CREAMY BRUSSELS SPROUTS BAKE

Steps:
- In a small bowl, beat cream cheese and sour cream until smooth; set aside. In a large skillet, saute mushrooms and onion in butter until tender. Stir in brussels sprouts. Remove from the heat; stir in cream cheese mixture. , Spoon into a greased shallow 2-qt. baking dish. Cover and bake at 350° for 25-30 minutes or until bubbly. Uncover; sprinkle with cheddar cheese. Bake 5 minutes longer or until cheese is melted.

A tasty mixture of brussels sprouts and cheddar cheese that goes great with chicken and is quick and easy to make.

- Preheat oven to 350 degrees F (175 degrees C).
- Bring water to boil in a medium saucepan. Place frozen brussels sprouts in the water, and return to boil. Reduce heat, and simmer 6 to 7 minutes, until tender; drain.
- In a medium bowl, mix brussels sprouts with butter, cream of mushroom soup, eggs, Cheddar cheese, and 1/3 cup bread crumbs. Transfer to a medium baking dish, and top with remaining bread crumbs.
- Cover, and bake 25 minutes in the preheated oven, until bubbly. Uncover, and continue baking 5 minutes, until lightly browned.

CHEESY BRUSSELS SPROUTS BAKE
A turkey or prime rib dinner just can't go without this! This can be doubled if desired. To save some time cook the sprouts hours in advance or a day ahead.

Steps:
- Set oven to 350 degrees.
- Grease a baking dish large enough to hold the mixture (about an 8-cup).
- To make the topping: stir together the bread crumbs and melted butter, add in the cheese, mix well until combined; set aside.
- Wash and trim the sprouts and cut an "X" in the bottom.
- Cook the sprouts in boiling water for about 7-8 minutes, or until fairly tender.
- Drain and plunge into ice water or very cold water (squeeze out any excess water with hands).
- Place into prepared baking dish.
- In a saucepan, melt butter over medium heat.
- Add in the thyme, fresh garlic (if using) and chopped onion; saute for 3-5 minutes until soft.
- Add/whisk in flour, cook whisking for 5 minutes.
- Add in half and half cream, seasoning salt and pepper; bring to a very light boil, and whisk continuously for about 6-7 minutes until mixture is smooth and thick.
- Remove from the heat.
- Add in the gruyere cheese; stir until melted.
- Pour the creamed mixture over the sprouts in the dish.
- Sprinkle with the topping mixture.
- Bake for about 30 minutes, or until golden brown and bubbly.

Ingredients: 1/2 pounds bacon, diced into 1/4-inch pieces, 2 pounds Brussels sprouts, cleaned and cut in half, Salt and pepper, 1 tablespoon garlic, minced, 1 shallot, peeled and minced, 4 tablespoons butter, 2 tablespoons flour, 2 cups heavy cream, 1 1/2 cups white cheddar cheese, 1/2 cup panko breadcrumbs, 1/4 cup Parmesan cheese, Pinch of cayenne

- Preheat oven to 400°F, and butter a casserole dish. In a large skillet, cook bacon until starting to crisp. Remove with a slotted spoon, and reserve bacon fat. Place Brussels sprouts in pan, cut side down, and allow to caramelize slightly. Season with salt and pepper, add garlic, shallots and butter, and cook another 3 minutes until tender. Sprinkle with flour and stir to incorporate. Add cream, and bring to a boil. Reduce to a simmer, and cook until it starts to thicken, 3-5 minutes. Sprinkle with white cheddar, season with salt and pepper and a pinch of cayenne. Toss bacon and Brussels sprouts mixture together with cheese sauce, pour into baking dish and top with Parmesan and breadcrumbs. Bake for 30-40 minutes until golden and bubbly.
BRUSSELS SPROUTS AND POTATO BAKE
Sooo good. My mom hooked me on this, I am just posting here to get the nutrition info because I tend to eat the WHOLE thing when I make it! When I am trying to limit my carb intake I make it with brussel sprouts only.

Steps:
- If using potatoes, use 1 lb brussels sprouts and 1 lb small potatoes.
- Cut the bottoms off the brussels sprouts and remove protective outer leaves. Cut sprouts in half.
- If using potatoes, half potatoes (quarter if very large.).
- Combine oil, brussel sprouts, potatoes, onions and bacon in a casserole dish.
- Bake at 425 for 40 minutes, or until potatoes are tender. Stir every 15 minutes or so.
- Meanwhile, melt butter in the microwave and combine with the lemon juice.
- When the mixture comes out of the oven, pour butter/lemon juice over the brussel sprouts.
- Add salt and pepper.
- Stir.
- Enjoy!

- Fry bacon until crisp. Crumble or chop. Set aside.

- 1. Preheat the oven to 400 degrees 2. Toss bread with some salt, pepper and olive oil and put bread cubes on a baking sheet 3. Toss squash and brussels sprouts with olive oil and sage and place on another baking sheet 4. Toast bread for 10 minutes in oven and take out to cool 5. Bake sprouts and squash 20 minutes (or until soft) 6. Whisk together olive oil and red wine vinegar with some salt and pepper to taste 7. Line two wide soup bowls with toasted bread 8. Layer vegetables on top 9. Sprinkle chopped shallots over the vegetables 10. Top each with vinaigrette 11. Shave cheese on top to your liking
