The Best Chicken Salad image

Gently poaching chicken breasts in an aromatic broth yields tender morsels for folding into a bright and herby homemade dressing. Serve it solo on a bed of lettuce with sliced tomatoes or in half an avocado. It also makes a killer chicken club sandwich topped with crisp bacon and other sandwich fixings.

1 cup prepared or homemade mayonnaise
2 teaspoons strained freshly squeezed lemon juice
1 tablespoon Dijon mustard
Kosher salt and freshly ground black pepper
4 cups diced poached chicken, recipe follows
1 stalk celery, cut into 1/4-inch dice
2 tablespoons shallot, cut into 1/4-inch dice
2 tablespoons finely chopped fresh dill
2 tablespoons finely chopped parsley
Sliced chives, for garnish
10 sprigs parsley
2 sprigs thyme
1 small onion, halved
1 small carrot, halved
1 stalk celery, halved
3 pounds bone-in, skin-on chicken breast halves, fat trimmed
5 to 6 cups chicken broth, homemade or low-sodium store bought

Steps:

  • Whisk together the mayonnaise, lemon juice, mustard, 1 tablespoon salt and pepper to taste in a small bowl.
  • Toss together the chicken, celery, shallot, dill and parsley in a large bowl.
  • Add the dressing to the chicken and mix gently until combined. Refrigerate at least 1 hour and up to overnight to meld flavors. Garnish with chives.
  • Put the parsley, thyme, onion, carrot, celery and chicken breasts in a medium saucepan. Cover with the broth and bring just to a boil. Reduce the heat to very low and cover. Poach the chicken until firm to the touch, about 20 minutes. Remove the pan from the heat, uncover and cool the chicken in the liquid for 30 minutes.
  • Transfer the chicken to a cutting board and reserve the liquid. Bone and skin the chicken and roughly chop the meat into about 1/2-inch pieces. Discard the bones and skin.
  • Strain the broth and store, covered, in the refrigerator for 3 days or freeze for later use. Remove any fat from the surface of the broth before using.

This is a great dinner salad for a warm summer day. My mother found this recipe and introduced me to it. I love the salad, even though it is a bit time consuming to make. With a hard roll, this is a complete meal.

1 head iceberg lettuce, medium size, shredded
1 cup chopped celery
1/4 cup chopped cilantro
1 1/4 cups chow mein noodles
1/4 cup vegetable oil
1 3/4 cups boneless chicken breasts, skinned and sliced into 2-inch strips
3/4 lb sliced water chestnuts, drained
1 cup snow peas, cut into 3 pieces
1/4 cup sliced almonds
10 radishes, thinly sliced
2 green onions, finely chopped
3 tablespoons white wine
2 tablespoons unsweetened pineapple juice
2 tablespoons lemon juice
2 tablespoons brown sugar
1 1/4 tablespoons curry powder
1 pinch garlic powder
2 cups mayonnaise

Steps:

  • Combine the lettuce, celery, and cilantro in a large bowl. Spread noodles over the top.
  • Heat oil in large skillet over medium high heat, add chicken and stir until lightly browned and no longer pink. Add water chestnuts and peas and stir 1 minute. Remove with slotted spoon and arrange over salad.
  • Garnish with green onions,almonds, and radishes.
  • Add about 1 cup to 1-1/2 cups of dressing and toss well. Pass the remaining dressing separately.
  • TO MAKE DRESSING: Combine all ingredients, except mayonnaise, in a bowl and stir until sugar dissolves. Add mayonnaise and blend until smooth. Makes 2-1/4 cups of dressing.

The Los Angeles Times published this recipe in 1979, back when chinese chicken salads were all the rage. I still make this recipe but usually add some manderin orange segements on top.

1 (6 3/4 ounce) package rice sticks
2 cups oil (for deep frying)
1 head lettuce, chopped
3 cups chicken, cooked and shredded
6 tablespoons almonds, toasted and sliced
2 cups mayonnaise
1 1/4 teaspoons Worcestershire sauce
2 teaspoons soy sauce
2 teaspoons oil
1 tablespoon prepared mustard
1 teaspoon prepared mustard
1/8 teaspoon lemon juice

Steps:

  • To prepare the dressing, mix all the dressing ingredients in a small bowl, mix well; makes about 2 cups.
  • To prepare the salad, deep fry the rice sticks, a small handful at a time for 1 to 2 minutes or until puffed, drain.
  • Place about one cup of chopped lettuce in each of 6 bowls.
  • Top with 1/2 cup per serving of the chicken and 1 tablespoon of nuts.
  • Spoon a tablespoon (or to taste) of dressing over the salad.
  • Top with a handful of the puffy rick sticks.
  • Serve.
