BLUE CHEESE STUFFED BUFFALO CHICKEN BURGER



Blue Cheese Stuffed Buffalo Chicken Burger image

Number Of Ingredients 8

1 and 1/2 pounds lean, ground chicken
3 large green onions, white and light green part only, roughly chopped
1 fat clove garlic, minced or pressed
2 teaspoons vegetable oil
Prepared Ranch dressing
Salt
Bottled Buffalo sauce (whichever brand you prefer)
1/2 cup crumbled blue cheese

Steps:

  • 1) Mix the ground chicken with green onions and garlic. Cover with foil and refrigerate for at least 1 hour, but up to 24 hours.
  • 2) When you are ready to eat: Preheat the oven to 400 degrees F. Wet your hands with cool water and gather 1/8 of the chicken mixture. Shape it into a sort of nest and place one heaping tablespoon of blue cheese into the center, then cover with 1/8 more chicken and shape into a patty. Repeat with the remaining chicken. You will have 4 burgers. They can be placed back into the fridge for up to a day (in which case, turn the oven off), or cook immediately. Drizzle a scant amount of veg oil over both sides of the burgers and a light sprinkle of salt then line a baking tray with foil and bake for 15 minutes, douse both sides with Buffalo sauce and flip the burgers. Continue to bake for 15 more minutes. Remove from the oven and allow the burgers to rest for 5-10 minutes before serving.
  • Serve on soft hamburger buns with shredded lettuce and Ranch dressing. Makes 4 burgers

1/2 cup sliced carrots
1 pound ground white-meat chicken
2 egg whites, lightly beaten
1 celery stalk, roughly chopped
1/2 cup panko breadcrumbs
1/4 cup blue cheese, plus more for garnish (optional)
1 teaspoon cornstarch
1/4 cup hot sauce (such as Tabasco Buffalo Style)
Vegetable oil cooking spray
4 large kaiser rolls, split
Iceberg lettuce (optional)
Carrot and celery sticks (optional)
Light blue cheese dressing (optional)

Steps:

  • In a microwave-safe bowl, combine carrot slices with 2 tablespoons water; microwave on high, stirring every minute, until very tender, about 3 minutes. Drain and let cool; mash carrots. Add chicken, egg whites, celery, breadcrumbs and cheese; mix to combine. Form chicken mixture into four 3/4-inch-thick patties. In a second bowl, stir cornstarch into hot sauce until dissolved; set aside. Coat a grill rack or grill pan with cooking spray. Grill patties over medium-high heat for 6 minutes; flip and grill 4 minutes more. Brush patties with hot sauce mixture; grill until internal temperature reaches 165°F, about 2 minutes. Place 1 burger on bottom of each roll. Garnish with cheese and lettuce, if desired. Top with other half of roll. Serve with carrot and celery sticks and blue cheese dressing for dipping, if desired.

10 ancho chilis, roasted at 350 for 4 to 5 minutes, seeded and ground to a powder, about 1/2 to 3/4 cup
4 tablespoons ground black pepper
3 tablespoons ground coriander seed
3 tablespoons kosher salt
2 tablespoons cumin powder
1 tablespoons sugar
1/4 cup extra virgin olive oil
8 ounce. ground buffalo
6 tomatillos out of husk
2 small red onions, peeled
2 seeded jalapenos
2 ripe Haas avocados, peeled, cubed
1 medium chopped red onion
2jalapenos, seeded and diced
Pinch salt
Pepper to taste
Juice of 3 limes, 1 lemon, 1/2 orange
4 large Idaho potatoes, peeled, sliced thin in processor or on a mandolin

Steps:

  • For the Rub and the Burger: Mix all dry ingredients. Reserve 2 tablespoons for the potato chips. Add olive oil to the remainder. Makes rub for 10 burgers. Can refrigerate for prolonged period of time. Shape ground buffalo into a patty. Rub burger with rub and let marinate for 30 minutes to 1 hour. Grill to desired doneness.
  • For the Salsa: Preheat oven to 400 degrees. Roast the tomatillos in greased pyrex dish for about 15 to 20 minutes. It's okay if they char.Chop all ingredients in processor with 1/4 cup, combined, lemon and lime juice, bunch of fresh cilantro and salt and pepper to taste.
  • For the Avocado Relish: Combine all ingredients and refrigerate until serving time.
  • For the Chips: Fry in peanut oil at 375 degrees until golden brown and crisp. Drain on paper towels pat. Add reserved 2 tablespoons dry rub and 2 tablespoons kosher salt. Season chips with salted rub.

About 1/3-ounce ground black pepper
9 ounces bread crumbs

Steps:

  • Preheat grill to medium-high heat.
  • In a large stainless steel bowl, combine the ground buffalo, salt, pepper and bread crumbs. Mix by gloved hand for approximately 20 seconds, until seasoning is evenly distributed. Pat into 6-ounce patties, and grill for approximately 5 minutes. Place burgers on buns with desired toppings and serve.

