½ cup butter
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
⅓ cup unsweetened cocoa powder
½ cup all-purpose flour
¼ teaspoon salt
¼ teaspoon baking powder
3 tablespoons butter, softened
3 tablespoons unsweetened cocoa powder
1 tablespoon honey
1 teaspoon vanilla extract
1 cup confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8-inch square pan.
  • In a large saucepan, melt 1/2 cup butter. Remove from heat, and stir in sugar, eggs, and 1 teaspoon vanilla. Beat in 1/3 cup cocoa, 1/2 cup flour, salt, and baking powder. Spread batter into prepared pan.
  • Bake in preheated oven for 25 to 30 minutes. Do not overcook.
  • To Make Frosting: Combine 3 tablespoons softened butter, 3 tablespoons cocoa, honey, 1 teaspoon vanilla extract, and 1 cup confectioners' sugar. Stir until smooth. Frost brownies while they are still warm.

Flour, for dusting the buttered pan
4 large eggs
1 cup sugar, sifted
1 cup brown sugar, sifted
8 ounces melted butter
1 1/4 cups cocoa, sifted
2 teaspoons vanilla extract
1/2 cup flour, sifted
1/2 teaspoon kosher salt

Steps:

  • Preheat the oven to 300 degrees F. Butter and flour an 8-inch square pan.
  • In a mixer fitted with a whisk attachment, beat the eggs at medium speed until fluffy and light yellow. Add both sugars. Add remaining ingredients, and mix to combine.
  • Pour the batter into a greased and floured 8-inch square pan and bake for 45 minutes. Check for doneness with the tried-and-true toothpick method: a toothpick inserted into the center of the pan should come out clean. When it's done, remove to a rack to cool. Resist the temptation to cut into it until it's mostly cool.

1 (20 ounce) package brownie mix
18 mallomar cookies, only available in the winter

Steps:

  • Line 18 muffin cups with liners, set aside Prepare brownie mix according to directions on package.
  • Spoon 2 tablespoons of brownie mix into muffin cups.
  • Bake@ 350 degrees for 20 minutes.
  • Top each brownie with a Mallomar.
  • Press lightly.
  • Return to oven for 2 minutes or until Mallomar starts to melt.
  • Cool completely.
  • Store in airtight container.

14 ounces highest quality dark chocolate (this gives them that kick of flavor)
6 large eggs
1 teaspoon vanilla extract
18 ounces caster sugar
8 ounces flour
1 teaspoon salt

Steps:

  • Preheat your oven to 356°F The reason for the weird measurements and odd temperature, is because I got this recipe from England.
  • Melt the butter and chocolate over a double boiler, or just in the microwave for a quick zap!
  • Beat eggs, sugar, and vanilla together in a mixing bowl.
  • When the chocolate has cooled, add it to the butter/sugar mixture; mix well.
  • Add flour and salt to the chocolate mixture. Mix until creamy.
