Everyone needs an easy turkey meatloaf recipe. Emeril shared his ketchup-topped version with Martha. It comes from his book, " Emeril 20-40-60."

1 1/2 pounds ground turkey, preferably 85 percent lean/15 percent fat, or a mix of ground breast and thigh meat
2/3 cup chopped yellow onion
1/2 cup chopped red or green bell pepper
1/2 cup unseasoned dried bread crumbs
1/3 cup chopped celery
1 large egg, lightly beaten
1/2 cup ketchup
1 tablespoon minced garlic
1/2 teaspoon coarse salt
1/2 teaspoon freshly ground black pepper
1 tablespoon hot sauce
1 tablespoon Creole Seasoning

Steps:

  • Preheat oven to 375 degrees with rack positioned in center of oven.
  • Place turkey in a large bowl. Add onion, bell pepper, breadcrumbs, celery, egg, 1 tablespoon ketchup, garlic, Essence, salt, and pepper. Gently mix until ingredients are well combined. Transfer turkey mixture to a 1-pound loaf pan; form into a domed loaf shape.
  • Place remaining ketchup in a small bowl; stir in hot sauce. Spoon ketchup mixture evenly over meatloaf, spreading with the back of a spoon.
  • Bake until meatloaf is browned on top, cooked through, and an instant-read thermometer inserted in the center registers 165 degrees, 45 to 50 minutes.
  • Remove pan from oven and let meatloaf stand 5 minutes before serving.

If turkey's not your thing substitute 85-90% lean ground beef. You can also add in 1 1/2 lb new potatoes (that have been cut in half) to the pan with the meatloaf and sauce when you uncover the meatloaf to bake for the last 45 minutes.

2 lbs ground turkey (preferably dark meat only)
2 eggs
3 ounces tomato paste (1/2 of 1 small can, reserving rest for the sauce)
1 teaspoon salt
1/8-1/4 teaspoon cayenne pepper
1/2 cup plain breadcrumbs
1 small onion, finely chopped
2 garlic cloves, pressed
3 ounces tomato paste (from reserved 1/2 can)
1 small onion, roughly chopped
1 garlic clove, peeled
1 small red pepper, seeded, cored, and roughly chopped
1 cup water
1/2 teaspoon salt
15 grinds black pepper

Steps:

  • Meatloaf:
  • Preheat oven to 350 degrees F.
  • In a large mixing bowl, mix together all the ingredients for the meatloaf and work together completely by hand until all ingredients are evenly distributed and the mixture is uniform. Place meat mixture into a 9 by 13-inch baking dish and shape into a loaf about 11 inches long and 4 inches wide. It is important to form it like this so that it cooks evenly throughout. The loaf should be in the middle of the pan with room on both sides for the sauce to pool.
  • Red Pepper Sauce:
  • Place all ingredients in a blender or food processor and puree until smooth. Cover the meatloaf with the sauce and allow excess sauce to pool around the meatloaf. Cover pan with aluminum foil but avoid contact with meat loaf by leaving at least a couple inches of space between the top of the meatloaf and the foil. Bake for 45 minutes, then uncover and bake 45 minutes longer. Let rest for 15 minutes before cutting and serving.

CHEESE RAVIOLI WITH RED PEPPER SAUCE

2 cups all-purpose flour
2 teaspoons kosher salt
3 eggs
1 tablespoon olive oil
1 teaspoon unsalted butter
1 tablespoon finely chopped onion
1 cup Taleggio
1 cup ricotta
2 tablespoons grated Parmesan
Kosher salt and freshly ground black pepper
6 red peppers
2 tablespoons unsalted butter
2 teaspoons olive oil
1 clove garlic, minced
6 anchovy fillets
2 teaspoons lemon juice
11/2 teaspoons kosher salt
2 tablespoons chopped fresh Italian parsley leaves

Steps:

  • For the ravioli: Sift the flour and salt into a mound on a clean work surface. Hollow out a well in the center of the flour. Combine the eggs and olive oil in the hollow.Whisk the eggs with a fork, slowly drawing in some of the flour. Slowly draw in more flour, using your hands until a ball forms. Knead the dough for 10 minutes, adding flour so that the dough is smooth and elastic, not sticky or wet. Place the pasta dough in a lightly oiled bowl and cover with plastic wrap. Let rest for 30 minutes at room temperature.
  • In a small skillet, over medium heat melt the butter and saute the onions until tender. Combine the onions with the Taleggio, ricotta and Parmesan cheeses. Season, to taste, with salt and pepper.
  • Roll 1/4 of the pasta through a pasta rolling machine starting at the widest setting and working down to the narrowest setting, rolling the pasta through twice at each setting to work the dough. Lay the rolled pasta flat and trim the edges with a pastry cutter or knife.
  • Place 1 tablespoon of filling at 2-inch intervals along the length of the pasta, 1/2-inch from the edge. Spritz the pasta with water and fold in 2, lengthwise, over the filling. Press down on the pasta all around the mounds of filling to ensure a good seal. Cut the pasta into squares with the filling in the middle. Repeat with the rest of the pasta and filling. Cover the ravioli and set aside until ready to cook. Any remaining unrolled pasta can be stored, double wrapped, in refrigerator for 3 days or in the freezer for up to 1month.
  • For the sauce: Preheat the oven to 375 degrees F.
  • Place the peppers on a baking sheet and bake for 25 minutes. Place the hot peppers in a large bowl and cover with plastic wrap to steam. Peel the peppers and remove the stem and seeds. In a small skillet over medium heat, melt the butter and olive oil and saute the garlic for 15 seconds. Add the anchovies, reduce the heat to low and cook for 1 minute.
  • In a food processor, puree the roasted peppers, anchovy mixture, lemon juice and salt until smooth. Place in a pot and warm over medium heat.
  • Bring a large pot of salted water to a boil. Drop the ravioli into the boiling water and cook for 2 minutes. Drain ravioli and toss with warm sauce. Garnish with parsley.