1 pound buffalo meat, finely ground
1 cup BBQ sauce (Mesa) or your favorite brand
Salt and pepper
8 slices rye bread
2 tablespoons olive oil
1 small onion, coarsely chopped
2 cloves garlic, coarsely chopped
1 mango, peeled and coarsely chopped
1/4 teaspoon ground cinnamon
1/4 teaspoon allspice
Pinch of ground cloves
1 habanero pepper, coarsely chopped
1/2 cup red wine vinegar
1 teaspoon honey
Salt and freshly ground pepper
1/2 large head red cabbage, finely shredded, divided
1 cup rice wine vinegar
2 tablespoons olive oil
1 tablespoon caraway seeds
Salt and freshly ground pepper
8 slices rye bread

Steps:

  • For the burgers: Divide the meat into fourths and shape into burgers. Brush on both sides with the bbq sauce and season with salt and pepper to taste. Grill for 3 to 4 minutes on each side.
  • For the ketchup: Use side burner or grill top. Heat oil in a medium saucepan over medium high heat. Add onions and garlic and cook until soft. Add mango and cook for 5 minutes, or until soft. Add cinnamon, allspice, cloves and habanero and cook an additional 2 minutes. Place the mango mixture in a food processor and add the vinegar and honey. Process until smooth. Season with salt and pepper to taste. Serve cold or at room temperature.
  • For the slaw: Place vinegar and oil in a small saucepan and bring to a boil Place 3/4 of the cabbage in a large bowl and add the hot vinegar mixture and stir well. Add the caraway seed and season with salt and pepper to taste. Mix together all ingredients and season with salt and pepper to taste. Let sit at room temperature for 1 hour, until wilted. Just before serving, add the remaining raw cabbage.

Fill a large pot with lightly salted water to a rolling boil over high heat.Once the water is boiling,stir in the shell pasta,and return to a boil.Cook the pasta uncovered,stirring occasionally,until the pasta has cooked through,but is still firm to the bite,about 13 minutes.Drain well in a colander set in the sink.
  • 3. Heat a large skillet over medium-high heat.Cook and stir ground beef and onion until browned.Drain off excess grease.Stir in wing sauce,oregano,crushed red pepper flakes,garlic powder,seasoned pepper,onion powder,cooked pasta and white american cheese.Pour into the prepared baking dish,spoon with blue cheese dressing over beef/pasta mixture and cover with aluminum foil.

Steps:

  • 1. Mix buffalo, salt, pepper, and garlic powder. 2. Form 4 balls. Press a cavity into the center of each ball using your thumb. 3. Add 1 TBSP of blue cheese into the cavities and seal meat around cheese, forming 4 patties. 4. Preheat your skillet at medium heat for 1-2 minutes. 5. Add the 4 patties and sliced onion to the skillet. Cover and cook 6. Turn burgers carefully. Make sure the onion is not between the burger and skillet. 7. We're fortunate to live near a buffalo ranch but if you don't & can't find it at the supermarket, a butcher may be able to order it for you - or you can substitute with all beef. This recipe comes from the Rebel House restaurant in Toronto which is known around town for its excellent buffalo burger.

1 onion, diced
1 egg
2 teaspoons rosemary or 2 teaspoons oregano (or 1/2 tsp/2 mL dried)
2 teaspoons Dijon mustard
2 teaspoons prepared horseradish
1/2 teaspoon salt
1/2 teaspoon pepper
8 ounces medium ground beef
8 ounces ground buffalo meat
4 kaiser rolls or 4 hamburger buns
4 leaves lettuce
1 tomatoes, sliced
1/2 small red onion, thinly sliced

Steps:

  • In skillet, heat oil over medium heat; fry diced onion, stirring occasionally, until softened, about 5 minutes.
  • Let cool.
  • In large bowl, beat egg.
  • Stir in thyme, mustard, horseradish, salt and pepper; mix in onion, beef and buffalo.
  • Shape into four 1/2-inch (1 cm) thick patties.
  • (Make-ahead: Cover and refrigerate for up to 6 hours. Or layer between waxed paper in airtight container and freeze for up to 1 month; thaw in refrigerator.) Place patties on greased grill over medium-high heat; close lid and cook, turning once, until no longer pink inside, about 10 minutes.

1 yellow pepper, seeded and diced
1 tablespoon chopped cilantro
1 jalapeno pepper, seeded and diced
Salt and pepper
1 teaspoon honey
2 teaspoons rice wine vinegar
6 large portobello mushrooms, stems removed
1/2 teaspoon peanut oil
6 (8-ounce) buffalo burgers

Steps:

  • Preheat grill. Mix tomatoes, onions, peppers, cilantro, jalapeno, and 1/4 teaspoon salt in a bowl. Allow to sit for 1/2 hour. Pour off juice and add honey and vinegar. Refrigerate 1/2 hour.
  • Rub mushrooms with oil and season with salt and pepper. Grill on both sides until done. Season burgers and grill on both sides until medium rare.

½ cup crumbled blue cheese
8 whole wheat hamburger buns, split and toasted
½ cup mayonnaise
8 leaves Bibb lettuce
½ red onion, cut in 1/2-inch slices
8 slices tomato

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Season the ground buffalo with salt and pepper; form into 8 balls. Press a cavity in each ball with your thumb pressing halfway into each ball; place a tablespoon of blue cheese into the hole and seal the meat around the cheese. Press each ball into a patty shape.
  • Cook the burgers on the preheated grill until cooked to your desired degree of doneness, 4 to 6 minutes per side for well done. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C). Spread the toasted buns with mayonnaise. Place a burger patty onto each bun bottom, then place a lettuce leaf, onion rings, and tomato slice onto each sandwich. Top with the remaining buns to serve.
