14 minutes or until light brown.
- Meanwhile, in large bowl, beat egg yolks, brown sugar, vanilla and salt with electric mixer. Stir in pecans and coconut. In small bowl, beat egg whites with electric mixer until foamy. Fold into egg yolk mixture.
- Remove partially baked crust from oven. Spread filling evenly over crust. Reduce oven temperature to 350°F.
- Bake 25 to 30 minutes or until deep golden brown and center is set. Sprinkle powdered sugar over bars. Cool on cooling rack. Cut into 6 rows by 6 rows.

Have been making these since I was 15. Served in our school cafeteria for dessert and no one ever wanted to trade. They are requested for every gathering. I even sell them at our local bar and batches of them to friends who hate to cook.

Steps:
- 1. Put sugar, corn syrup, peanut butter, and butter in large non-stick pot. Bring to boil and constantly stir so it does not burn to bottom of pan. Use med to med.low heat.
- 2. Once it starts to bubble on top, take off hot burner to a cool burner. Slowly add in corn flakes stirring in between so they all get covered. If a little to syrupy, add in the 7th cup of corn flakes.
- 3. Let set a couple of minutes to cool for handling..With tablespoon form balls and put on wax paper on cookie sheet and let cool..If you want them to set faster, stick them in fridge for awhile but do not keep them in there, they will get to hard to eat. Makes approx. 35 balls depending on the size you make them. Store them in closed container wax paper in between layers.

- Mix, creaming well.
- Sift together flour, baking powder and salt.

- Preheat oven to 350 degrees F.
- In a mixing bowl, combine butter, sugars, peanut butter and vanilla. Cream until blended.
- Add one egg at a time, beating until blended.
- Sift flour, baking powder and salt together. Add rolled oats (or coconut) and mix.
- Add dry ingredients to creamed sugar butter mixture until blended.
- Spread batter into a greased 12 x 18 sheet pan (Also called a half sheet or 2/3 sheet pan available from restaurant supply houses.).
- Bake for 20 - 25 minutes. Do not overbake. Cookies should have a chewy consistency.
- Remove and cool for 15-20 minutes while you make icing.

If you attended San Diego City Schools from the 70's through the 90's chances are you're familiar with these bars. I've searched for this recipe for many years and now that I've found it I'm sharing it with the WORLD! I often make these for parties and fundraisers and they're the first to go.

- 1. Grease half sheet jelly roll pan / cookie sheet (with sides) and preheat oven to 350F. Mix butter, sugars and peanut butter until smooth and creamy. Add eggs and vanilla and continue to mix until well incorporated.
- 2. In a separate bowl sift flour, salt, and baking soda. Gradually combine with butter mixture ensuring it is mixed well.
- 3. Fold in the oats.
- 4. Press dough into pan and bake for 25 minutes or until the edges are golden brown. Do not over bake.
- 5. While waiting, prepare the frosting. For either the glaze or frosting, toss all the ingredients into one bowl and mix well. Set it aside while the chews are baking. Once the chews are done baking allow to cool for ten minutes then glaze/frost while warm. Cut into bars when completely cooled.
- 6. Yields approximately 24-32 bars. Stays well for up to a week refrigerated in a tightly sealed container.
MUM'S PEANUT BUTTER RICE KRISPIE CHEWS
The kids absolutely love them :) Option: These may be frosted or drizzled with melted chocolate.

- 1. Measure out the 5 & 1/2 cups of corn flakes into a large bowl and set aside. Get two muffin pans and line with cupcake papers.
- 2. In the microwave, in large glass measuring cup or small bowl, melt the 2/3 cup of brown sugar and white corn syrup. Set timer for a minute, stir and repeat until the ingredients are well incorporated. (This can all be done on the stove top in a pot, same directions apply.)
- 3. Remove from the microwave and stir in the 1 cup of peanut butter until it melts and is well incorporated and smooth.
- 4. Pour the peanut butter mixture over the cornflakes. Stir until the corn flakes are well coated.
- 5. Using an ice cream scoop, scoop the corn flake mixture into the muffin tins. Let cool and enjoy. You should get between 20-22 "chews". These do not get hard, they "set" and can be eaten within the hour.
- 6. If you want the "chews" dryer, add more cornflakes, if you want them softer, lessen the cornflakes. The amounts given here makes them "just right". Enjoy!!

These were a favorite of my DS and DD when they were kids. It is from a cookbook I bought in 1958. You can make the bottom layer thicker by 1 1/2 to double the ingredients but allow a little longer cook time.

- 1. Combine shortening, sugar, peanut butter, eggs and vanilla. Blend at low speed.

- Preheat oven to 350°F Line a 9 x 13-inch baking pan with nonstick foil.
- Combine cake mix, 1 egg, and butter with a large spatula or wooden spoon. This will give your arm a workout, but if you keep folding it over and pressing to mix, it will eventually come together into a dough that resembles children's play-dough.
- Using your fingers, press dough evenly into the bottom of the prepared pan. Sprinkle with the white chocolate chips and gently press a bit into the dough so they do not roll around.
- In a medium bowl, beat cream cheese and 2 eggs for 30 seconds. Stir in sugar just until combined, then beat on medium speed for 3 minutes until smooth.
- Spoon the cream cheese mixture evenly over the bottom layer. Sprinkle with graham cracker crumbs.
- Bake 30 to 35 minutes, until center is set. Remove from oven and let cool on rack to room temperature. Slice cookie bars into squares to serve.

- 2. Combine cream cheese, 2 eggs and powdered sugar and beat at least 3 minutes or until smooth. Spread over cake batter.
- 3. Bake at 350° for 45 minutes. Cool and slice into squares before serving.
