An easy recipe for wonderfully flavorful broiled tomatoes with Parmesan cheese. Great as an appetizer, as a side dish, or for breakfast.

2 tomatoes (large and firm)
Olive oil spray
1/2 teaspoon Diamond Crystal kosher salt (or 1/4 teaspoon of fine salt)
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon dried thyme
1/2 cup dry-grated Parmesan

Steps:

  • Preheat your broiler on high. Position an oven rack 6 inches below the heating element (not directly below).
  • Cut the tomatoes in half. Cut a tiny sliver from the bottom of each half, so that the tomatoes can stand upright without wobbling.
  • Spray the tomatoes all over with olive oil. Place them on a broiler-safe rimmed baking dish, cut side up.
  • Sprinkle the tomatoes with salt, pepper, garlic powder, and thyme. Top with Parmesan, 2 tablespoons for each tomato half.
  • Broil until the cheese is golden brown, 3-5 minutes.

4 medium tomatoes
1 tablespoon Dijon mustard
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper

6 (1-inch-thick) T-bone steaks
1/4 cup extra-virgin olive oil, plus some for drizzling
6 vine-ripe tomatoes, tops removed, seeds scooped out
Salt and pepper
3 slices good quality bread, crusts trimmed, torn into pieces
1/2 cup pitted good quality green or black olives, a couple of handfuls
3 handfuls flat-leaf parsley tops
5 to 6 stems fresh sage, stripped
3/4 cup grated Romano, 3 handfuls
2 cups arugula, chopped
1 cup (20 leaves) shredded or torn basil
1/2 lemon, juiced

Steps:

  • Preheat oven to 375 degrees F.
  • Preheat a large griddle or large skillet over high heat. Brush the meat with extra-virgin olive oil, you'll need about 1/4 cup. Sear the steaks 2 minutes on each side, 3 at a time. Arrange steaks on baking sheet. When steaks are all seared off, transfer to oven and roast 5 to 6 minutes for medium doneness, subtract or add 2 minutes to that time for medium- rare to medium-well.
  • Place tomatoes on a broiler pan and season with salt and pepper. Combine the bread, olives, parsley, sage and Romano in the food processor and pulse grind the mixture. Dress the mixture with some extra-virgin olive oil salt and pepper and fill the tomatoes.
  • Dress chopped arugula and basil with a little lemon juice, extra-virgin olive oil, and salt and pepper.
  • Remove steaks and let rest. Switch broiler on and broil tomatoes a couple of minutes to brown the cheese and bread crumbs on top.
  • Serve steaks with greens on top and broiled tomatoes alongside.

TOMATO-HORSERADISH SAUCE

I make this when my tomatoes are ripe. It only makes 1 pint so it is very quick and easy. Great to serve with meat. Even if you don't can very often this is something that is easy and fast to do.

1 tablespoon unsalted butter
1 medium onion, peeled and thinly sliced
1 clove garlic, peeled and minced
1 1/2 lbs ripe tomatoes, cut into dice
1 bay leaf
1/4 cup prepared horseradish
1/4 teaspoon salt
1/4-1/2 teaspoon cayenne pepper
1/4 teaspoon dried thyme

Steps:

  • Melt buter in large skillet over medium-high heat.
  • Add onions and cook, stirring until it begins to soften, 2-3 minutes.
  • Add garlic and cook until golden, about 3 minutes.
  • Add tomatoes, bay leaf and horseradish.
  • Stir, reduce heat to medium-low and cook until tomatoes are tender, about 20 minutes.
  • Add salt, cayenne and thyme.
  • Ladle into hot canning jars.

2 ancho chiles, stemmed and seeded
2 tablespoons whole cumin
2 tablespoons whole coriander
1 cinnamon stick
1 tablespoon sweet paprika
1 pint sour cream
2 lemons, juiced
1/4 cup freshly grated or prepared horseradish
Extra-virgin olive oil
1 (4 pound) beef tenderloin
Kosher salt and freshly ground black pepper
2 pounds tomatoes on the vine, cut in 1/2
Arugula leaves, for garnish

Steps:

  • Heat the grill to medium-high. Put the ancho chiles, cumin, coriander, cinnamon stick, and paprika into a small dry skillet, put the pan over the heat, and toast the spices just until they begin to smell, about 1 minute. Empty into a spice mill and grind to a powder; set aside.
  • In a small bowl combine the sour cream, lemon juice, horseradish, and
  • 1 tablespoon olive oil. Cover and refrigerate until ready to use.
  • Drizzle some olive oil over the tenderloin and season it with salt and pepper. Sprinkle on about 1/2 of the spice mix and rub it into the meat. Grill for about 20 to 25 minutes for medium rare. Remove from the grill and allow the meat to rest for 5 to 10 minutes before slicing. Drizzle some olive oil over the tomatoes and season them with salt and pepper. Grill them for about 10 minutes.
  • Slice the tenderloin and place it onto a platter. Drizzle the horseradish sauce over the meat and scatter the tomatoes around. Garnish with arugula leaves and serve.

Tomatoes make a lovely side for almost any protein. This easy recipe will work for Roma or Campari tomatoes. A little seasoning and grated Parmesan will complete this quick and easy dish that is on the table in minutes!

4 Roma tomatoes
½ teaspoon salt, or to taste
½ teaspoon ground black pepper, or to taste
½ teaspoon dried Italian herb seasoning
½ cup freshly grated Parmesan cheese
1 tablespoon fresh parsley

Steps:

  • Preheat a broiler according to manufacturer's recommendations. Line a baking sheet or small sheet pan with aluminum foil.
  • Slice tomatoes in half crossways. Slice thin slices off of the round part of the tomato halves so they will sit straight on the pan.
  • Place tomato halves on the prepared pan and sprinkle with salt, pepper, and Italian seasoning to taste.

1 tablespoon olive oil

Steps:

  • Preheat the broiler.
  • Cut away the core of each tomato, then halve the tomatoes crosswise. Sprinkle with salt and pepper.
