Pasta With Sugar Snap Peas, Asparagus, Ricotta and Brown Butter image

The browned butter is the secret to this dish. The recipe was published in the Toronto Star and credited to the San Francisco Chronicle.

8 ounces whole wheat pasta, such as rotini
1 tablespoon olive oil
1 onion, sliced thin
5 ounces snap peas, cut into 1/2-inch lengths
1 bunch asparagus, tips only (top inch or so)
1/2 lemon, juice of
coarse salt, to taste
fresh ground pepper, to taste
1/4 cup butter
1 tablespoon thinly sliced mint
1 tablespoon minced lemon zest
6 tablespoons fresh ricotta
1/4 cup toasted coarsely chopped hazelnuts

Steps:

  • Bring a large pot of salted water to a boil. Add pasta, and cook until al dente, about 12 minutes.
  • Heat oil in medium sauté pan over medium-high heat. Add onions and cook, stirring, until softened and slightly brown, 7 to 10 minutes.
  • Add snap peas, asparagus and lemon juice, and cook, stir for 1 minute. Using a slotted spoon, transfer pasta to sauté pan, and add 1/2 cup of pasta cooking water to pan.
  • Continue to cook, stirring constantly, until water is almost absorbed and peas and asparagus are bright green but tender, about 4 minutes.
  • Season with salt and pepper.
  • Heat butter in small pan over high heat, swirling as butter begins to change colour. As soon as butter browns, about 4 minutes, remove from heat.
  • Stir mint and lemon zest into pasta and divide pasta among four bowls.
  • Top each bowl with 1- 1/2 tablespoons ricotta, 1/4 of the hazelnuts, and drizzle with 1 tablespoon brown butter.

I just made this recently and my fiance loved it. He normally is a much better cook than I am so it was nice to hear him raving about something I made. It's really easy too and results in a slightly sweet asparagus.

1 bunch asparagus
1 tablespoon olive oil
1/2 cup water
3 tablespoons brown sugar

Steps:

  • Add olive oil, water, and brown sugar to skillet pan and stir to mix
  • Snap asparagus and add tops to skillet pan.
  • Heat over medium heat occasionally stirring until asparagus is tender (about 15 minutes, but I like my asparagus soft so if you prefer it crisper, it will need less time).

Still a nice presentation, although not as elegant, but every bit just as tasty...and f-a-s-t! I want to encourage everyone to try this wonderful recipe. It is semi-sweet and very rich.

1 (15 -30 ounce) can asparagus spears or 1 (15 -30 ounce) can asparagus spears
2 -3 slices bacon
1/4 teaspoon garlic powder
1/3 cup light brown sugar, firmly packed
1/3 cup butter or 1/3 cup margarine

Steps:

  • Drain and place asparagus in casserole dish; cover with bacon.
  • Simmer garlic, brown sugar and butter for 5 minutes and pour over tips/stalks.
  • Bake at 375°F for 15 minutes or 350°F for 25 minutes (or until tender& hot).

2 lbs asparagus
3 tablespoons butter
2 tablespoons firmly packed light brown sugar
3/4 cup chicken broth
orange zest, strips (for garnish) (optional)

Steps:

  • Snap off the thick woody ends of the asparagus spears and discard.
  • Heat the butter in a large skillet over medium-high heat until melted. Stir in brown sugar. Cook, stirring continually until brown sugar dissolves.
  • Add the asparagus to the brown sugar mixture, turning to coat. Sauté for 2 minutes.
  • Add the chicken broth to the skillet. Bring to a boil; reduce heat. Simmer, covered, until the asparagus is crisp-tender, about 8 minutes. Transfer the asparagus with a slotted spoon to a serving platter, reserving the pan juices in the skillet. Cover asparagus to keep warm.
  • Cook reserved pan juices in the skillet over medium-high heat, stirring frequently, until reduced by half. Drizzle over the asparagus. Garnish with orange zest strips, if desired. Serve immediately.
