12 ounces buckwheat noodles, cooked according to package directions, rinsed under cold water and drained
1 carrot, peeled and grated on box grater

3 green onions, thinly sliced
1/4 cup chopped fresh cilantro leaves

Steps:

  • Whisk together the vinegar, sugar, ginger, honey, tamari, sesame oil, and chili sauce in a large bowl until combined. Slowly whisk in the canola oil until the dressing is emulsified.

4 bundles buckwheat soba noodles
1 pound green cabbage, shredded
Ponzu Vinaigrette, recipe follows
One 2-pound fillet hamachi (Japanese yellowtail), sashimi slices
1 Japanese cucumber, sliced
Ikura (salmon roe), pickled ginger and kaiware sprouts (daikon radish sprouts), for garnish
1 cup canola oil
1/2 cup ponzu
1/4 cup lemon juice
1 tablespoon sugar
1 teaspoon Dijon mustard
1/4 teaspoon salt

Steps:

  • Boil the soba noodles in boiling water until cooked, then transfer to ice water and drain. Set aside.
  • Lay a base of shredded cabbage in 4 serving dishes. Spread a bundle of soba noodles over cabbage. Drizzle Vinaigrette over noodles. Alternate 4 to 5 slices of hamachi sashimi with cucumber and fan out on noodles. Drizzle more Vinaigrette over sashimi. Garnish with ikura, pickled ginger and kaiware sprouts. Serve cold.
  • Blend the oil, ponzu, lemon juice, sugar, mustard and salt in a small bowl, then reserve.

1 Medium Zucchini

Steps:

  • Cooking Buckwheat : Boil water in a sauce pan. Roast the buckwheat over until brownish, let it cool before transferring in to boiling water. Cook for approximately 5 mins or tender /cooked.
  • Chop all vegetables.
  • In a different sauce pan, heat the oil and add in chopped garlic and onion followed by chilli.
  • Add in chopped Zucchini, pepper and carrot. Stir well. Add salt and pepper to taste.
  • Stir in cooked buckwheat.

  • Bring 1 cup water to a boil in a saucepan. Add buckwheat; stir once. Reduce heat and simmer until buckwheat is tender yet firm to the bite, about 8 minutes.

2 ounces pea shoots (watercress or mizuna can be substituted)
1/2 mango, pitted, peeled, and cut into 1/2-inch dice
3 tablespoons mango-lime glaze, from Mango-and-Lime-Glazed Chicken recipe
3 tablespoons peanut butter, without sugar or salt
1/3 cup rice-wine vinegar
2 teaspoons soy sauce
1 teaspoon Asian sesame oil
3/4 teaspoon salt
2 tablespoons roasted unsalted peanuts, coarsely chopped

Steps:

  • Cook the soba noodles until al dente, about 7 minutes. Drain in a colander, and rinse with cold water. Transfer to a large bowl.

Fresh lentil sprouts (optional)
1-2 tbsp clean gluten-free jerk seasoning from a jar (not a dry rub)*
Creamy Dairy-Free, Soy-Free Ranch Dressing (homemade is best)
2 cups cooked chickpeas (try your best to soak them overnight and prepare them yourself instead of eating the aluminum-soaked ones)
1 1/2 cups cooked buckwheat
2 cups sweet potato, diced and steamed
3-4 large kale leaves, chopped and steamed for 2 minutes, until they wilt.

Steps:

  • Prepare sprouted buckwheat and chickpeas for this recipe and then cook them. Place together in a large glass bowl when done. Diced sweet potato and steam for 15-20 minutes until soft, a fork should go in easily, but not so much that they are mushy. Once cooked, toss in the bowl with your buckwheat and chickpeas. Add the chopped kale to the steamer for 5 minutes, or until soft. Add your steamed kale. Stir well. Now, stir in the jerk seasoning. Start with less and slowly add more as you go, and remember that the ranch dressing is very cooling when paired with the spice. Lightly steam a sprouted grain tortilla for about 2-5 minutes and lay flat on a large plate. Spoon in some of your jerk veggies and legumes. Add some lentil sprouts and mixed greens. ¼ teaspoon ground paprika
¼ teaspoon ground rainbow peppercorns

¼ teaspoon crushed rose petals
4 ¼ cups water
¼ cup buckwheat groats, rinsed

1 ½ ounces baby spinach leaves
½ cup shredded cooked beets

2 tablespoons finely chopped green onions
1 teaspoon apple cider vinegar

Steps:

  • Place lentils into a bowl and cover with several inches of cool water; let stand at least 2 hours. Drain and rinse.
  • Mix olive oil, paprika, pepper, turmeric, red pepper flakes, mace, coriander, and rose petals together in a bowl.
  • Combine lentils and 4 1/4 cups water in a pot and bring to a boil; cook until lentils are tender yet firm to the bite, 15 to 18 minutes. Add buckwheat groats and return water to a boil; add salt. Cook lentils and buckwheat for 10 minutes; remove from heat, cover pot, and let sit until all water is absorbed, about 5 minutes.

