1 ¾ cups all-purpose flour
½ teaspoon salt
½ teaspoon baking powder
⅓ cup oil
¼ cup butter, melted
¾ cup granulated sugar
½ cup cocoa powder
1 large egg
2 teaspoons vanilla extract
10 milk chocolate truffles
2 tablespoons powdered sugar, for dusting

Steps:

  • Preheat the oven to 375˚F (190˚C). Line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the flour, salt, and baking powder.
  • In a large bowl, combine the oil, melted butter, sugar, and cocoa powder and whisk.
  • Add the egg and vanilla and mix until the ingredients are incorporated.
  • Add the flour mixture, and mix thoroughly with a spatula.
  • Roll the dough into 2-inch (5-cm) balls. Press a truffle into each dough ball and wrap the dough around so the truffle is not exposed. Place onto a parchment paper covered baking pan.
  • Bake for 10 minutes, until the dough is slightly firm to the touch.
  • Dust with powdered sugar. Can be stored in an airtight container up to 5 days. Reheat in the microwave for 20 seconds before eating.

9 oz fudge brownie mix, baked according to package instructions in a 9 x 13-inch pan
¾ cup vanilla ice cream
3 large raspberries
10.5 oz chocolate frosting, melted
1 teaspoon cornstarch
3 tablespoons water, divided
1 cup raspberries
¼ cup sugar
1 tablespoon lemon juice

Steps:

  • Make the brownie bombs: Cut 3 8-inch (20 cm) squares of plastic wrap. Place the plastic wrap in the cups of a 6-cup jumbo muffin tin, alternating between rows so you have enough space to work.
  • With a 3½-inch (8.75 cm) cookie cutter, cut 6 circles out of the pan of brownies.
  • Place a brownie circle in each prepared muffin cups. Using an ice cream scoop, scoop ¼ cup (35 g) of vanilla ice cream in the center of each brownie circle. Push a raspberry into the center of the ice cream and top with the remaining brownie circles. Wrap the plastic wrap around the brownie bomb. Place the muffin tin in the freezer and allow the brownie bombs to set for at least 4 hours, or up to overnight.
  • Make the raspberry sauce: Add the raspberries, sugar, remaining 2 tablespoons of water, and the lemon juice to a small saucepan over medium-high heat and bring to a boil.
  • In a small bowl, mix together the cornstarch and 1 tablespoon of water until the cornstarch is dissolved.
  • Once the raspberry mixture is boiling, reduce the heat to low and add the cornstarch slurry. Stir until the sauce thickens, 2-3 minutes. Remove the pot from the heat and let the sauce cool.
  • Remove the brownie bombs from the freezer. Unwrap and place, domed side up, on a wire rack set over a baking sheet. Pour the melted chocolate frosting over the bombs, then place in the refrigerator to set, about 20 minutes.
  • Remove the bombs from the refrigerator and drizzle with the raspberry sauce. Serve immediately.

Water, vegetable oil and eggs called for on brownie mix box
1 package (8 oz) Snickers™ bites candy unwrapped
2 1/4 cups semisweet chocolate chips
2 tablespoons shortening

Steps:

  • Heat oven to 350°F. Line 13x9-inch pan with nonstick foil, allowing foil to extend 2 inches over edges of pan. In large bowl, mix brownie mix, water, oil and eggs until well blended. Spread in pan.
  • Bake 24 to 26 minutes or until toothpick inserted 2 inches from side of pan comes out clean. Do not overbake. Cool completely, about 1 hour.
  • Remove brownies from pan by lifting foil. Pull back foil from edges of brownie. Trim 1/8-inch off edges of brownie. Cut brownie into 7 rows by 5 rows, making 35 squares.
  • Line cookie sheet or tray with sides with cooking parchment paper. Place 1 brownie square in palm of your hand, and press with fingers of other hand to flatten. Place 1 Snickers™ bites in center of flatted brownie piece. Wrap brownie around Snickers™ bite gently, pressing into a ball. Place on cookie sheet. Continue with remaining brownie squares and 34 of the Snickers™ bites. Refrigerate 15 minutes.
  • Finely chop remaining Snickers™ bites. In medium bowl, microwave chocolate chips and shortening uncovered on High 60 to 90 seconds or until mixture can be stirred smooth. Using 2 forks, dip and roll chilled balls, one at a time, in melted chocolate. Return to cookie sheet; immediately top with finely chopped Snickers™ bites. If chocolate has cooled too much, reheat. Refrigerate brownie bites about 20 minutes or until coating is set. Store covered in refrigerator.

