1 pound bucatini
3 tablespoons extra-virgin olive oil, plus more for drizzling
4 cloves garlic, sliced
3 tablespoons chopped jarred Calabrian chile peppers
2 14-ounce cans cherry tomatoes
1/4 cup chopped fresh parsley

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Reserve 1/2 cup cooking water, then drain.
  • Meanwhile, heat the olive oil in a separate large pot over medium heat. Add the garlic and cook, stirring, until pale golden, about 3 minutes. Add 2 tablespoons chiles and cook, stirring, until the oil is red, about 1 minute. Stir in the cherry tomatoes and 1 cup water and simmer, stirring occasionally, until thickened, about 20 minutes.
  • Add the pasta, reserved cooking water, parsley and remaining 1 tablespoon chiles to the sauce. Cook, tossing, until well coated, about 1 minute; season with salt. Divide among bowls and drizzle with olive oil.

SICILIAN BUCATINI WITH SARDINES



Sicilian Bucatini with Sardines image

12 ounces bucatini
1/3 cup golden raisins
1/4 cup plus 2 teaspoons extra-virgin olive oil, plus more for drizzling
2 tablespoons breadcrumbs
1 1/2 teaspoons fennel seeds, chopped
Freshly ground pepper
1 small onion, thinly sliced
1 small bulb fennel, cored and thinly sliced, fronds chopped
1/4 cup pine nuts
Pinch of ground turmeric
1 4- to 5-ounce can boneless sardines in olive oil, drained

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs for al dente. Reserve 1 1/4 cups cooking water, then drain. Reserve the pot.
  • Meanwhile, put the raisins in a small bowl and add hot tap water to just cover; set aside. Mix 2 teaspoons olive oil with the breadcrumbs and 1/2 teaspoon fennel seeds; toast in a large skillet over medium heat, stirring, until golden, about 3 minutes. Transfer to a bowl and season with salt and pepper.
  • Wipe out the pasta pot and heat the remaining 1/4 cup olive oil over medium-high heat. Add the onion and fennel bulb and cook, stirring occasionally, until the fennel is tender and golden, about 8 minutes. Add the pine nuts, turmeric and remaining 1 teaspoon fennel seeds and cook, stirring, until the oil is golden and the nuts and spices are toasted, 1 to 2 minutes. Stir in the raisins and soaking water and 1/2 cup of the reserved cooking water; remove from the heat.
  • Add the pasta, sardines and fennel fronds to the pot. Return to medium-high heat and cook, stirring, until coated, adding the remaining cooking water as needed to loosen. Season with salt and pepper. Divide among bowls, drizzle with olive oil and top with the toasted breadcrumbs.

1 tablespoon extra-virgin olive oil
8 ounces sweet Italian turkey sausage (2 links), removed from casings
1 large onion, sliced (about 11/2 cups)
1 medium red bell pepper, sliced (about 1 1/2 cups)
1 medium yellow bell pepper, sliced (about 1 1/2 cups)
4 garlic cloves, thinly sliced
1/4 cup dry white wine
1 (28-ounce) can whole San Marzano tomatoes, crushed by hand
1 teaspoon dried oregano, preferably Sicilian on the branch
Kosher salt
Crushed red pepper flakes
1 pound bucatini
1/2 cup fresh Italian parsley leaves, chopped
1/2 cup freshly grated Grana Padano

Steps:

  • 1. Bring a large pot of salted water to a boil for pasta. In a large skillet over medium-high heat, add the olive oil. Add the sausage. Cook and crumble with a wooden spoon until the sausage is well browned, about 4 minutes. Reduce the heat to medium, add the onion, red bell pepper, and yellow bell pepper and cook until wilted, about 8 minutes, adding a splash of pasta water if the pan seems dry at any point.
  • 2. Add the garlic and cook until fragrant, about 1 minute. Pour in the wine and reduce, about 2 minutes. Add the tomatoes and 2 cups pasta water. Stir in the oregano and season with salt and red pepper flakes. Adjust the heat to maintain a simmer and cook until thick and flavorful, about 20 minutes.
  • 3. When the sauce is almost ready, add the bucatini to the boiling water. When the pasta is al dente, remove it with tongs and add directly to the sauce, reserving the pasta water. Add the parsley. Toss to coat the pasta in the sauce, adding a splash of pasta water if the pasta seems dry. Remove the skillet from the heat, sprinkle with the grated Grana Padano, toss, and serve.

1/4 cup extra-virgin olive oil, plus more for drizzling
1 sprig oregano, plus 1 tablespoon lightly packed fresh leaves
1/4 teaspoon red-pepper flakes, plus more for serving
2 1/2 teaspoons coarse salt
1 teaspoon finely grated lemon zest and 2 tablespoons fresh lemon juice, plus wedges for serving
4 cups finely chopped cauliflower florets (from 1 head)
3 tablespoons capers, preferably salt-packed, rinsed and drained
1/2 cup finely grated Parmesan (1 1/2 ounces), plus more for serving

Steps:

  • Heat broiler with rack 8 inches from heating element. Combine pasta, 5 cups water, 2 tablespoons oil, oregano sprig, pepper flakes, and 2 teaspoons salt in a large, straight-sided ovenproof skillet. Bring to a boil over medium-high heat; continue cooking, stirring occasionally, until sauce is mostly reduced and pasta is al dente, about 8 minutes. Remove from heat; stir in lemon zest and juice.
  • In a bowl, toss cauliflower with remaining 2 tablespoons oil and 1/2 teaspoon salt, capers, Parmesan, and oregano leaves. Sprinkle over pasta in skillet. Broil until cauliflower is golden in spots and pasta is heated through, about 5 minutes. Toss to combine. Serve with more cheese and pepper flakes, a drizzle of oil, and lemon wedges.