2 cucumbers, seeded and sliced
4 scallion/green onion stalks, sliced thin
1/4 cup cilantro washed whole leaves
1 package Firm Tofu
Sauce Ingredients
4 cloves garlic
2 tablespoons of fresh ginger coarsely chopped
6 tablespoons rice wine vinegar
4 tablespoons tamari (or soy sauce)
4 teaspoons sesame oil
2 tablespoons vegetable oil
2 teaspoons hot chili oil

Steps:

  • Bring one gallon water in a large pot to a boil and add noodles. Add one cup cold water and bring to another boil. Once the water boils, turn off the burner, let sit 5 minutes and then drain running cold water over the noodles to cool off quickly and prevent further cooking. Keep running cold water over the noodles until they are cold. Transfer the noodles to a large bowl and add cucumbers, scallions and cilantro. Prepare sauce as follows: In a food processor, combine first 4 ingredients of the sauce and blend until mixture is well mixed and almost smooth. Transfer to a jar/container with lid. Add the remaining ingredients and shake until well mixed. Add to above noodle mixture and toss and place portions on plates. Cut tofu in one inch squares and fry in a non-stick pan with 2 tablespoons of each: vegetable oil and sesame oil. Serve tofu hot atop the cold buckwheat noodle salad on individual plates. For non-tofu eaters, think of substituting large jumbo prawns.

Steps:

  • Bring the water to boil in a medium saucepan. Add the salt and rinsed buckwheat groats. Bring to a boil; reduce heat and simmer until the groats have almost tripled in size, about 12 minutes. Remove from heat and let sit, covered, for 5 minutes.

2 trout fillets
3 tbsp olive oil
pinch of chilli flakes
½ small pack parsley
1 lemon , halved
150g buckwheat
1 bay leaf
1 small red onion , finely sliced
100g asparagus , woody stalks removed
½ small pack dill , leaves picked
½ small pack tarragon , leaves picked
50g watercress
1 tbsp crème fraîche or natural yogurt
½ tsp honey
1 tbsp pumpkin seeds , toasted

Steps:

  • Heat oven to 200C/180C fan/gas 6. Line a roasting tin with foil and put the trout fillets in it, skin-side down. Rub with a little olive oil, sprinkle over the chilli flakes, season and top with the parsley. Add half the lemon, then cover the tin with foil and roast for 12-15 mins until the fish is opaque and flaking. Remove from the oven and leave to rest.
  • Put the buckwheat in a pan, cover with 300ml water, add a pinch of salt and a bay leaf and bring to the boil. Skim off any scum, reduce the heat and simmer for 8 mins. Turn off the heat, cover with a lid or plate, and leave to puff up for another 10 mins.
  • Put the red onion in a large bowl with a pinch of salt and squeeze over the remaining lemon. Bring a pan of salted water to the boil and blanch the asparagus for 2-3 mins until a knife goes in easily. Drain and set aside.
  • Once the buckwheat has absorbed the water, tip into a sieve and rinse. While it's still warm, tip into the bowl with the onion, and add the herbs and watercress. Flake in the trout, then squeeze over the juice from the roasted lemon half and add 2 tbsp of the olive oil and season. Whisk the remaining olive oil with the crème fraîche, honey and more seasoning. Divide between plates, drizzle with the dressing and top with the asparagus and toasted pumpkin seeds.

  • Bring broth to a boil in a large pot over high heat. Stir in lentils, reduce heat to low and simmer until lentils are tender but firm, 15 to 20 minutes. Drain, but reserve liquid. Transfer lentils to a large bowl.
  • Heat olive oil over medium heat in a skillet. Cook onions until they are soft and translucent about 10 minutes, stirring occasionally.   • Cook the noodles according to the packet instructions. Drain well, then rinse under cold running water. Drain well and place in bowl
  • Put a frying pan over a high heat, add the Walnuts and dry fry for 2-3 mins, remove, leave to coole and roughly chop
  • Heat the oil in the same pan, add the mushrooms and saute for about 2-3 mins or until tender. Add them to the walnuts and some chopped spring onions and mix togeher.
  • To make the dressing - put the vinegar, sesame oil and vegetable oil in a small bowl and whisk until combined. Stir in the ginger and chilli, then drizzle over the noodles.

  • Bring broth to a boil in a large pot over high heat. Stir in lentils, reduce heat to low and simmer until lentils are tender but firm, 15 to 20 minutes. Drain, but reserve liquid. Transfer lentils to a large bowl.
  • Heat olive oil over medium heat in a skillet. Cook onions until they are soft and translucent about 10 minutes, stirring occasionally. Add celery, carrots, and garlic and continue cooking until carrots are just tender, about 10 minutes. Stir vegetables into lentils. Mix in the seasoning blend, marjoram, thyme, lemon thyme, cumin, crushed red pepper, and cardamom. Set aside.
  • Whisk egg in a bowl; add the buckwheat and stir until well coated with egg.
  • Heat 1 tablespoon of olive oil in a skillet over medium heat. Add buckwheat and egg mixture. Cook, stirring constantly, until buckwheat has absorbed the egg and appears dry, about 10 minutes. Stir in 2 cups of the reserved lentil liquid and bring to a boil over medium-high heat; reduce heat to low and simmer until liquid is absorbed and buckwheat is soft but maintains its shape and texture, 15 to 25 minutes.
  • Mix buckwheat into lentil mixture. Season with salt, pepper, 1 tablespoon olive oil, and vinegar. Stir and adjust seasonings. Serve warm, at room temperature, or chilled.