Water, oil and egg called for on brownie box
6 oz vanilla candy coating (almond bark) (from 20-oz package)
3/4 cup semisweet chocolate chips (from 12-oz bag)
1 tablespoon shortening

Steps:

  • Heat oven to 350°F. Line 8-inch square pan with nonstick foil, leaving enough hanging over sides of pan for easy removal. Make brownie batter as directed on box, reserving mint chips packet for later; spread in pan. Bake 35 to 38 minutes or until toothpick inserted 2 inches from side of pan comes out almost clean. Cool completely, about 1 hour.
  • Remove brownies from pan by foil; cut 1/8-inch off around edges of brownie. Cut brownie into 6 rows by 4 rows, making 24 brownie pieces. Line cookie sheet or tray with sides with cooking parchment paper. Roll brownie pieces into balls, and place on cookie sheet; refrigerate 15 minutes.
  • In small microwavable bowl, microwave almond bark uncovered on High 1 to 2 minutes, stirring every 15 seconds, until smooth. In another small microwavable bowl, microwave chocolate chips and shortening uncovered on High 60 to 90 seconds, stirring every 30 seconds, until smooth.
  • Using 2 forks, dip and roll 12 balls, one at a time, in almond bark. Shake off excess almond bark, and place on lined cookie sheet. Dip remaining 12 balls in chocolate; shake off excess chocolate, and place on lined cookie sheet. Refrigerate brownie truffles about 20 minutes or until coating is set.
  • In small microwavable bowl, place reserved mint chips and 1/2 teaspoon oil, as called for on brownie box. Microwave uncovered on High 25 to 30 seconds; stir until chips are melted. Drizzle over chilled brownie truffles. Refrigerate until drizzle is set, about 10 minutes.

1 box brownie mix and ingredients as needed on the instructions of the box
1 can chocolate frosting
3-4 cups milk chocolate chips
1 can cherry pie filling

Steps:

  • Make brownies and bake according to directions on the box. Let cool completely. DO NOT OVERCOOK. Crumble the brownies and mix in about 3/4 cup of chocolate frosting. If you've made cake pops before, you want a similar consistency. Add more frosting a little at a time if you need to until you have the right consistency (stays together easily, but isn't too sticky) to roll into balls. Start with about 1 tablespoon of brownie/frosting mixture. Form into a ball, then make a hole in the middle to drop one cherry from the pie filling into. Use a little more the brownie/frosting mixture if needed to seal the cherry in. Place balls in freezer for about 20 minutes. While they are hardening in the freezer, melt the chocolate chips. You may use more or less depending on how heavily you coat the balls. After removing the balls from the freezer, keep them in the refrigerator while taking one out at a time and dropping into the melted chocolate, tap off the excess chocolate and place on wax paper for them to dry completely.

By now - I am sure you all know about my love affair with chocolate. Brownies are the worst for me - I cannot resist them! Passive cook time includes 30 minutes for allowing dessert come to room temperature.

4 ounces unsweetened chocolate squares
1/2 cup unsalted butter
1 2/3 cups sugar
1/2 teaspoon vanilla extract
3 eggs
3/4 cup all-purpose flour
1 (8 ounce) package cream cheese, softened
1 egg
4 teaspoons all-purpose flour
1/4 teaspoon vanilla extract
1/2 cup semi-sweet chocolate chips
1/2-1 cup chopped walnut pieces (optional) or 1/2-1 cup almonds, pieces (optional)

Steps:

  • Preheat oven to 350°F.
  • Coat an 8"x8"x2" baking pan with non-stick cooking spray.
  • Set aside.
  • In a saucepan, melt the unsweetened chocolate and butter over low heat.
  • Remove from heat.
  • Stir in 1-1/3 cups of sugar and the 1/2 teaspoon vanilla extract.
  • Cool the mixture for 15 minutes.
  • Beat in eggs and 3/4 cup flour.
  • In a mixing bowl, mix the remaining 1/3 cup sugar, cream cheese the 1 egg and 4 teaspoons all-pupose flour & 1/4 teaspoon vanilla extract.
  • In prepared pan, spread 2/3 of the chocolate batter in the pan.
  • Spoon cream cheese layer over batter.
  • Dollop with remaining chocolate batter.
  • Bake in a 350F oven for 20 minutes.
  • Sprinkle with semi-sweet chocolate pieces.
  • Bake for 12 minutes more.
  • Cool.
  • Cover; store in refrigerator.
  • Let the chilled dessert stand at room temperature for 30 minutes before serving.
  • Control yourselves - it is worth it!

