1 teaspoon garlic powder
½ teaspoon ground cinnamon
½ teaspoon onion powder
1 (8 ounce) can pineapple rings, drained and juice reserved
1 tablespoon olive oil, divided
1 red onion, thinly sliced
¼ cup brown sugar
4 boneless pork chops
salt and ground black pepper to taste
¼ cup crumbled goat cheese

Steps:

  • Combine chipotle powder, garlic powder, cinnamon, and onion powder in a small bowl.
  • Pat pineapple rings dry.
  • Heat 1 teaspoon olive oil in a large, nonstick saucepan over medium-high heat. Add pineapple rings and red onion; sprinkle with 3 tablespoons reserved pineapple juice and brown sugar. Cook until pineapple is lightly browned, about 3 minutes per side. Transfer pineapple-onion mixture to a plate.
  • Pat pork chops dry and lightly season both sides with salt and pepper.
  • Heat remaining 2 teaspoons oil in the same saucepan over medium-high heat; swirl to coat pan. Add chops; cook until bottom is browned, about 3 minutes. Flip and sprinkle the chipotle mixture on top. Cook until other side is browned, about 3 minutes. Continue flipping and cooking until no longer pink in the center, 3 to 5 minutes more. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).
  • Transfer chops onto a plate and top with the pineapple-onion mixture. Sprinkle goat cheese on top.

1/2 teaspoon garlic powder

  • In a small bowl, combine brown sugar, garlic powder, paprika, salt and pepper. Rub your sugar/spice mix on both sides of each pork chop, using all of the spice mix. 1/4 cup salt
2 dried bay leaves
1 clove garlic, crushed
1 teaspoon whole black peppercorns
4 cups water
6 bone-in center-cut pork loin chops, about 1 inch thick (4 to 5 lb)
4 to 6 chunks wood for smoking (hickory, mesquite or apple)*
2 tablespoons packed brown sugar
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
1/4 teaspoon ground red pepper (cayenne)

Steps:

  • In 2-gallon-size heavy-duty resealable plastic food-storage bag, mix 1/2 cup brown sugar, the salt, bay leaves, garlic, peppercorns and 4 cups water. Seal bag and squeeze to mix until sugar and salt have dissolved. Place pork chops in bag of brine; seal bag. Refrigerate at least 3 hours but no longer than 8 hours.
  • Cover wood chunks with water; soak at least 30 minutes.
  • Drain wood chunks. Prepare and heat smoker using wood chunks and adding water to water pan following manufacturer's directions.
  • Meanwhile, remove pork chops from brine; discard brine. Blot pork chops dry with paper towels. In small bowl, mix 2 tablespoons brown sugar, the garlic powder, black pepper and red pepper. Rub each side of pork chops with slightly less than 1 teaspoon brown sugar mixture.
  • Arrange pork chops 1 inch apart on top and bottom smoker racks. Cover and smoke about 1 hour 30 minutes or until meat thermometer inserted in center of pork reads 160°F (pork will remain pink when done). If smoking stops, add additional wood chunks through side door of smoker.

2 tablespoons canola oil
1 sweet onion, finely chopped
1 clove garlic, finely chopped
One 1-inch piece fresh ginger, peeled and grated
1 1/2 cups ketchup
1/2 cup peach jam
2 ripe peaches, pitted and cut into 3/4-inch chunks
2 tablespoons apple cider vinegar
Coarse kosher salt and freshly ground black pepper
3/4 cup dark brown sugar
1/4 cup kosher salt
2 cups boiling water
3 cups ice cubes
4 bone-in pork loin chops (1 1/2 to 2 pounds)

Steps:

  • Place a medium saute pan over medium heat and add the oil. Add the onion and cook until translucent, about 2 minutes. Add the garlic and ginger and cook until fragrant, 45 to 60 seconds.
  • Add the ketchup, peach jam and peaches. Reduce heat to low and simmer until the sauce thickens, about 30 minutes, stirring occasionally. Add the vinegar and season with salt and pepper. Remove from the heat and set aside to cool.
  • Meanwhile, in a medium heatproof bowl, dissolve the brown sugar and kosher salt in boiling water, then stir in the ice cubes to cool. Add the pork chops, cover the bowl with plastic wrap and refrigerate about 30 minutes. Remove the pork chops from the brine, rinse them well and dry thoroughly with paper towels.
  • Pour half the barbecue sauce into a shallow baking dish; reserve remaining sauce. Add the pork chops, turning to coat both sides.
  • Prepare a medium-hot grill or grill pan. Grill the chops until cooked through, about 5 minutes per side, basting chops with barbecue sauce. Remove from the grill and let stand 5 minutes before serving. Serve with the remaining sauce.

