12 ounces semisweet chocolate, chopped
1 cup butter, softened
1-1/3 cups plus 1/4 cup sugar, divided
8 eggs
1 cup cake flour
1/4 cup instant coffee granules or espresso powder
2 cartons (8 ounces each) Mascarpone cheese
2 teaspoons vanilla extract
1 teaspoon baking cocoa

Steps:

  • In a large microwave-safe bowl, melt chocolate. Stir until smooth; cool slightly. Beat in butter. Gradually beat in 1-1/3 cups sugar. Add six eggs, one at a time, beating well after each addition. , Combine flour and coffee granules; add to chocolate mixture. Beat on low speed just until combined; set aside. , For filling, in a small bowl, beat the cheese, vanilla, remaining sugar and eggs until smooth. , Pour half of the chocolate batter into a greased 13-in. x 9-in. baking pan. Spread with filling. Top with remaining batter, spreading evenly to completely cover filling. , Bake at 350° for 45-50 minutes or until center is almost set and brownies begin to pull away from sides of pan. , Cool on a wire rack. Dust with cocoa. Cut into squares. Store in the refrigerator.

⅓ cup espresso, or strong coffee
⅓ cup vegetable oil
1 egg
1 cup heavy cream
½ cup powdered sugar
15 oz mascarpone cheese
1 tablespoon espresso powder
1 teaspoon vanilla extract

Steps:

  • Pre-heat oven to 350ºF (180°C).
  • Combine brownie mix, egg, vegetable oil, and strong coffee into a large bowl. Mix well.
  • Pour batter into a parchment lined 10x15-inch (25x38 cm) baking sheet.
  • Bake for about 10 minutes.
  • While the brownie is baking and cooling, mix mascarpone cheese, espresso powder, and vanilla extract together in a bowl until smooth.
  • In a separate bowl, whip the heavy cream and gradually add in powdered sugar.
  • When the cream is whipped, add to the mascarpone cheese mixture and gently fold until homogenous.

2 ½ sticks unsalted butter, plus more, softened, for greasing
8 oz good-quality semisweet chocolate, or bittersweet chocolate, 60-70% cacao, roughly chopped
¾ cup unsweetened dutch process cocoa powder, divided
1 tablespoon espresso powder
2 cups granulated sugar
½ cup dark brown sugar, packed
2 teaspoons vanilla extract
2 teaspoons kosher salt
6 large eggs
1 cup all-purpose flour
flaky sea salt, for sprinkling

Steps:

  • Grease a 9x13-inch (23x33-cm) dark metal pan with softened butter, then line with parchment paper, leaving overhang on all sides. Grease the parchment with softened butter.
  • Combine the chopped chocolate, ¼ cup (30 g) of cocoa powder, and espresso powder in a heatproof liquid measuring cup or medium bowl and set aside.
  • Add the butter to a small saucepan over medium heat and cook until the butter just comes to a vigorous simmer, about 5 minutes, swirling the pan occasionally. 1/2 cup chopped pecans
1/3 cup coffee liqueur
1/3 cup strong brewed coffee
1.5 (4 ounce) semisweet chocolate bars, divided
3/4 cup butter
2 1/4 cups sugar, divided
3 large eggs
1 cup all-purpose flour
1 (8 ounce) container mascarpone cheese
1 teaspoon vanilla extract
1 cup whipping cream

Steps:

  • Preheat oven to 350°. Arrange pecans in a single layer on a baking sheet, and bake 5 to 7 minutes or until lightly toasted and fragrant.
  • Stir together coffee liqueur and coffee.
  • Coarsely chop 1 chocolate bar. Microwave coarsely chopped chocolate and butter in a large microwave-safe bowl at MEDIUM (50% power) 1 to 1 1/2 minutes or until melted and smooth, stirring at 30-second intervals.