4 ounces garlic-flavored croutons
1 cup beef broth
1 tablespoon vegetable oil
1 medium yellow onion, finely chopped
2 large eggs
2 1/2 tablespoons prepared pesto sauce
2 1/2 tablespoons pine nuts
1 1/2 teaspoons Worcestershire sauce
1 teaspoon seasoning salt
1/2 teaspoon pepper
2 lbs ground round
1 1/2 cups julienned fresh spinach leaves
1 garlic clove, peeled, halved
6 tablespoons butter (divided)
4 tablespoons flour
2 cups beef broth
salt and pepper
1 dash Worcestershire sauce
1 red bell pepper, cored, diced

Steps:

  • Meatloaf:.
  • Preheat oven to 350 degrees.
  • Finely crush croutons and combine with broth in small bowl. Let stand 10 minutes.
  • Heat oil in skillet. Add onions and cook over medium heat 8 to 10 minutes or until soft. Set aside.
  • In large bowl, beat eggs. Mix in pesto, pine nuts, Worcestershire sauce, seasoned salt and pepper.
  • Add meat, spinach, cooked onion and crouton mixture. Mix well.
  • Place mixture in bread pan and bake 1 hour and 15 minutes. Let stand 10 minutes before slicing.
  • Remove from pan and slice.
  • Serve topped with sauce.
  • Sauce:.
  • Rub saucepan with garlic. Discard clove.
  • Melt 4 tablespoons butter over low heat.
  • Add flour and stir until blended. Stir in beef broth.
  • Stirring constantly, cook sauce until it comes to boil. Add salt, pepper and Worcestershire sauce.
  • Remove from heat, stir.
  • Melt remaining 2 tablespoons butter in medium skillet.
  • Add bell pepper and cook over medium heat 5 minutes or until it begins to soften.
  • Add to reserved brown sauce.
  • Adjust seasonings as needed and heat through.

1 1/2 cups finely chopped onion
1 tablespoon minced garlic
1 teaspoon olive oil
1 medium carrot, cut into 1/8-inch dice
3/4 pound cremini mushrooms, trimmed and very finely chopped in a food processor
1 teaspoon salt
1/2 teaspoon black pepper
1 1/2 teaspoons Worcestershire sauce
1/3 cup finely chopped fresh parsley
1/4 cup plus 1 tablespoon ketchup
1 cup fine fresh bread crumbs (from 2 slices firm white sandwich bread)
1/3 cup 1% milk
1 whole large egg, lightly beaten
1 large egg white, lightly beaten
1 1/4 pound ground turkey (mix of dark and light meat)
Accompaniment:roasted red pepper tomato sauce or ketchup

a meat thermometer or an instant-read thermometer

Steps:

  • Preheat oven to 400°F.
  • Cook onion and garlic in oil in a 12-inch nonstick skillet over moderate heat, stirring, until onion is softened, about 2 minutes. Add carrot and cook, stirring, until softened, about 3 minutes. Add mushrooms, 1/2 teaspoon salt, and 1/4 teaspoon pepper and cook, stirring occasionally, until liquid mushrooms give off is evaporated and they are very tender, 10 to 15 minutes. Stir in Worcestershire sauce, parsley, and 3 tablespoons ketchup, then transfer vegetables to a large bowl and cool.
  • Stir together bread crumbs and milk in a small bowl and let stand 5 minutes. Stir in egg and egg white, then add to vegetables. Add turkey and remaining 1/2 teaspoon salt and 1/4 teaspoon pepper to vegetable mixture and mix well with your hands. (Mixture will be very moist.)
  • Form into a 9- by 5-inch oval loaf in a lightly oiled 13- by 9- by 2-inch metal baking pan and brush meatloaf evenly with remaining 2 tablespoons ketchup. Bake in middle of oven until thermometer inserted into meatloaf registers 170°F, 50 to 55 minutes.
  • Let meatloaf stand 5 minutes before serving.