Yummmm! These brownies ARE the bomb. The cookie dough layer is luscious (you're going to want to eat it with a spoon!). The brownie layer is nice and chewy, the cookie dough is creamy and the chocolate glaze on top is perfect. These are going to be a big hit when served.

BROWNIE LAYER
1 pkg brownie mix
1 tsp instant coffee granules
COOKIE DOUGH LAYER
1 c butter softened
3/4 c sugar
3/4 c brown sugar, light
1 tsp vanilla extract
1/3 c heavy cream (or milk)
1 tsp salt
1 tsp baking soda
2 c all purpose flour
1 c mini chocolate chips
CHOCOLATE GANACHE FROSTING
3/4 c heavy cream
1 pkg milk chocolate chips (12 oz)

Steps:

  • 1. Prepare brownies according to your package instructions. Make sure your box is for a 13 X 9" size. You could also use your favorite homemade brownie recipe. I used Duncan Hines and it called for 2 large eggs, 1/4 cup water, and 3/4 cup oil. Mix 1 tsp instant coffee granules to warm water (amount instructed on your package) stir to dissolve then add oil and mix well. Beat in eggs and then add contents of brownie mix and stir until well mixed. Bake in 13 X 9" greased pan. Follow baking instructions per box for the amount time needed. Don't over bake, no one wants a dry brownie! Let brownies cool.
  • 2. For the cookie dough layer, mix softened butter, white, and brown sugar until light and fluffy. Add vanilla and heavy cream (or milk). Add remaining ingredients. Feel free to lick the bowl... there's no raw eggs in this recipe! Spoon the cookie dough over cooled brownies. I found it was easiest to press into the brownies using my hands. Refrigerate for about 1/2 hour.
  • 3. Place heavy cream in a microwave safe bowl or glass measuring cup and microwave for one minute. Add milk chocolate chips and stir until smooth. If you need to microwave longer you can. Just be careful because they melt easily and also burn easily. Stir until smooth and then pour over cookie dough layer. Tilt pan back and forth to cover. Refrigerate, then scarf down :)

  • If I'm not mistaken, that's a ball of cookie dough surrounded by a fudgy brownie and then coated in chocolate and sprinkled with mini chips.
  • Whoooa.
  • Sometimes, I don't even know WHERE half my ideas come from. I literally operate like a mad scientist part of the time, throwing things together with my fingers crossed, hoping it'll work. Sometimes it does, like in this instance. Other times, like when I tried to put Jello mix into prepackaged sugar cookie dough and it tastes like a chalky version of Play-Doh and I stared at Pinterest like all disappointed because it let me down with those tempting Jello-cookie recipes that taste like poop, it doesn't.
  • Most days, you can find me scatterbrained and roaming the grocery store like a complete looney tune. I'd love to see the surveillance footage of me wandering aimlessly between the candy aisle and baking aisle, discussing to myself in a low whisper of what I could do with this bag of Reese's cups as I run around like not only a chicken with its head cut off, but if it was also on fire and having ninja stars thrown at it from every direction. Is it just me, or does the prospect of ninja stars being thrown at you totally increase the intensity of something?
  • Lucky for me, I usually shop at a store that may or may not rhyme with Schmalmart, and the fact that I'm aimlessly walking back and forth while talking to myself isn't really that out of the ordinary. The bad news is I'm proooobably going to bet my psycho face staring longingly/confusingly into a box of red velvet cake mix is more than likely on People of Walmart or something. Ya win some, ya lose some.
  • Anywhooooo, the idea for these truffles came from left field. I had a bunch of St. Patty's Day recipes I wanted to make this weekend, and out of nowhere, a huge zeppelin of awesome floated into my brain and interrupted whatever I was doing at the present moment, which probably wasn't important since I'm either reading trashy magazines or judging customers at work for ordering mayo and lettuce on hot sandwiches (it's a NO, people-hot mayo? wilted lettuce? You need an intervention).
  • DSC_0462AAnd this zeppelin dropped a gigantic bomb of brilliance on me: wrap a brownie around a ball of cookie dough. Then coat said ball in chocolate. And voila, this cataclysmic invention was created. You'll never enjoy brownies or cookie dough respectively, again. This is the ultimate.
  • Now pardon me, but I have some reading/judging to do and it's VERY important.