This is an often-requested recipe in my home. The flavorful sauce tastes like you spent hours working on it, but it is one of the simplest dinner recipes that I prepare. I first came across the recipe in a Publix advertisement, but have tweaked it slightly.

3 fresh garlic cloves, peeled and crushed
2 tablespoons light brown sugar
2 teaspoons McCormick's Montreal Brand steak seasoning (can use reduced-sodium version)
3/4 lb pork loin chop
2 tablespoons butter, divided
1/4 cup red wine or 1/4 cup chianti wine

Steps:

  • Combine brown sugar, garlic, and Montreal steak seasoning. Divide mixture amongst the pork loin chops and press on both sides of each chop to season.
  • Place 1 tbsp of the butter in a saute' pan and melt on medium heat. After butter is melted, put chops in pan and brown slowly on both sides. Remove meat from heat.
  • Add remaining 1 tbsp of butter to pan and let melt. Mix with remaining garlic and brown sugar bits left from browning meat. Add wine. Bring to a boil and let simmer down to make a nice glaze. You can add meat back and keep spooning liquid mixture over meat or leave meat out of the pan and pour finished glaze over to serve.
  • * This can easily be doubled. I use 2 tbsp of butter to brown the chops, but only 1 tbsp of butter to make sauce.

15 slices day-old bread, torn into small pieces

  • In a small skillet melt 1/2 tablespoon butter or margarine. Add onion and celery and saute until translucent. Add saute mixture to a large bowl with bread, Greek seasoning and broth. Mix to coat bread evenly, not too soggy.

2 tsp. garlic powder
1/4 c. brown sugar
2 tsp. hot sauce

Salsa:
20 oz. Pineapple Chunks (use the chunks only)
1 Tbsp. Brown Sugar
1 Tsp. Hot sauce
1/4 c. minced red onion
Fresh Cilantro (to taste)
Vegetable Brown Rice:
2 c. Brown minute rice
1/4 c. Diced yellow pepper
1/4 c. Diced orange pepper
1/4 c. Diced mushrooms
1 tsp. Fresh cilantro (minced)
1/3 c. Pineapple juice.
Hot sauce (to taste)

Steps:

  • In a sauce pan on med heat pour in the pineapple juice, setting 1/3 c. to the side for the rice. Add the remaining ingredients and bring to a simmer. Remove from heat and let cool. Combine with the uncooked pork chops and let it marinade for 2-3 hours. (save a portion of the marinade to use later as a sauce) Start to prep the rice 20 minutes before cooking the pork chops. For the rice follow the boxed instructions. Saute the diced peppers and onions, when they are about half way cooked add in mushrooms and cilantro. Set aside when done. In a sauce pan put pork chops and marinade on med heat. When about half way cooked drain the liquid and let the pork chops sear. Next, check on the rice and add in pineapple juice- allow the rice to get really thick and sticky. Add in the sauteed vegetables and hot sauce. For the salsa saute the pineapple chunks and brown sugar on med-low heat. When cooked through drain the excess liquid from the pan. Add remaining ingredients and cook until browned. When done, add the pork chops to the salsa to finish cooking.

  • 1. In a small skillet, melt the 1 tb butter. Add the onions and celery and saute' until translucent. Add saute' mixture to a large bowl with the bread, Greek seasoning and broth.. Mix to coat bread evenly, not to soggy. This will be the dressing.
  • 2. Preheat oven to 350 degrees. Spread the dressing (bread mixture)in the bottom of a buttered, 9 x 13 baking dish. Top with pork chops, OPT: sprinkle with more Greek seasoning.
  • 3. In a medium bowl, combine brown sugar and melted butter and mix together. Brush mixture over pork chops and drizzel over chops and dressing, allowing to seep into dressing.
  • 4. Bake in the preheated oven for about 30 minutes. Check with therm, until internal temp of pork chop is 160 degrees. Baking time will very depending on thickness of pork chops. Serve pork chop with a scoop of dressing.
  • 5. In case you do not have any Greek seasoning, you can make a batch to put into your spice cabinet.
  • 6. Greek seasoning: combine all seasoning and mix well. I used my small processer to grind and mix seasoning. Put into a small container with lid, to use on other recipes.

