BUTTERNUT BISQUE image

3 1/2 lbs butternut, peeled seeded and cubed
1 c sliced carrots
1 med tart apple peeled and chopped
1/2 c chopped shallots
2 T olive oil
2 T olive oil
2 large tomatoes chopped
4 c chicken broth
1 1/2 c half and half
1 1/2 t salt
1/4 t cayenne
3/4 c frozen corn kernels
2 T minced chives

Steps:

  • roast first 5 ingredients in 400 oven for 1/2 hour, turning twice. In large pot, add olive oil cook tomatoes till softened.Combine all vegetables. vitamix (or use blender in batches or use a stick blender) veggies with 2 c broth. Return to pot, add rest of broth and heat add half and half and seasonings, adjust to taste.