  • 4 cup butter, softened
  • 4 cup brown sugar
  • 4 cup white sugar
  • tsp milk
  • tsp vanilla extract
  • cups all-purpose flour

  • Let's make some dough! In the bowl of a stand mixer, beat together the butter and sugars until creamy. Add the milk and vanilla; beat to combine. Lastly, beat in the flour and pinch of salt until a soft dough forms. Stir in ONE (1) cup of the mini chips.
  • On a foil-lined baking sheet, drop rounded, (scant) Tablespoon-sized balls of dough. I used a cookie dough scoop for this and just scantily filled it so the cookie dough balls wouldn't be so big. Freeze the cookie dough balls for about an hour to firm up.
  • Cut the brownies into small squares, about 1″ in size. Pick up a square and gently flatten it with your palm. Fudgy brownies will flatten easily and retain their moisture which is why it's important to make sure you use a fudgy brownie mix rather than a cake-y one.
  • Place a cookie dough ball in the middle of the flattened brownie and very gently, wrap the brownie around the cookie dough ball. If the brownie cracks, that's okay; just kind of roll it in your fingers until the brownie completely surrounds the cookie dough. Repeat until all cookie dough balls are covered, then return to the freezer for 30 minutes or so.
  • Prepare chocolate bark according to package directions. Using a fork, dip each brownie truffle into the chocolate, coat completely, and allow excess to drip off. Return to the foil-line sheet and sprinkle the tops with the remaining cup of mini chips, for garnish. Store these bad boys in the fridge or freezer, in an airtight container.
  • **Note: You may have extra balls of cookie dough leftover. May I suggest making cinnamon rolls or stuffed Oreos? Or, uh, eat them? Why am I telling you what to do with cookie dough?**

1 C creamy peanut butter
1/2 C confectioners sugar
pinch salt
1/4 t vanilla extract
1 C miniature chocolate chips
1 pkg fudge brownie mix, baked & cooled
18 oz semisweet chocolate

Steps:

  • 1. Make the brownies according to the box. Make sure to follow the direction to.make fudgy brownies & NOT cake -like ones. Cook in a 13"x9" pan. Cool. 2. Peanut Butter Filling: While brownies are cooling, make the peanut butter balls. In a small bowl, mix together peanut butter, confectioners sugar, salt & vanilla. 3. Chill the peanut butter mixture for 15-30 mins in the freezer to make it easier to roll into balls. 4. Remove from freezer, scoop TBSP of mixture & roll into a ball. Repeat with all the peanut butter mixture. 5. Cut the brownies into small squares, about 1 - 1 1/2 " size. Pick up a square & gently flatten it with your palm. 6. Place a peanut butter ball in the middle of the flattened brownie & very gently wrap the brownie around the peanut butter ball. Don't worry if the brownie starts to break or crack or the peanut butter oozes out the sides. No big deal! Just roll it around in your hands until the brownie completely surrounds the peanut butter ball the best you can. Repeat with remaining brownie squares & return to the freezer for 30 mins. 7. Melt chocolate in microwave or double boiler. Using a fork, dip each brownie peanut butter ball into the chocolate, coat completely & allow excess to drip off. Set on a wax paper covered plate or baking sheet & sprinkle the tops with mini chips. Store in an airtight container in the fridge.

1 package(s) fudge brownie mix
1 cup(s) skippy natural peanut butter
1/2 cup(s) powdered sugar
pinch(es) salt
1/2 teaspoon(s) vanilla extract
24 ounce(s) semi-sweet chocolate chips
PEANUT BUTTER ROYAL ICING
1 cup(s) powdered sugar
3 teaspoon(s) water
1 teaspoon(s) light corn syrup
2 teaspoon(s) skippy natural peanut butter

Steps:

