Easy Scalloped Potato And Pork Chop Dinner image

This is a quick and easy pork chop dish that I love to make ; the pork is fork tender and the potatoes have a taste of the meat...yummy. Serve with a side veggie and dinner is done.

4 pork chops
1/4 tsp salt and pepper
1 tsp garlic powder
1/2 tsp sage
1 tsp parsley flakes
1 box scalloped potatoes
1 tsp onion powder
1/4 c chopped pimentos ; optional

Steps:

  • 1. Trim excess fat off of pork chops and melt in a skillet on med-high heat or you can use 2 Tbs. oil. discard browned pieces.(I don't trim cause I like the fat.)
  • 2. Season both sides of chops with the spices or spices of your choice.
  • 3. In the skillet with the melted fat grease ; brown chops on both sides and set aside on a plate when browned.
  • 4. In the same skillet (don't wipe out) empty the box of scalloped potato , spice packet and the amount of water and milk according to the directions on the box.
  • 5. Add pimentos ; optional ; (I have never used the pimentos)
  • 6. Bring potatoes to a boil and stir several times , Place browned pork chops on top of potatoes (including the juice that was on the plate).
  • 7. Cover and reduce heat to simmer ; cook until potatoes are tender and sauce has thickened. ; stirring several times during cooking process.