Grilled Brown Sugar Pork Chops or Chicken image

If you don't care for a sweet sauce then this is not for you. Plan ahead the meat needs to chill for a minumum of 6 hours or up to 24 hours before grilling. The sauce may be doubled if desired. Cooking time is omitted, as it will vary depending if pork or chicken is used. Prep time is chilling time.

6 pork chops or 6 boneless skinless chicken breasts
1/2 cup brown sugar
1/2 cup unsweetened apple juice (or use 1/4 cup each apple sauce and juice)
1/4 cup vegetable oil
1 tablespoon soy sauce
1/2 teaspoon ginger powder
1/4-1/2 teaspoon garlic powder (or to taste)
1/4 teaspoon salt (or to taste)
1/4 teaspoon black pepper (or to taste)
1 pinch cayenne pepper (optional)
1/4 cup cold water
2 teaspoons cornstarch

Steps:

  • In a small saucepan combine brown sugar, apple juice, oil, soy sauce, ginger powder, garlic powder, salt, pepper and cayenne (if using); bring to a boil over medium-low heat stirring until sugar is completely dissolved (about 4 minutes) and the mixture is at a light simmer.
  • In a small cup mix together 1/4 cup water and cornstarch; add to the mixture and whisk over low heat until thickened; remove from heat and cool completely (at this point it may be refrigerated).
  • After the sauce has cooled completely place the pork chops or chicken on a large plate.
  • Remove a little sauce to a separate bowl to brush onto the meat.
  • Brush liberally with the sauce on both sides; cover meat and chill for 6 hours or up to 24 hours, refrigerate the remaining sauce to baste the meat with later.
  • Grill the pork chops or chicken brushing with the remaining sauce while grilling or towards the end of the grilling time.

1 tablespoon canola oil
4 bone-in double-cut pork chops (about 1 pound each)
Kosher salt
Brown Sugar BBQ Sauce, recipe follows
1 1/2 cups ketchup
1 cup dark brown sugar
1 cup apple cider vinegar
1/3 cup chili powder
1/4 cup low-sodium soy sauce
1/4 cup Worcestershire sauce
2 tablespoons Dijon mustard
4 large cloves garlic, thinly sliced
2 knobs fresh ginger, peeled and cut into 1/4-inch-thick rounds
1 medium lemon, cut into 1/4-inch-thick slices

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat a large skillet over medium heat and add the oil. When the oil begins to smoke lightly, sprinkle the pork chops on both sides with salt. Arrange them in a single layer in the skillet. Cook until browned, 3 to 5 minutes, then turn over and cook for an additional 3 to 5 minutes. Transfer the skillet to the center of the oven. Cook until the pork reaches an internal temperature of 150 degrees F, 25 to 30 minutes.
  • Drizzle the chops generously on both sides with the Brown Sugar BBQ Sauce. Transfer to a platter and serve with additional sauce on the side.
  • Combine the ketchup, dark brown sugar, cider vinegar, chili powder, soy sauce, Worcestershire sauce and Dijon mustard in a large pot and whisk to blend. Bring to a simmer over medium heat. Add the garlic, ginger and lemon slices. Simmer until the vinegar mellows slightly and the flavors start to meld together, 20 to 25 minutes. Remove from the heat but keep warm.

4 pork chops
4 garlic cloves, finely chopped
1/3 cup brown sugar
4 tablespoons butter, melted
1 teaspoon paprika
1/2 cup colby-jack cheese, shredded
Salt and pepper to taste

Steps:

  • Rub both sides of pork chops with garlic and brown sugar. Place in square baking dish and drizzle butter over top. Sprinkle with paprika, salt and pepper. Bake in 350°F oven for 20-25 minutes or till internal temperature is 155 degrees. Remove from oven and sprinkle with cheese. Bake for another five minutes.

  • spray pan with PAM. sauté onions and set aside. cook pork in pan over medium high. remove to serving dish and keep warm. add red wine vinegar, brown sugar, and onions to pan. reduce then pour over chops and serve.