  • For the Peanut Butter Brownie Bombs: Prepare fudge brownie mix per package instructions, using a 9x13 pan. Once brownie has been baked, set aside and allow to cool completely (typically 1-2 hours). While brownies cool, prepare peanut butter filling. Using a stand mixer (or hand mixer + large bowl), mix together Skippy Natural Peanut Butter, powdered sugar, salt, and vanilla extract. Cover bowl and place in the freezer for 30 minutes. Place about 1/4 cup powdered sugar in a bowl and set nearby. Like a baking sheet with parchment paper. Remove bowl of peanut butter mixture from freezer. Scoop out 1 tablespoon of peanut butter mixture and drop it in the powdered sugar. Cover the peanut butter with sugar, then roll it into a ball in your hands. Place the peanut butter ball on the parchment paper. Repeat this step until all the peanut butter from the bowl has been used.
  • Place tray with peanut butter balls in the freezer and chill for another 15 minutes. Remove tray from freezer and place nearby. Using a pizza cutter, cut brownies into 1 to 1 1/2 inch squares. Pick up a brownie square and use your fingers and palms to press the brownie into a flat pancake. Try to make the brownie as thin as you can without it falling apart. Place a peanut butter ball in the center of the brownie pancake and gently wrap the brownie around the peanut butter ball. Use your palms to gently roll it into a ball. The ball doesn't need to be perfect, and it's okay if some of the peanut butter shows through. Place the finished brownie ball back on the parchment paper. Continue this step until all the peanut butter balls are covered with brownie. Place try with brownie covered peanut butter balls back in the freezer and let chill for another 30 minutes. Remove tray from freezer and place nearby. Prepare another try and cover it with parchment paper. In a microwave safe bowl, melt the semi-sweet chocolate chips per package instructions, stirring generously between heating. Drop a brownie ball in the melted chocolate and toss to coat. Place the coated peanut butter brownie bomb on the new sheet of parchment paper. Continue this step until all the brownie balls are covered. Make sure the chocolate stays creamy - you may need to reheat the chocolate half way through.
  • For the Peanut Butter Royal Icing: Using a stand mixer (or hand mixer plus small bowl), mix together the powdered sugar, water, corn syrup, peanut butter, and vanilla extract. Icing consistency should be firm but still able to drop from a spoon. If icing is too dry, add 1/2 tsp water until desired consistency is reached. If icing is too runny, add 1 tbsp powdered sugar until desired consistency is reached. Place icing in an icing bag with a small tip (or use a ziplock bag with a small hole cut in a corner). Drizzle peanut butter royal icing over peanut butter brownie bombs as desired. Store peanut brownie bombs in a sealed container in the refrigerator until ready to eat.

  • Prepare fudge brownie mix per package instructions, using a 9x13 pan. Once brownie has been baked, set aside and allow to cool completely (typically 1-2 hours).
  • While brownies cool, prepare peanut butter filling. Using a stand mixer (or hand mixer + large bowl), mix together Skippy Natural Peanut Butter, powdered sugar, salt, and vanilla extract. Cover bowl and place in the freezer for 30 minutes.
  • Place about 1/4 cup powdered sugar in a bowl and set nearby. Like a baking sheet with parchment paper. Remove bowl of peanut butter mixture from freezer. Scoop out 1 tablespoon of peanut butter mixture and drop it in the powdered sugar. Cover the peanut butter with sugar, then roll it into a ball in your hands. Place the peanut butter ball on the parchment paper. Repeat this step until all the peanut butter from the bowl has been used.
  • Place tray with peanut butter balls in the freezer and chill for another 15 minutes.
  • Remove tray from freezer and place nearby. Using a pizza cutter, cut brownies into 1 to 1 1/2 inch squares. Pick up a brownie square and use your fingers and palms to press the brownie into a flat pancake. Try to make the brownie as thin as you can without it falling apart. Place a peanut butter ball in the center of the brownie pancake and gently wrap the brownie around the peanut butter ball. Use your palms to gently roll it into a ball. The ball doesn't need to be perfect, and it's okay if some of the peanut butter shows through. Place the finished brownie ball back on the parchment paper. Continue this step until all the peanut butter balls are covered with brownie.
  • Place try with brownie covered peanut butter balls back in the freezer and let chill for another 30 minutes.
  • Remove tray from freezer and place nearby. Prepare another try and cover it with parchment paper.
  • In a microwave safe bowl, melt the semi-sweet chocolate chips per package instructions, stirring generously between heating. Drop a brownie ball in the melted chocolate and toss to coat. Place the coated peanut butter brownie bomb on the new sheet of parchment paper. Continue this step until all the brownie balls are covered. Make sure the chocolate stays creamy - you may need to reheat the chocolate half way through.
  • Using a stand mixer (or hand mixer plus small bowl), mix together the powdered sugar, water, corn syrup, peanut butter, and vanilla extract. Icing consistency should be firm but still able to drop from a spoon. If icing is too dry, add 1/2 tsp water until desired consistency is reached. If icing is too runny, add 1 tbsp powdered sugar until desired consistency is reached.
  • Place icing in an icing bag with a small tip (or use a ziplock bag with a small hole cut in a corner). Drizzle peanut butter royal icing over peanut butter brownie bombs as desired.
  • Store peanut brownie bombs in a sealed container in the refrigerator until ready to eat.
